This scallop scampi gives you deeply browned sea scallops over lemon-garlic zucchini noodles without turning the zucchini soft or watery. The scallops stay still long enough to build a crisp crust, while the noodles cook for only a minute before fresh lemon goes in off the heat.
It is a complete Full GAPS dinner in two skillets. That matters on a weekday when I am cooking around homeschool, our businesses, and second shift. The timing is short, but the order matters: dry and sear the scallops first, then give the zucchini noodles the briefest possible turn in the second hot pan.

Why This Scampi Works
Scallops need a dry surface, a properly heated pan, and room between them. Moisture or crowding turns the sear into steam. Pat them very dry with a clean linen towel, then set them into hot ghee or fat rendered from salt-only bacon and leave them alone.
The zucchini noodles need the opposite treatment. They cook after the scallops and stay in the second skillet for one minute, two at most. Fresh lemon juice is added only after the skillet leaves the heat.
Full GAPS Ingredients and Fats
Use fresh sea scallops, zucchini, garlic, fresh lemon, sea salt, and basil. Sear in homemade ghee or fat rendered from additive-free bacon made with salt only. The homemade stovetop ghee recipe gives you the finished cooking fat before you begin.
Three tablespoons unsalted butter or ghee are divided. One tablespoon glazes the scallops during their final minute. The other two tablespoons cook the zucchini noodles. Use ghee for both jobs when butter has not been introduced.
Raw extra-virgin olive oil is optional at the table only. Optional aged Parmesan belongs after dairy introduction and should be raw or properly cultured without additives. Black pepper is optional when tolerated.
Prepare the Zucchini and Scallops
Spiralize about four zucchini with the largest blade. Thick noodles hold their shape better during the quick toss. Green zucchini, yellow zucchini, or a mixture both work.
Allow three to four large scallops per person. Pat every flat face and side dry. Heat a large cast-iron or stainless-steel skillet over high heat until quite hot but not smoking, then add the measured searing fat and reduce to medium-high.
Sear Without Moving the Scallops
Place the scallops in one uncrowded layer and salt lightly. Do not slide, stir, or check them repeatedly. Watch the bottom edge instead. After three to five minutes, a deep brown crisp ring should be visible and the sides should be turning opaque.

Flip once with tongs or a thin stainless spatula, salt the second side lightly, and cook about three minutes. Add one tablespoon butter or ghee during the final minute and swirl it around the scallops to loosen the browned flavor from the pan and glaze their surface.
Cook the Zucchini Noodles Briefly
Heat the second skillet over high heat and add the remaining two tablespoons butter or ghee. Add the zucchini noodles and chopped garlic. Toss for one minute. Stop at two minutes even if you prefer softer vegetables elsewhere. Longer cooking releases more water and reduces the noodles quickly.

Take the skillet off the heat, pour in the fresh lemon juice, and toss. Divide the noodles among four plates, set three to four scallops on each serving, and finish with fresh basil.

This is already a full meal, with seafood and vegetables on the same plate. Add additive-free olives or capers at the table if they fit your foods. Keep optional tomato, Parmesan, black pepper, lemon slices, and raw olive oil separate so each person can choose.
Refrigerate leftover scallops promptly. They are best eaten cold the next day because reheating can tighten their tender texture. Store the zucchini noodles separately when possible so their released moisture does not soften the scallop crust.
Recommended Equipment
- Two large skillets: One holds the scallops while the other cooks the noodles quickly.
- Large-blade spiralizer: Thick zucchini strands resist overcooking.
- Clean linen towel: Dry scallop surfaces brown instead of steaming.
- Tongs or thin stainless spatula: Lift each scallop without scraping away its crust.
Frequently Asked Questions
Why Did My Scallops Stick?
The pan may not have been hot enough, the scallops may have been wet, or the crust may not have formed yet. Dry them, preheat the skillet, and wait for the visible brown edge before flipping.
Can I Cook With Olive Oil?
Use ghee or salt-only bacon fat for searing and butter or ghee for finishing. Keep optional extra-virgin olive oil raw and drizzle it over the plated dish.
How Long Do Zucchini Noodles Cook?
One minute over high heat, two at most. Remove the skillet from the heat before adding the lemon juice.
Can I Use Another Fish?
For a separate measured option, use the pan-seared salmon recipe and serve it with these briefly cooked zucchini noodles. Keep that fish method separate from the scallop timing.
How Many Scallops Per Person?
Plan on three to four large scallops per person. The measured 1 to 1 1/2 pounds serves four.
