This sour cream mint chocolate chip ice cream begins with a cultured dairy base: homemade sour cream fermented for at least 24 hours, filtered water, raw honey, pure peppermint extract, a small measure of sea salt, and optional homemade vanilla. Finely shaved homemade cocoa-butter chocolate goes in only during the last few minutes of churning.

The result is cool, tangy, and creamy, with mint first and the cultured sour cream underneath. The chocolate is optional. Leave it out and the same measured base becomes Sour Cream Honey Mint Ice Cream.

Frozen desserts are easier to manage when each base keeps its own measurements. In our house, with six children and more than one person reaching into the freezer, clear labels matter. This cultured-sour-cream formula stays separate from the coconut-milk and fresh-cream versions so no one has to guess which dairy stage or ingredient ratio is in the container.

Where This Ice Cream Fits On GAPS

The plain Honey Mint version fits Full GAPS after homemade sour cream cultured for at least 24 hours has been introduced and tolerated. It is not an Introduction Diet dessert. If you are following the dairy-introduction structure, keep this recipe for the point when homemade cultured sour cream already fits your meals.

The mint chocolate chip version is an occasional later Full GAPS treat after digestive symptoms have resolved and pure organic cocoa is appropriate. Use the separate finished homemade chocolate component rather than packaged chocolate chips or a commercial bar.

This post keeps the source’s cultured-dairy formula intact: two cups sour cream, one and one-quarter cups water, two-thirds cup raw honey, three-quarters to one teaspoon peppermint extract, and one-eighth teaspoon sea salt. Fresh cream is a different later Full GAPS formula. Coconut milk is a separate dairy-free formula. Neither is an equal-volume swap here.

Prepare The Cultured Sour Cream And Chocolate First

Begin with two cups of homemade sour cream cultured for at least 24 hours. The sour cream should be cold, fully set, and pleasantly tangy, without a sweet-milk smell. A little whey at the edge is normal; stir it back in before measuring so the base keeps the intended balance.

For the chip version, make Raw-Honey Cocoa-Butter Chocolate Bars for Later Full GAPS. Chill the finished chocolate until firm, shave it finely, and measure one-half cup after shaving.

Use the fine holes of a clean box grater or a sharp stainless knife. Small, thin shavings distribute through the soft ice cream more evenly than large chunks. Keep the measured shavings refrigerated while the base churns so they stay distinct instead of smearing.

If you are making plain Honey Mint, omit the chocolate. Do not replace it with commercial chips, carob, or an unmeasured candy.

Measure The Dairy Base Exactly

Spoon two cups cultured sour cream into a large glass mixing bowl. Add one and one-quarter cups filtered water, two-thirds cup raw honey, three-quarters teaspoon pure additive-free peppermint extract, one-eighth teaspoon sea salt, and optional two tablespoons homemade vanilla extract.

The water is part of this formula. It loosens the cultured sour cream enough to churn and should not be left out or replaced with fresh cream. Measure the sour cream first, level the cup, and then measure the water separately.

Raw honey should pour in a steady ribbon. If it is firm, let the closed jar stand in warm water only until the honey can be measured. Do not heat the sour cream to make the honey dissolve.

Whisk Until The Honey Is Fully Incorporated

Whisk the mixture by hand until it looks uniform from the surface to the bottom of the bowl. At first, small white streaks of thicker sour cream may move through the thinner water. Keep whisking until those streaks disappear.

Lift the whisk and watch the base fall back into the bowl. It should pour in a smooth pale ribbon without clear water at the edge or amber honey settled underneath. Scrape the bottom and sides with a silicone spatula, then whisk again.

Taste the cold base. Add only enough of the remaining one-quarter teaspoon peppermint extract to reach the mint strength you want. The full source-measured range ends at one teaspoon. A good base smells clearly minty but still lets the cultured sour cream come through.

If the mint smells sharp or medicinal, do not add more. Extract strengths vary, which is why the recipe starts at three-quarters teaspoon.

Churn Until The Base Holds Soft Folds

Pour the mixed base into the ice cream maker and churn according to the machine’s directions. The exact clock time depends on the machine, but the useful endpoint is a mostly frozen base that holds soft folds while the paddle can still move through it.

If your machine uses a freezer bowl, freeze that bowl for the full time its manufacturer requires. A partly frozen bowl warms before the sour cream base thickens and leaves the mixture slushy.

Do not add the chocolate at the beginning. The shavings need a thickened base to hold them in suspension. Added too early, they can sink, collect around the paddle, or soften into streaks.

Watch the surface change from a thin, steady swirl to rounded ridges. When the paddle leaves a path that stays visible for a moment, the base is close to its soft-serving stage.

Add The Chocolate Near The End

About five minutes before churning is finished, sprinkle in the measured one-half cup cold chocolate shavings. Add them gradually over the moving surface instead of dropping the whole measure in one place.

Continue churning until the flecks are spread through the ice cream and the machine reaches its normal finished stage. The chocolate should remain visible as small dark pieces against the pale cultured base.

Soft churned sour cream mint ice cream with homemade chocolate shavings in a glass freezer container

For plain Sour Cream Honey Mint Ice Cream, omit this step. Let the same sour cream base finish churning without chocolate.

Serve It Soft Or Freeze It Firmer

Serve directly from the machine for a soft, creamy texture. A scoop should mound in the bowl but relax at the edges rather than standing hard and dry.

For firmer scoops, transfer the churned ice cream to a covered glass freezer container. Smooth the top without pressing out the air and freeze until the center reaches the firmness you prefer.

After longer storage, let the closed container stand only until a scoop cuts cleanly through the center. Return the remaining ice cream to the freezer as soon as you have served it.

The optional homemade vanilla helps the frozen base remain easier to scoop, but it is not required for flavor or structure.

What The Finished Ice Cream Should Be Like

The color is pale ivory, with fine dark flecks in the chocolate version. The aroma should be minty and tangy rather than sharply alcoholic or overwhelmingly sweet.

The cultured sour cream gives this version a brighter finish than the coconut-milk formula. It should still taste like a dessert, not like plain frozen sour cream, because the measured honey and peppermint are mixed throughout.

At the soft stage, the ice cream looks creamy and lightly aerated. It should not have watery crystals around the edge, a separate honey layer, or hard chocolate clumps large enough to block the scoop.

The plain Honey Mint option should be completely smooth and pale. If you divide one batch before adding chocolate, label both containers immediately so the later-cocoa version remains clear.

Storage And Serving

Store the finished ice cream in a covered glass container in the freezer. Keep the lid closed between servings so the surface does not pick up ice crystals or freezer odors.

Label the container Sour Cream Honey Mint or Sour Cream Mint Chocolate Chip. That distinguishes it from the Coconut Milk Mint Chocolate Chip Ice Cream and the separate fresh-cream formula.

Serve it as an occasional dessert between meals rather than replacing the meat, stock, fats, vegetables, and fermented foods that make up the regular Full GAPS day.

Keep any unused chocolate shavings in a closed container in the refrigerator. They are already measured for this formula, so do not fold extra shavings into the stored ice cream after it has hardened.

Frequently Asked Questions

Can I Use Commercial Sour Cream?

No. Use homemade sour cream cultured for at least 24 hours and already introduced in your Full GAPS dairy sequence.

Can I Use Fresh Cream Instead?

Use the separate fresh-cream sibling recipe. It is a different later Full GAPS formula even though it shares the same measured water, honey, peppermint, salt, and optional vanilla.

Is This The Same As The Coconut Milk Version?

No. The coconut recipe uses three and one-half cups homemade coconut milk and no added water or salt. This recipe uses two cups cultured sour cream, one and one-quarter cups water, and one-eighth teaspoon sea salt.

Can I Leave Out The Chocolate?

Yes. Omit the optional shavings for Sour Cream Honey Mint Ice Cream. Keep every base ingredient at the same measure.

Which Chocolate Should I Use?

Use one-half cup shavings measured from the linked finished raw-honey cocoa-butter chocolate. Commercial bars and packaged chips are not used.

Is Vanilla Required?

No. The two tablespoons are optional. If you include vanilla, use the linked homemade GAPS-compatible extract.

How Much Peppermint Extract Should I Use?

Begin with three-quarters teaspoon. Taste the cold base and add only as much of the remaining one-quarter teaspoon as needed, never more than one teaspoon total.

Why Does The Water Stay In The Recipe?

The source measures one and one-quarter cups water with two cups sour cream. It loosens this cultured-dairy base to the consistency intended for churning.

Why Do The Chocolate Shavings Go In Near The End?

The mostly frozen base is thick enough to hold them throughout the ice cream. Added at the beginning, they can sink, smear, or gather around the paddle.

Why Is My Ice Cream Too Soft?

Check that the base was cold, the machine or freezer bowl was fully prepared, and the honey and water were measured rather than increased. Move properly churned soft ice cream to a covered glass container to firm in the freezer.
