Yellow pineapple, orange clementines and a white layer of homemade yogurt turn four little fruit cups into candy-corn parfaits. A sprinkle of unsweetened coconut finishes the top. The fruit supplies the sweetness, and you can see all three colors through the glass.

Have your homemade 24-hour GAPS yogurt finished and chilled before you begin. With that ready, these no-cook Halloween snacks take about 10 minutes to assemble.

Where These Parfaits Fit on GAPS

Wait until diarrhea and abdominal pain have cleared and stools are consistently normal before introducing raw fruit. Use these parfaits after raw pineapple, clementines, coconut and homemade fermented dairy have been introduced and tolerated. Serve them as a Full GAPS fruit snack between meals.

The complete parfait is not an Introduction Diet recipe, even if you already use its plain yogurt during Intro.

Choose ripe fresh fruit and plain homemade whole-milk yogurt. The coconut should be unsweetened and free of preservatives or other additives.

Prepare the Fruit and Yogurt

Peel and core the pineapple, then cut the flesh into small pieces about half an inch across. Measure one cup of those prepared pieces. Peel the clementines, separate the segments, remove any seeds and cut the segments in half. Measure one cup after preparing them. Fruit sizes vary, so the prepared cup measure is more useful than a fixed number of clementines.

Measure one cup of finished, cold yogurt. If your homemade batch is too runny to form a distinct layer, use the existing yogurt-draining method first. A shorter drain leaves thicker yogurt; an overnight drain makes a soft curd. For these cups, stop at a spoonable yogurt texture and measure after draining. That advance draining takes extra time.

Make Three Visible Layers

Set out four clear 8-ounce glasses or jars. Each cup holds three quarter-cup layers, so leave enough room above them for the coconut.

Spoon a quarter cup of pineapple into each glass, keeping the fruit near the sides so the yellow layer is visible. Add a quarter cup of clementine pieces, then gently spoon a quarter cup of yogurt over the orange fruit. Keep the spoon near the surface as you add the yogurt so it does not plunge through the fruit layers.

Sprinkle half a tablespoon of coconut over each white top. Serve the parfaits immediately, while the fruit layers are distinct and the coconut has a little texture.

You need clear 8-ounce glasses or jars, a cutting board, a small knife, measuring cups and spoons, and a serving spoon. The clear sides show the Halloween colors; no blender or food processor is needed for this plain-yogurt version.

Serving and Storage

For a Halloween party, assemble the parfaits close to serving time for the clearest layers. Keep the prepared yogurt refrigerated until you need it. Cover any leftover parfaits and refrigerate them promptly; the fruit can release juice into the yogurt as it sits.
