These homemade berry chips turn additive-free freeze-dried fruit, cocoa butter, homemade coconut butter, raw honey, vanilla, and sea salt into bright pink frozen shards. The berries are ground to powder first, then the smooth mixture is spread thin, frozen firm, and chopped.

This is one distinct Full GAPS formula. It is separate from the cocoa chips and peanut butter chips because it uses freeze-dried fruit and coconut butter, has no cocoa powder or peanuts, and needs a grinding-and-sifting step.

In our working, homeschooling family of eight, this is easiest when the fruit powder is finished before the cocoa butter melts. I grind and sift the berries, measure the coconut butter, honey, vanilla, and salt, and prepare the shallow dish first. Then the warm fat can be stirred in and spread without a pause.

Look for a fine berry powder without large flakes, a glossy mixture with no dry streaks, and a frozen sheet that is rigid through the center. The finished shards should be evenly berry-pink with fine fruit speckles from edge to edge.

Where Homemade Berry Chips Fit on GAPS

Use these on Full GAPS after the chosen berry, coconut, cocoa butter, raw honey, and homemade vanilla are introduced and tolerated. Choose freeze-dried berries with one ingredient only: fruit.

Use food-grade cocoa butter, homemade coconut butter, raw honey, and homemade vanilla extract without added sugar. Cocoa butter supplies the cold set; coconut butter adds whole-coconut body.

The card does not include fruit powder with sugar, oil, flavoring, or color; maple syrup; commercial white chocolate; dairy; or cocoa powder. Keep the measured berry formula intact.

Choose Additive-Free Freeze-Dried Berries

Measure 1.2 ounces freeze-dried berries. Strawberries make a softer pink powder, while raspberries make a deeper color and bring seeds that need to be sifted. Use the exact weight rather than estimating by cup volume because whole berry size varies.

The fruit should be completely dry and crisp. A soft, leathery berry has absorbed moisture and will not grind into a fine powder. Seal unused fruit immediately so humid kitchen air does not soften it.

Grind and Sift the Fruit

Work in two batches in a clean dry spice grinder. Pulse until the berries become a fine, vivid powder. Let the dust settle for several seconds before opening the grinder.

For raspberries, pass the powder through a fine stainless-steel sieve and discard the trapped seeds. Press gently with the back of a spoon rather than forcing coarse seeds through the mesh.

Measure one-third cup cocoa butter after melting, one-quarter cup softened homemade coconut butter, two tablespoons raw honey, one-half teaspoon homemade vanilla, and one pinch sea salt.

Melt and Measure the Cocoa Butter

Warm solid cocoa butter in a small Le Creuset stainless-steel saucepan or another GAPS-compatible stainless pan over low heat. Turn off the burner when only a few pale pieces remain and let the retained heat melt them.

The liquid should be clear and pale gold. Measure exactly one-third cup after melting. Do not substitute coconut oil, coconut butter, or coconut milk for this structural fat.

Stir Until Smooth and Evenly Pink

Put the berry powder, softened coconut butter, raw honey, homemade vanilla, and sea salt in a small glass or stainless bowl. Add the measured melted cocoa butter.

Stir firmly, scraping the bottom and sides, until the mixture is evenly pink and glossy. No white coconut-butter lump, dry berry pocket, sticky honey streak, or clear oil ring should remain.

If the coconut butter is too firm to blend, soften it gently before measuring. Do not add water or coconut milk; even a small unmeasured liquid addition changes the set.

Spread, Freeze, and Chop

Scrape the fresh berry mixture into a shallow clear glass dish or onto a stainless tray. Spread it into one thin, even layer. Smooth ridges without repeatedly working the surface.

Smooth berry chip mixture spread before freezing

Freeze at least twenty-five minutes. The center should feel rigid and resist a clean utensil without denting. Lift out the sheet and chop it into small irregular squares and shards with a stainless-steel knife.

If the sheet bends, smears, or sticks to the knife, freeze it longer. Work with one portion at a time when the kitchen is warm.

Serving and Storage

Fold cold berry chips into compatible muffins or bars, sprinkle them over homemade frozen desserts, or serve a measured portion cold. They soften at warm room temperature.

Store in a covered glass container in the refrigerator or freezer, with unbleached parchment between thin layers. Keep them cold until use and return leftovers promptly.

Use a digital scale; clean dry spice grinder; fine stainless sieve; measuring cups and spoons; small glass or stainless bowl; small Le Creuset stainless-steel saucepan or another GAPS-compatible stainless pan; spoon; silicone scraper; shallow dish or tray; stainless knife; parchment; and covered glass container.

Frequently Asked Questions

Can I Use Fresh or Frozen Berries?

No. This formula uses 1.2 ounces completely dry freeze-dried fruit. Fresh or frozen fruit adds water and will not produce the same sheet.

Why Sift Raspberry Powder?

The sieve removes coarse seeds so the finished chips are smoother and the fruit powder disperses evenly.

Can I Use Coconut Oil Instead of Cocoa Butter?

No. Keep the measured cocoa butter and homemade coconut butter as two separate ingredients.

Why Did the Mixture Separate?

Soften the coconut butter before measuring and stir until all white lumps, honey streaks, and clear oil disappear.

Can I Double the Recipe?

Yes. Use the card’s 2× control and spread the doubled mixture at the same thickness in two dishes or one larger tray.
