This fresh cream mint chocolate chip ice cream uses the source’s distinct dairy ratio: fresh cream, filtered water, raw honey, pure peppermint extract, a little sea salt, and optional homemade vanilla. Fine shavings of homemade raw-honey cocoa-butter chocolate go in during the final minutes of churning.
The cream gives it a round, rich texture, while the measured water keeps the base loose enough to churn. The chocolate is optional. Without it, the same formula becomes Fresh Cream Honey Mint Ice Cream.
With six children and several GAPS stages or dairy tolerances to keep straight, I prefer freezer labels that name the actual base. This fresh-cream batch stays separate from the cultured-sour-cream and coconut-milk versions so no one has to guess which recipe or dairy stage is in the container.

Where Fresh Cream Fits On GAPS
This is a later Full GAPS dessert. The 2020 Gut and Physiology Syndrome book places fresh cream around the end of the second year for some people, after earlier dairy foods are established. Keep this recipe for the point when fresh cream already fits your dairy progression.
The plain Honey Mint version uses no cocoa. The mint chocolate chip version is an occasional later Full GAPS treat after digestive symptoms have resolved and pure organic cocoa is appropriate.
This formula is not the earlier cultured-sour-cream version. Fresh cream is unfermented, and its place in the dairy sequence is later. It is also not the dairy-free coconut recipe, which measures three and one-half cups homemade coconut milk without this water-and-salt combination.
Prepare The Chocolate Before Mixing The Base
For the chocolate-chip version, make Raw-Honey Cocoa-Butter Chocolate Bars for Later Full GAPS. Chill the finished chocolate until firm, shave it finely, and measure one-half cup after shaving.
Use the fine side of a clean box grater or a sharp stainless knife. Fine irregular shavings scatter through the cream base more evenly than thick chunks and are easier to scoop once frozen.
Measure the shavings loosely rather than pressing them into the cup. Return the measured half cup to the refrigerator while the base churns. Warm chocolate bends and smears instead of staying in small pieces.
For plain Fresh Cream Honey Mint Ice Cream, skip the chocolate completely. Keep every other ingredient at the same measure.
Measure The Fresh Cream Base
Pour two cups fresh cream into a large glass mixing bowl. Add one and one-quarter cups filtered water, two-thirds cup raw honey, three-quarters teaspoon pure additive-free peppermint extract, one-eighth teaspoon sea salt, and optional two tablespoons homemade vanilla extract.
The water belongs in this formula. Do not leave it out to make the ice cream richer, and do not replace it with more cream. The source pairs the two-cup cream measure with one and one-quarter cups water.
Use raw honey that pours in a steady ribbon. If it is firm, let the closed jar stand in warm water just until the honey can be measured. Keep the cream cold and do not warm it to dissolve the honey.
Whisk Until The Base Is Completely Even
Whisk the cream, water, honey, peppermint, salt, and optional vanilla by hand. The mixture may look slightly streaked at first because the honey is denser than the dairy base.
Scrape the bottom and sides with a silicone spatula, then continue whisking until the color and thickness look the same throughout.

Lift the whisk and watch the base run back into the bowl. It should fall in a smooth pale ribbon, without a pool of honey underneath or clear water around the edge. The mixture remains pourable; it is not whipped cream and should not hold peaks.
Taste the cold base. Add only enough of the remaining one-quarter teaspoon peppermint extract to reach the mint strength you want. Stop at one teaspoon total. The cream should still be noticeable beneath the mint.
Churn Until Soft Folds Hold Their Shape
Pour the cold base into the prepared ice cream maker and churn according to the machine’s directions. A source-supported working time is about twenty minutes, but the physical endpoint matters more than the clock.
The base begins as a steady liquid swirl. As it freezes, the paddle leaves thicker ridges and soft folds. It is ready for the optional chocolate when those folds remain visible briefly while the paddle still turns freely.
If the machine uses a freezer bowl, freeze that bowl for the full time its manufacturer requires. A partly frozen bowl warms before the cream base can thicken.
Do not add the chocolate at the beginning. The shavings need a thickened base to stay distributed rather than sinking, smearing, or collecting around the paddle.
Add The Chocolate During The Final Five Minutes
About five minutes before churning is complete, sprinkle the cold chocolate shavings gradually over the moving surface. Avoid dropping the whole half cup in one place.
Continue churning until the flecks are evenly spread and the ice cream reaches a soft, scoopable stage. The chocolate should remain visible against the pale cream instead of melting into brown streaks.

For Fresh Cream Honey Mint Ice Cream, omit the shavings and let the same measured base finish churning without them.
Serve Soft Or Freeze For Firmer Scoops
Serve the ice cream directly from the machine for a soft texture. The scoop should mound in the bowl and then relax slightly at the edges.
For a firmer result, transfer the churned ice cream to a covered glass freezer container. Smooth the top without compressing it and freeze until the center reaches the texture you want.
After longer storage, let the closed container stand only until a scoop cuts cleanly through the center. Return the remaining ice cream to the freezer as soon as everyone has been served.
The optional homemade vanilla contributes flavor and helps the frozen mixture remain easier to scoop, but the source does not require it.
What The Finished Ice Cream Should Look And Taste Like
The finished ice cream is pale ivory. The chocolate version shows fine dark flecks from the top scoop through the bottom of the container. The plain Honey Mint version is smooth and evenly pale.
The aroma should be minty without smelling harsh or medicinal. Fresh cream remains the round background flavor, while raw honey provides a clean sweetness.
At the machine’s soft stage, the surface holds rounded folds and looks lightly aerated. It should not be watery at the edges, grainy, or separated into fat and liquid.
The chocolate shavings should be small enough to bite easily from the freezer. Large slabs or thick chunks make the scoop skid and do not match the measured shaved-chocolate route.
Storage And Serving
Keep the finished ice cream in a covered glass container in the freezer. Close the lid between servings so the surface does not collect ice crystals or freezer odors.
Label the container Fresh Cream Honey Mint or Fresh Cream Mint Chocolate Chip. That distinguishes it from Sour Cream Mint Chocolate Chip Ice Cream and Coconut Milk Mint Chocolate Chip Ice Cream.
Serve this as an occasional later Full GAPS dessert between meals rather than replacing the meat, stock, fats, vegetables, and fermented foods that make up the regular day.
Store unused chocolate shavings separately in the refrigerator. Do not stir extra pieces into hard frozen ice cream, because they will not distribute evenly after churning has ended.

Frequently Asked Questions
Is Fresh Cream Introduced With Yogurt Or Sour Cream?
No. Fresh cream comes later for some people. Use the separate cultured-sour-cream recipe when homemade 24-hour sour cream fits your current dairy stage.
Can I Use Commercial Whipping Cream?
Use fresh cream appropriate to your later Full GAPS dairy progression. This formula does not use sweetened, flavored, stabilized, or whipped products.
Can I Replace The Cream With Sour Cream?
Use the linked sour-cream sibling instead. It preserves the same measured water, honey, peppermint, salt, and optional vanilla with the earlier cultured dairy form.
Is This The Coconut Milk Version?
No. The coconut recipe measures three and one-half cups homemade high-fat coconut milk and does not use this fresh-cream water-and-salt base.
Can I Leave Out The Chocolate?
Yes. Omit the optional half cup of shavings for Fresh Cream Honey Mint Ice Cream without changing the rest of the formula.
Which Chocolate Should I Use?
Use one-half cup finely shaved finished raw-honey cocoa-butter chocolate from the linked homemade recipe. Do not use commercial bars or packaged chips.
Is Vanilla Required?
No. The two tablespoons are optional. If you include it, use the linked homemade GAPS-compatible vanilla extract.
How Much Peppermint Extract Should I Use?
Start with three-quarters teaspoon and add only as much of the remaining one-quarter teaspoon as needed, up to one teaspoon total.
Why Is Water Included With The Cream?
The source measures one and one-quarter cups water with two cups cream. Keep that ratio rather than silently turning this into an all-cream formula.
Why Is My Ice Cream Too Soft?
Check that the base was cold, the machine or freezer bowl was fully prepared, and the cream, water, and honey were measured exactly. Properly churned soft ice cream can finish firming in a covered glass container.

Method
- Put the scaled fresh cream, filtered water, raw honey, the smaller end of the scaled peppermint range, sea salt, and optional homemade vanilla in a large glass bowl. Whisk until uniformly pale, smooth, and pourable with no honey layer, water separation, foam, or peaks.

- Taste the cold base. Add only enough of the remaining scaled peppermint range to reach the mint strength you want; do not exceed the displayed maximum.
- Pour the base into the prepared ice cream maker and churn according to its instructions until mostly frozen and holding soft folds while the paddle still turns.
- For mint chocolate chip, add the scaled finely shaved homemade chocolate gradually about 5 minutes before churning finishes. For plain Fresh Cream Honey Mint, omit the shavings and continue churning the same measured base.
- Finish churning. Serve at the soft stage or transfer to a covered glass freezer container and smooth the top before freezing for firmer scoops.
