This cranberry orange jello combines puréed cranberries, fresh orange zest, and chopped prepared walnuts in a tart fruit dessert for Full GAPS. Two tablespoons of honey soften the cranberry flavor, while the nuts give you small pieces to bite into against the softer set.
The cranberries are blended with water before heating, with their pulp and skins retained. That makes the finished jello a deep, opaque cranberry color. The orange flavor comes from a teaspoon of zest, rather than a cup of orange juice.
Our family started GAPS in July 2024 and went through Intro together for about three months. We kept everyone on the same stage during that time. A fruit-and-walnut dessert like this belongs with Full GAPS foods after those ingredients have been introduced, so I keep the stage clear on the recipe card.
The Cranberries And Walnuts
- 2 cups organic cranberries
- 2 cups filtered water, for blending
- 2 tablespoons plain unflavored grass-fed beef gelatin
- 1/4 cup filtered water, for the gelatin
- 1/2 cup prepared walnuts, chopped
- 1 teaspoon finely grated fresh orange zest
- 2 tablespoons raw honey
- Coconut oil, as needed to grease the glass dish
Keep the two water measurements separate. The two cups go into the blender with the cranberries. The quarter cup is additional water used to moisten the gelatin in a small bowl. You need two and one-quarter cups of water in total.
Rinse the cranberries and remove any stems or damaged berries before measuring. Blend the whole berries with the two cups of water. This preparation does not strain out the skins or replace the berries with bottled juice.
Prepare the walnuts ahead using the linked salt-soaked crispy walnut recipe. Let them dry and cool, chop some into small pieces, then measure the half cup. Measuring the chopped nuts after preparation keeps the amount in the finished dessert clear.
Use the colored outer peel for the orange zest, leaving the bitter white pith behind. Grate it finely and measure one teaspoon. You don’t need orange juice or an orange-flavored extract for this version.
The gelatin needs to be a plain gelling powder. Collagen peptides will not set the dessert. Keep the measured two tablespoons of gelatin separate from the walnuts and honey while you prepare the berry mixture.
Where This Fits On Full GAPS
GAPS allows ripe berries and properly prepared walnuts once those foods have been introduced. This recipe keeps the cranberry pulp and includes nut pieces, so it is a Full GAPS preparation. It is not an early Intro fruit purée.
The walnuts bring fat to the cooked-fruit mixture as well as texture. Dr. Natasha’s 2020 book calls for fat with cooked fruit and also describes adding properly prepared nuts to fruit dishes. The salt-and-water walnut preparation linked here contains no dairy culture.
This batch contains walnuts. It has no egg or dairy ingredient, including in the coconut oil used to grease the dish. It does not fit No-Plant GAPS, because cranberries, orange zest, and walnuts are plant foods.
For a fruit snack without nuts, blueberry lime gummy worms use whole blueberries and lime with their own gelatin amount. Their serving directions include added fat with the cooked fruit. That is a separate recipe you can choose when walnuts don’t fit your meal plan.
How To Make Cranberry Orange Jello
- Prepare the dish and ingredients. Lightly grease a glass dish with coconut oil. Chop and measure the prepared walnuts, grate the orange zest, and measure the honey.
- Blend the cranberries. Put the cranberries and two cups of water in the Ninja BN801. Blend until the berries are broken down, then pour the mixture into a saucepan over medium heat.
- Moisten the gelatin separately. Mix the two tablespoons of gelatin with the additional quarter cup of water in a small bowl, making sure the powder is moistened.
- Dissolve in the berry mixture. Add the gelatin mixture to the saucepan. Stir for about five minutes until warm and the gelatin has dissolved, with no dry pockets or gelatin lumps remaining.
- Add the flavor and nuts. Remove from the heat and stir in the walnuts, honey, and orange zest. Mix so the honey blends through and the walnut pieces are coated with the cranberry mixture.
- Chill and serve. Pour into the greased glass dish. Let the filled dish cool if hot before refrigerating. Chill for one to two hours, or until set, then slice or portion into four servings. Allow longer if the middle is still too soft.
The cranberries go into the blender cold, before the saucepan step. The Ninja handles the berries and water together; the heated mixture stays in the saucepan. You do not need to pour hot cranberry liquid back into the blender.
After blending, the mixture should be red with fine berry flecks. It won’t be a clear juice. Check that the berries are broken down rather than leaving large intact berries at the bottom of the pitcher.
The small bowl of gelatin and water can thicken as the powder absorbs liquid. Add that moistened mixture to the saucepan and keep stirring through the bottom and sides. Its job is to dissolve through the warm cranberry mixture before you fill the dish.
Five minutes is the heating estimate. Check the mixture on the spoon as well as the clock. Fine berry flecks belong in this dessert, while undissolved pale gelatin pockets need more gentle warming and stirring.
Stir the honey through while the mixture is warm so it doesn’t remain in a sticky patch. Fold in the chopped walnuts and zest, then transfer the whole batch to the glass dish. Include the nut pieces left in the saucepan rather than leaving them behind.
Begin checking the set after an hour and allow up to two hours, or longer if needed. The middle should hold together when you portion it. If it still runs into the space left by the spoon or knife, give it more refrigerator time.

Let us know how it was!Serving And Making It Ahead
Allow about five minutes for the heating step and one to two hours for chilling. Preparing the walnuts is a separate job, as are measuring, zesting, blending, and cooling the filled dish if needed. Start with the walnuts ready rather than trying to fit their long drying step into this dessert’s timing.
The batch serves four. You can cut portions in the glass dish or lift them out gently once firm. A whole-cranberry set with walnut pieces looks different from a smooth, clear fruit-juice jelly, so don’t expect transparent slices.
Keep the finished dessert covered in the refrigerator until serving. Bring out the portions you want and return the remainder to the fridge. The walnut pieces have been mixed into a moist fruit dessert, so they won’t have exactly the same dry texture as walnuts eaten straight from their storage container.
Make the prepared walnuts ahead and keep them refrigerated separately. For the dessert itself, plan for the full chilling window. It is easiest to choose a time when the glass dish can sit level and undisturbed while the middle sets.
Equipment For The Berry Mixture
I use the Ninja Professional Plus Kitchen System BN801 for blender recipes. Here it blends only cold cranberries and water. You can also find the Ninja BN801 on Amazon.
A small saucepan with room to stir suits the heating step. The Le Creuset 1.75-quart Signature Round Saucepan in Artichaut fits the base batch. Have a small bowl for the gelatin, a spoon or whisk, measuring cups and spoons, a fine grater, and the greased glass dish ready.
Frequently Asked Questions
Is The Quarter Cup Of Water Part Of The Two Cups?
No. Use two cups to blend the cranberries and another quarter cup for the gelatin. The total water is two and one-quarter cups.
Does It Contain Orange Juice?
No. One teaspoon of fresh orange zest supplies the orange flavor. Adding juice would change the liquid amount in this recipe.
Do I Measure The Walnuts Before Or After Chopping?
Prepare and dry them first, then chop and measure half a cup. Whole halves fit differently into a measuring cup from small chopped pieces.
Why Is The Jello Opaque?
The whole cranberries are blended without straining out the skins and pulp. Fine berry flecks and visible walnut pieces belong in the finished dessert.
Can I Double It?
Use the doubled ingredient amounts, then divide them between two batches and two similar glass dishes. That gives the saucepan room for stirring and keeps the dessert at a similar depth. Additional batch work takes additional time; chill until the middle is set.
