Method
- Have the linked homemade yogurt fully fermented and chilled before you begin. If it is too runny to sit in a distinct layer, drain it using the linked whey method until spoonable, then measure the yogurt. Advance yogurt making, chilling and any draining take additional time.
- Peel and core the ripe pineapple. Dice the flesh into about 1/2-inch pieces and measure the prepared fruit.
- Peel the clementines and separate the segments. Remove any seeds, cut the segments in half and measure the prepared fruit.
- Set out a clear 8-ounce glass or jar for each parfait. Spoon 1/4 cup pineapple into each, followed by 1/4 cup clementine pieces.
- Gently spoon 1/4 cup cold yogurt over the orange layer in each glass. Keep the spoon near the fruit surface so the layers stay visible.
- Sprinkle 1/2 tablespoon coconut over each white top and serve immediately. Cover any leftovers and refrigerate promptly.
Notes
Full GAPS: Use after raw pineapple, clementines, coconut and homemade fermented dairy have been introduced and tolerated. Serve as a fruit snack between meals. The complete parfait is not an Introduction Diet recipe.
Yogurt: Start with the linked plain whole-milk yogurt, fully fermented and chilled. If needed, use the yogurt-draining method until spoonable, and measure after draining. Its advance preparation is outside the ten-minute assembly time.
Prepared fruit measures: Measure the pineapple after peeling, coring and dicing. Measure the clementines after peeling, removing any seeds and halving the segments.
Glasses and scaling: Each parfait contains three quarter-cup layers plus half a tablespoon of coconut. Use 8-ounce glasses for room above the layers. At 2×, make eight glasses with the same amount in each layer.
Serving: Assemble close to serving. Cover leftovers and refrigerate promptly; fruit may release juice while sitting.
