Strawberries, homemade coconut milk, and cocoa butter make a pale pink drink with a creamy white-chocolate flavor. A little raw honey and homemade vanilla sweeten the two-mug batch without a packaged white chocolate bar.

I use a Ninja BN801 for blending, and it must never take hot or warm liquid. For this recipe, let the heated base cool completely before blending, then warm it again in the saucepan. Leave time for that cooling pause before you start.

The strawberry and cocoa-butter combination is adapted from Megan Stevens’s strawberry white hot chocolate, using raw honey and homemade vanilla. The method below includes the cooling and reheating needed for the Ninja.

Where This Drink Fits on GAPS

This is an occasional Full GAPS treat after diarrhea and abdominal pain have settled and strawberries and every other ingredient have been introduced and tolerated. It is not an Introduction Diet recipe. Serve it between meals, and keep sweet drinks occasional.

Pure cocoa butter is allowed on GAPS. It is the pale fat from the cacao bean, not cocoa powder or a commercial white chocolate bar. Use food-grade cocoa butter with nothing added, homemade coconut milk, raw honey, and homemade vanilla extract without added sugar or non-GAPS additives.

What You Need

  • Filtered water: 1 cup for the whole recipe. If you use gelatin, reserve half for blooming it and put the other half in the saucepan. Without gelatin, all the water goes in the pan.
  • Strawberries: ¾ cup of ripe fresh berries or unsweetened frozen berries. Hull fresh berries before measuring. Frozen berries can go straight into the pan.
  • Homemade coconut milk: ½ cup. Stir or shake the prepared milk before measuring so you include the cream that rises to the top.
  • Cocoa butter: 2 tablespoons of pure food-grade cocoa butter. Small pieces melt more readily than one large chunk.
  • Raw honey: 1 tablespoon. Ripe, flavorful berries matter here; honey cannot give bland berries a strawberry flavor.
  • Homemade vanilla extract: 1 teaspoon, without added sugar or non-GAPS additives.
  • Plain gelatin: the optional 1 tablespoon adds body. Keep it separate until the final warming step.
  • Sea salt: 1 pinch.

How to Make It With the Ninja BN801

1. Set Aside Water for the Optional Gelatin

If you want gelatin, measure the full cup of water, then set ½ cup aside in a small bowl. Put the remaining ½ cup in the saucepan. Do not add the gelatin yet. If you are leaving gelatin out, use the full cup of water in the pan.

2. Melt the Cocoa Butter

Add the strawberries, homemade coconut milk, cocoa butter, honey, vanilla, and salt to the saucepan. Warm over medium heat, stirring, until every piece of cocoa butter has melted and steam rises from the liquid. The berries will soften and release color. Keep it below a boil; a rolling center is not needed.

3. Cool the Whole Base Completely

Take the pan off the heat and let the entire mixture cool to room temperature. Stir occasionally so the center cools too. Keep it in the saucepan or a heat-safe bowl, not in the Ninja pitcher while it is still warm.

To help it cool, stand the metal saucepan in a larger bowl of cold water and stir the drink occasionally. Keep the cooling water out of the saucepan. Cocoa butter may form pale flecks as it cools; those will melt again during the final warming.

4. Bloom the Gelatin, if Using

Once the base has cooled, sprinkle the gelatin evenly over the reserved ½ cup of cold water. Let it hydrate for about five minutes, until swollen and softly set rather than dry and powdery. This is called blooming. Do this shortly before you need it, rather than leaving a dry mound in the bowl.

5. Blend the Cooled Base

Fit the stacked blade assembly into the BN801 pitcher, add the completely cooled base, and lock the lid. Stay below the marked MAX LIQUID line. Begin on low, then increase to medium until the berries are finely puréed and the drink is evenly pink. Stop the machine and wait for the blades to stop before opening.

Blend the two-mug amount at a time. If you use 2× ingredient amounts, divide the cooled base between two blending runs; for 3×, use three runs.

6. Warm, Dissolve, and Pour

Return the blended drink to the saucepan. Warm gently while stirring or whisking. If using gelatin, whisk the bloomed mixture into the warming drink until it dissolves completely. Keep the drink below a boil.

It is ready when the cocoa-butter flecks have melted, no gelatin lumps remain, and the drink pours freely. Divide it between two heat-safe mugs and serve warm. Do not put the warmed drink back into the Ninja.

Serving and Saving a Portion

Serve this freshly warmed. A light stir in the mug helps if it has been standing. For the best strawberry flavor, start with ripe berries that smell and taste like strawberries.

Refrigerate leftovers promptly in a covered container. Cocoa butter firms as it chills, and optional gelatin makes the cold drink set more firmly. Warm a saved portion gently in a saucepan and whisk until it is liquid again. If you need to blend it again, cool the entire mixture completely first.

Equipment That Helps

Use a small stainless-steel saucepan, measuring cups and spoons, a heat-safe spoon or whisk, and two heat-safe mugs. The Ninja BN801 uses its full 72-ounce pitcher, stacked blade assembly, and locking lid. Its maximum liquid line is 64 ounces. A small bowl is useful for blooming gelatin; a larger bowl of cold water can help cool the saucepan.

You can use another blender according to its manufacturer’s instructions. If it is specifically approved for hot liquids, bloom the optional gelatin while the saucepan warms, blend the heated base without the Ninja cooling pause, then return it to the pan and whisk in the bloomed gelatin. A large pitcher or a locking lid alone does not mean a blender can take hot liquids.

Questions Before You Start

Can I Use Frozen Strawberries?

Yes. Use the same ¾ cup, with no added sugar or other ingredients. They may take longer to warm and soften in the saucepan. Follow the melted cocoa butter and softened fruit rather than a fixed cooking minute.

Do I Need the Gelatin?

No. The measured tablespoon is optional. Without it, put all the water in the saucepan and skip blooming. With it, reserve half the water and dissolve the bloomed gelatin during final warming. Do not add extra water to bloom it.

Why Does the Drink Have Pale Bits After Cooling?

Cocoa butter is firm when cool. Pale flecks after the cooling pause or refrigeration can be melted by gentle warming and stirring. If gelatin is included, make sure it has dissolved too. Keep hot or warm liquid out of the Ninja even when you are troubleshooting.

Can I Substitute Cocoa Powder or a White Chocolate Bar?

Keep pure cocoa butter for this recipe. Cocoa powder is a different ingredient and would change the flavor, color, and fat content. A white chocolate bar brings its own sweeteners and other ingredients; it does not replace the measured cocoa butter.

Is This a Ten-Minute Recipe?

Allow additional time for the Ninja base to cool completely, then warm again. Cooling depends on the pan, batch size, and kitchen temperature, so there is no fixed total time for this method. Have the homemade coconut milk and vanilla ready beforehand.

Strawberry White Hot Chocolate for Full GAPS

Strawberry white hot chocolate for Full GAPS with homemade coconut milk, cocoa butter, raw honey and vanilla. Cool the base completely before the Ninja BN801, then warm it again to serve. Optional gelatin is bloomed separately.
Servings: 2 servings
Course: Beverage, Drink, Full GAPS
Cuisine: American

Ingredients

  • 1 cup filtered water
  • 3/4 cup strawberries fresh or frozen with nothing added
  • 1/2 cup homemade coconut milk
  • 2 tablespoons pure food-grade cocoa butter with nothing added
  • 1 tablespoon raw honey
  • 1 teaspoon homemade vanilla extract without added sugar
  • 1 tablespoon plain unflavored gelatin optional; no sweeteners or additives
  • 1 pinch sea salt

Equipment

  • Small stainless steel saucepan
  • Ninja BN801 with 72-ounce pitcher, stacked blade assembly and locking lid For completely cooled ingredients only; stay below the 64-ounce MAX LIQUID line.
  • Measuring cups and spoons
  • Heat-safe spoon or whisk
  • Small bowl For optional gelatin.
  • Two heat-safe mugs
  • Larger bowl for a cooling-water bath Optional; keep bath water out of the drink.
  • Covered container for leftovers

Method

  1. If using gelatin, reserve half of the measured filtered water in a small bowl and put the other half in the saucepan. At 1×, that is ½ cup in each. Do not sprinkle in the gelatin yet. Without gelatin, put all the measured water in the saucepan.
  2. Add the strawberries, homemade coconut milk, cocoa butter, raw honey, homemade vanilla and sea salt to the saucepan. Stir over medium heat until the cocoa butter has melted completely and the liquid is steaming but not boiling. The berries should soften and release color.
  3. Remove from the heat and let the entire base cool completely to room temperature before using the Ninja. Stir occasionally. Leave it in the saucepan or a heat-safe bowl while cooling, never in the Ninja while hot or warm. A cold-water bath around the metal saucepan can help; keep that water out of the drink.
  4. Once the base has cooled, sprinkle the optional gelatin evenly over the reserved cold water. Let it bloom for about 5 minutes, until swollen and softly set with no dry mound. Skip this step if omitting gelatin.
  5. Install the stacked blade assembly in the BN801 pitcher, add the completely cooled base below MAX LIQUID and lock the lid. Start on low, then increase to medium until the strawberries are finely puréed and the drink is evenly pink. Stop and wait for the blades before opening. For 2×, use two original-size blending runs; for 3×, use three.
  6. Return the blended base to the saucepan and warm gently while stirring or whisking. If using gelatin, whisk in the bloomed mixture until fully dissolved. Keep below a boil. When the cocoa-butter flecks have melted and the drink pours freely, pour into heat-safe mugs and serve warm. Never return the hot or warm drink to the Ninja.

Notes

GAPS: An occasional Full GAPS treat after diarrhea and abdominal pain have settled and all ingredients have been introduced and tolerated. Not an Introduction Diet recipe. Use homemade coconut milk and homemade vanilla without added sugar or non-GAPS additives.
Ninja temperature: Cool the entire heated base completely to room temperature before transfer. Rewarm only in the saucepan after blending. Never blend hot or warm liquid in the BN801.
Optional gelatin: Use the measured 1 tablespoon at 1×. Reserve half the recipe water for blooming; no additional water is added. At 1×, ½ cup goes in the pan and ½ cup is reserved. At 2×, reserve 1 cup and put 1 cup in the pan. At 3×, use 1½ cups in each. Bloom shortly before final warming, then whisk it into the warming drink until dissolved.
Time to allow: Let the base cool completely before blending, then warm it again. Cooling varies with the pan, batch, and kitchen temperature.
Other blenders: If your manufacturer specifically permits hot liquids, bloom the optional gelatin while the base heats, follow its hot-blending directions, then return the drink to the pan and whisk in the bloomed gelatin. The Ninja cooling pause is mandatory for the BN801.
Serving and storage: Best freshly warmed. Refrigerate leftovers promptly in a covered container. Cocoa butter firms when cold, and gelatin increases the set. Rewarm gently and whisk. Cool completely again before any further Ninja blending.
