This family-size seven-layer dip is the kind of meal that earns its space on the table. It looks like party food, but every layer has a practical job: prepared zucchini hummus makes the base, avocado-lime guacamole adds soft richness, cilantro-lime ranch replaces the usual commercial sour-cream layer, and cooled ground beef turns the dish into something substantial enough for lunch or dinner.

With six children, I appreciate a meal that can be assembled before everyone is hungry and served without a last-minute line of separate pans. The early work is mostly component preparation and chilling. Once those pieces are ready, the final assembly is simple, the layers are easy to see through the glass dish, and everyone can choose a permitted vegetable dipper that works for them.

The zucchini hummus, three-ingredient guacamole, and cilantro-lime ranch each keep their own linked recipe, so you can make any one of them by itself or come back here when you are ready to assemble the full dish.

What Makes This A Seven-Layer Dip

The layers go into the dish in a fixed order: prepared zucchini hummus, avocado-lime guacamole, cilantro-lime ranch, sliced olives, finely diced radishes, cooled ground beef, and chopped cilantro. The clear dish shows each layer and also makes it easier to see whether the base stayed level while the upper layers were added.

The first three layers are creamy but should remain visually separate. The hummus is smooth and set, the guacamole is softer and slightly chunky, and the ranch is pale with fine green herb flecks. Above those, the olives, radishes, beef, and cilantro add clear bands of dark, bright, browned, and fresh green color.

Do not stir the finished dish. Scoop straight down through all seven layers so each serving gets some of every component.

Where It Fits On GAPS

This is a Full GAPS recipe for someone already using the complete ingredient list: raw avocado and radishes, properly prepared sesame tahini in the zucchini hummus, pure seasonings, the accepted cilantro-lime ranch ingredients, traditionally cured additive-free olives, and cooked ground beef.

It is not an Introduction Diet dip simply because the beans, corn chips, and commercial dairy are gone. The complete recipe depends on later foods and raw vegetable components. Use it when each layer already fits the eater’s current Full GAPS routine.

The olive label matters. Choose olives preserved without sugar or other non-allowed ingredients. Drain and slice enough for one full, even layer. Jar and can sizes vary, so go by coverage rather than a package weight.

Prepare The Three Foundation Recipes

Start with one full batch of Prepared Zucchini Hummus for Full GAPS. Spread it in the bottom of a deep nine-inch square clear glass dish while it is still easy to level. Refrigerate it for two to three hours, until the surface is set and the center does not slide when the dish is tilted gently.

While the hummus chills, make one full batch of Three-Ingredient Avocado-Lime Guacamole. It should have a creamy base with small soft pieces of avocado still visible. Cover and refrigerate it until the hummus is ready.

Prepare Full GAPS Cilantro-Lime Ranch Dressing and chill it too. Use only enough ranch to spread a complete even layer. Stop when the guacamole is covered; pouring in more can make the dish soupy.

Build The First Three Layers

Check the zucchini-hummus base before adding anything. The center should feel set enough to carry the guacamole without the two colors swirling together. If the hummus shifts or the surface closes over immediately after a light touch, give it more refrigerator time.

Spoon the guacamole into the center and work outward with a flexible scraper. Use light strokes and stop at the edges. Pressing hard can pull the hummus up into the avocado.

Add the ranch the same way. Spread it from the center toward the corners until the guacamole is covered in one pale, level layer with fine cilantro flecks. The ranch should sit on top rather than run down the sides.

From the side of the dish, you should see a smooth pale-green base, a brighter chunky green band, and a pale herb-speckled top. If they are blurred together, the hummus was not set firmly enough or the upper layers were spread too forcefully.

Prepare The Olives And Radishes

Drain the olives thoroughly before slicing. Water clinging to them can loosen the ranch and create dark puddles across the pale layer. Pat them gently if necessary, then scatter them evenly from corner to corner.

Cut five to six large radishes into very small squares. The pieces should be small enough to scoop cleanly with the other layers, with bright red skin visible against the white interior. Large wedges make the dip difficult to serve and can drag the ranch layer upward.

Scatter the radishes over the olives. Do not mound both ingredients in the center; each is a complete layer, even though the pieces leave small spaces between them.

Cook And Cool The Ground Beef

Place one pound ground beef in a Le Creuset Signature 10.25-inch Artichaut skillet over medium heat. If the beef is very lean and begins to stick, add only the qualifying GAPS cooking fat needed for the pan; no fixed amount was provided.

Add one teaspoon sea salt at the beginning of cooking. Break the meat into small, even crumbles with a wooden spatula. Continue cooking until no pink remains and the crumbles are browned rather than gray and wet.

Remove the skillet from the heat and spread the beef in the pan so steam can escape. It is ready for the dip when it is no longer steaming and no longer warm enough to soften the chilled layers underneath. Putting hot beef on ranch will thin the dressing and warm the guacamole.

If a visible pool of rendered fat remains, lift out the crumbles rather than pouring the whole skillet over the dip. The beef should stay moist, but the layer should not flood the radishes and olives.

Finish The Seven Layers

Scatter the cooled beef over the radishes, keeping the crumbles loose and even. Check the corners and edges so the layer reaches the whole dish without compacting the meat.

Finish with one-half cup finely chopped fresh cilantro. The final layer should look fresh and leafy while leaving enough beef visible that the dish still reads as a hearty meal rather than a bowl of herbs.

Count the layers from the side before serving: hummus, guacamole, ranch, olives, radishes, beef, and cilantro. This quick check catches a missed ingredient without turning the entire dish over.

How To Serve It

Offer peeled cucumber slices, celery sticks, crisp lettuce hearts, or radish halves for dipping. A sturdy lettuce leaf can hold a spoonful like a small cup, and cucumber gives a clean, cool contrast to the beef and ranch.

You can also scoop the dip over shredded lettuce and serve it as a layered salad. Keep the lettuce separate until serving so it stays crisp.

Commercial corn chips, grain crackers, and standard tortilla chips do not fit this Full GAPS version. The dip already has enough flavor and texture to work with fresh vegetable dippers.

For a family meal, put the clear dish in the center of the table with several vegetable choices around it. For a party, keep the dish chilled until close to serving and use a sturdy serving spoon that can reach the bottom layer.

Storage And Make-Ahead Notes

This recipe is designed for advance preparation because the zucchini-hummus base needs two to three hours to set. Make the component recipes first, chill them separately, and cook the beef early enough for it to cool before assembly.

Keep the assembled dip covered and refrigerated until serving. The directions provide the setting and cooling time but no tested leftover-storage window, so keep it cold and use it promptly.

Use a clean serving spoon and return the dish to the refrigerator promptly. Discard it if the fresh layers develop an off smell, visible mold, unexpected bubbling, or other signs of spoilage.

Freezing is not a good fit for this assembled dish. Avocado, ranch, and fresh radish can release water or change texture after thawing, which would loosen the layers.

  • Deep nine-inch square clear glass dish
  • Medium glass or ceramic bowl and stainless fork for guacamole
  • Flexible scraper for leveling each creamy layer
  • Fine-mesh strainer for draining olives
  • Sharp stainless knife and wooden cutting board
  • Le Creuset Signature skillet in Artichaut
  • Wooden spatula for breaking ground beef into small crumbles
  • Covered glass containers for chilled components

The clear dish is useful here because it shows whether the layers stayed separate. A similarly sized round or rectangular clear dish can work, but a much wider dish will make every layer thinner.

Frequently Asked Questions

Does This Seven-Layer Dip Contain Beans?

No. The bottom layer is prepared zucchini hummus. It gives the dish a creamy base without chickpeas or another bean.

Is This Dip Dairy-Free?

Yes when you use the linked Full GAPS cilantro-lime ranch formula and keep every component within that dairy-free route. Do not substitute commercial sour cream.

Can I Use A Different Guacamole?

This measured formula uses the linked three-ingredient avocado-lime guacamole. A different guacamole can change the moisture, seasoning, and layer thickness.

How Much Cilantro-Lime Ranch Do I Need?

Use enough for one complete even layer. There is no fixed volume. Stop when the guacamole is covered in one even layer without making the dish soupy.

What Kind Of Olives Fit This Recipe?

Use additive-free traditionally cured olives with a short ingredient list. Drain them well and use enough sliced olives for one even layer.

Why Must The Beef Cool First?

Hot beef can thin the ranch, soften the guacamole, and warm the chilled hummus base. Cool it until it no longer steams before adding it.

Can I Assemble It In Individual Bowls?

Yes. Divide each component evenly and preserve the same seven-layer order. Chill the hummus portions until set before adding guacamole.

Is This An Intro GAPS Recipe?

No. It is a Full GAPS recipe for someone already using every raw vegetable, prepared seed component, condiment, olive, and seasoning in the complete dish.

Can I Serve It As Dinner?

Yes. The pound of ground beef makes it more substantial than a vegetable-only dip. Serve it with permitted vegetable dippers or over shredded lettuce.
