This tangy avocado mayo dressing is creamy enough to cling to lettuce and loose enough to spoon across a salad. One ripe Hass avocado gives it body. A small amount of raw olive oil, apple cider vinegar, garlic, salt, and pepper keep it sharp and savory without turning it into a heavy bowl of mayonnaise.

The batch comes together in about five minutes. That small scale is useful when you need dressing for dinner without committing a full cup of oil. In my weekday kitchen, I am usually cooking before second shift while homeschool work and six hungry people keep the morning moving. A dressing that uses one avocado and one measuring cup is much easier to fit into that rhythm.

What This Dressing Tastes Like

This is the tangier of the three avocado dressings in this recipe family. The vinegar comes through first, followed by fresh garlic and a mild avocado finish. The olive oil rounds out the acidity, but the avocado does most of the thickening.

The finished dressing should be pale green, smooth, and glossy. It is thicker than vinaigrette but softer than a firm jarred mayonnaise. When you drag a spoon through the bowl, the line should stay visible for a moment and then slowly settle back in.

GAPS Stage

This recipe fits Full GAPS. Use cold-pressed extra-virgin olive oil raw, additive-free raw apple cider vinegar, a ripe Hass avocado, fresh garlic, mineral salt, and black pepper. The raw egg yolk is optional, so the same measured formula also works for an egg-free household.

This is not an Introduction Diet dressing. Avocado, raw garlic, raw oil, and vinegar belong after the Introduction Diet, once you are on Full GAPS and tolerating the ingredients.

Ingredients

  • 1/4 cup cold-pressed extra-virgin olive oil
  • Raw apple cider vinegar, added to the same measuring cup until the combined liquid reaches the 1/3-cup line
  • 1 raw egg yolk, optional
  • 1 clove fresh garlic, crushed
  • 1 ripe Hass avocado
  • 1/4 teaspoon mineral salt
  • 1/8 teaspoon black pepper

Use a one-cup glass measure for the oil and vinegar. Pour in the olive oil first. Then add vinegar until the surface of the combined liquids reaches the 1/3-cup mark. That line is part of the formula. Do not fill a separate 1/3-cup measure with vinegar.

Choose a Hass avocado that yields slightly when pressed but is not watery or stringy inside. Its dense, creamy flesh emulsifies into this dressing more reliably than other avocado varieties.

  • One-cup glass measuring cup
  • Ninja BN801 24-ounce single-serve cup and blade assembly
  • Ninja BN801 motor base
  • Small silicone spatula
  • Small glass storage jar

The Ninja BN801 single-serve cup fits this small batch better than the 72-ounce pitcher. Its narrow shape keeps the avocado and measured liquids close to the blades. Keep the cup below its MAX LIQUID line, lock it onto the BN801 base, and return it upright before removing the blade assembly.

How To Make Tangy Avocado Mayo Dressing

Measure The Oil And Vinegar

Pour 1/4 cup olive oil into the one-cup glass measure. Leave it on a level counter and drizzle in apple cider vinegar until the combined liquid reaches the 1/3-cup line.

Look at the measure straight across rather than from above. The oil and vinegar may separate into visible layers. That is expected. The important cue is the total liquid level at 1/3 cup.

Load The BN801 Cup

Pour the measured oil and vinegar into the Ninja BN801 single-serve cup. Add the optional raw egg yolk, crushed garlic, avocado flesh, salt, and pepper.

Press the avocado down into the liquid and break very large pieces with the edge of the spatula. Keep every ingredient below the cup’s MAX LIQUID line, then secure the compatible blade assembly tightly.

Blend Until Emulsified

Invert the cup onto the Ninja BN801 motor base and lock it in place. Use short pulses until the avocado begins to move through the liquid, then blend only until the mixture looks evenly pale green and creamy.

Blend until no avocado pieces remain and the color is even from top to bottom. The dressing should look creamy and glossy, not oily around the edges. Stop and scrape down the cup once if a streak of avocado clings above the blade.

Lift a spoonful and let it fall back into the cup. It should pour in a thick ribbon and leave a soft trail on the surface. If you see a separate ring of oil, return the dressing to the BN801 cup, secure the blade assembly, and pulse again.

Notes

Full GAPS: Use raw cold-pressed extra-virgin olive oil, additive-free raw apple cider vinegar, Hass avocado, fresh garlic, mineral salt, and pepper.
Egg-free: Omit the raw egg yolk and keep every other measurement the same.
Exact vinegar measure: One tablespoon plus one teaspoon is the amount added after 1/4 cup oil to reach the 1/3-cup combined line. The split lines allow truthful 2x scaling.
Yield: One small batch without a fixed volume or serving count.
Storage: Best made close to serving because fresh avocado darkens after cutting.

The Egg-Free Option

For the egg-free version of this exact dressing, leave out the yolk and keep every other measurement the same. The ripe Hass avocado still supplies enough body for the oil and vinegar to come together.

The egg-free batch may feel slightly softer, but it should still be smooth and creamy. Use the same visual checks: even pale-green color, no separate oil ring, and a thick ribbon that settles slowly after it falls from the spoon.

How To Serve It

Use this tangy version anywhere a salad needs a creamy dressing with some bite. It coats soft lettuce without running straight to the bottom of the bowl. It also works with chopped cucumber, cooked chicken, or a simple plate of sliced vegetables you already tolerate on Full GAPS.

This tangy version pairs especially well with avocado cucumber citrus salad because the vinegar balances the creamy avocado and sweet citrus. The milder avocado mayo is a separate formula for burgers and dipping, while the lemon avocado dressing is the lighter egg-free citrus option.

Storage

Avocado begins to darken after it is cut, so this dressing is at its best when made close to serving. Transfer any extra to a small glass container. Press the cover directly over the surface or use the smallest jar that will hold the batch, then refrigerate it promptly.

A little color change at the exposed surface is normal. If you save a couple of tablespoons for later, keep them cold. Stir before serving and check that the dressing still smells fresh and pleasantly sharp.

Troubleshooting

The Dressing Looks Oily

Return the BN801 cup upright and scrape down the sides. Secure the blade assembly and pulse again until the dressing is uniformly pale green with no oil circling at the edge.

The Blender Is Not Catching The Mixture

Stop the BN801 and return the cup upright. Remove the blade assembly, scrape down any avocado above the dressing, reseal the cup, and pulse again. This small batch belongs in the single-serve cup rather than the 72-ounce pitcher.

The Garlic Is Too Strong

Use one ordinary clove and crush it before blending so it disperses evenly. Fresh garlic tastes strong in this small batch. Do not add extra cloves before tasting the finished dressing.

The Dressing Is Too Tangy For Dipping

This formula is intentionally the tangy salad version. Use the separate mild avocado mayo rather than changing these measurements. The milder formula uses more oil and a fixed tablespoon of vinegar, so it suits dips and spreading better.

Frequently Asked Questions

Can I Use A Different Avocado?

Use Hass avocado for this formula. Its dense, creamy flesh emulsifies the dressing reliably.

Can I Skip The Egg Yolk?

Yes. Leave it out and blend the same measured oil, vinegar, garlic, avocado, salt, and pepper. This is an egg-free adaptation of the same dressing, not a different set of measurements.

Can I Heat This Dressing?

No heat is needed. This Full GAPS dressing uses cold-pressed olive oil raw and is served as a dressing or condiment.

Why Is The Vinegar Measured To A Cup Line?

The original formula starts with 1/4 cup oil and adds vinegar until both liquids reach 1/3 cup together. Using the same glass measure preserves that balance without guessing at the vinegar.
