This shrimp scampi brings together tender shrimp, lemon, garlic and squash noodles that stay slightly crisp. Cut the vegetables and measure the seasonings before heating the skillet. Once the shrimp goes in, the cooking moves quickly, and the noodles need only a brief toss at the end.

I do most of my cooking in the morning before leaving for second shift, alongside homeschooling. For a dish like this, getting everything ready before turning on the burner matters more than trying to chop faster beside a hot pan.

The recipe serves four. Cook with butter or the measured homemade ghee alternative, then finish the plated food with cold-pressed olive oil. The butter and ghee are choices, rather than two fats to add together.

What You Need

  • 4 Tbsp unsalted butter or 3 Tbsp homemade ghee: Choose the dairy fat you have introduced and tolerate. Measure finished ghee from its strained jar.
  • 2 Tbsp cold-pressed extra-virgin olive oil: Keep this separate for dressing the finished servings.
  • 1 pound large shrimp: Start with raw shrimp, peeled, deveined and butterflied. If frozen, thaw before cooking. Choose plain shrimp without a sauce or seasoning mixture.
  • 4 garlic cloves and ⅛ tsp red chili flakes: Mince the garlic and use pure chili flakes without added ingredients.
  • Zest of 1 lemon and ¼ cup fresh lemon juice: Grate the yellow outer zest, then measure the juice separately. One lemon is the zest measurement, not a promise that it supplies the full juice amount.
  • 6 yellow squash or zucchini: Cut into long, narrow noodles with a julienne peeler or vegetable slicer. Leave behind a watery seed core.
  • ⅓ cup chopped flat-leaf parsley and 1 tsp natural sea salt: Have both ready beside the stove.

This is a squash-noodle dish, so it has a lighter texture than wheat pasta. Yellow summer squash and zucchini are the two measured choices. Spaghetti squash would give a different texture and preparation, rather than being a direct swap in these instructions.

Get Ready Before You Cook

Set out the serving plates and tongs first. Cut the noodles, prepare the shrimp, mince the garlic, grate the zest and measure everything else. Keep the olive oil in its own small container so it does not go into the cooking fat by mistake.

Use a wide 12-inch skillet. The shrimp should fit in a layer with room to turn. For a double batch, use suitable additional pan space or cook separate batches. Putting twice as much food into the same crowded skillet changes how it cooks; the cooking time does not automatically double.

Allow about twenty minutes for cooking once the shrimp, noodles and seasonings are ready. Set aside extra preparation time if you are starting with unpeeled shrimp or whole squash. Preparing those ingredients is real work, even though the shrimp itself cooks in only a few minutes.

How to Make Shrimp Scampi With Squash Noodles

  1. Prepare the ingredients. Cut the squash or zucchini into noodles, leaving behind a watery seed core. Have the peeled, deveined, butterflied shrimp ready. Mince the garlic, grate the lemon zest, measure the juice and chop the parsley.
  2. Warm the cooking fat. Put the butter or ghee in the 12-inch skillet over medium heat. If using butter, let it melt and begin to foam without browning. Keep the olive oil aside.
  3. Cook the shrimp. Add the shrimp in a layer and sauté for about 3 to 4 minutes, turning so both sides cook. Look for pink shrimp with opaque flesh through the center, rather than a translucent middle.
  4. Add the aromatics. Stir in the minced garlic, chili flakes and lemon zest. Keep them moving for about 30 seconds, just until the garlic smells fragrant, without letting it darken.
  5. Warm the noodles. Add the squash noodles, lemon juice, parsley and salt. Use tongs to turn everything together just until the noodles are hot and still have a slight bite. Serve promptly rather than leaving them to simmer.
  6. Plate and finish. Take the skillet off the heat and divide the scampi among the plates. Distribute the measured olive oil over the finished servings. Serve immediately.

Keeping the Noodles From Turning Watery

Summer squash contains plenty of water. The longer the noodles cook or sit in the finished dish, the more liquid collects around them. That is why they go in after the shrimp is cooked and the garlic has had its short time in the pan.

Look for strands that bend and separate easily but still have a little bite. Stop tossing once they are hot. If you keep cooking until the pan looks dry, the noodles can become limp while the shrimp turns firm and chewy.

This method does not have a separate salt-and-drain stage for the noodles. Keep the measured salt for the final toss. For the same reason, avoid adding an unmeasured splash of water or extra lemon juice to the pan.

Full GAPS Notes

This is a Full GAPS meal after its ingredients and dairy fat have been introduced and tolerated. It is not an early Intro soup: the shrimp is sautéed, the squash stays slightly crisp, and the recipe includes chili and a fresh olive-oil finish.

Gut and Physiology Syndrome includes fresh or frozen shellfish, squash and pure spices among the permitted foods. It also distinguishes cooking fats from cold-pressed plant oils used to dress finished meals. Here, butter or ghee does the skillet cooking, while the olive oil goes onto the ready servings.

Ghee is made from butter, so choosing it does not make the recipe free of dairy origin. Use it only if that form is suitable for you. The linked ghee recipe explains the dairy-introduction conditions. If you cannot use either butter or ghee, choose a recipe made with a cooking fat you tolerate.

Serving and Leftovers

Serve as soon as you finish plating. The shrimp, squash and sauce are already together, so you do not need a separate pasta preparation. Have everyone ready to eat before the noodles reach the skillet.

Refrigerate leftovers promptly in a covered container. Expect softer noodles and more collected liquid. Reheat gently just until the shrimp is hot through; extended cooking makes the texture worse. Cook the amount you plan to serve fresh for the best noodle texture.

Use a julienne peeler or vegetable slicer, a knife and wooden cutting board, a 12-inch stainless-steel skillet, tongs, a citrus zester and juicer, measuring cups and spoons, and serving plates. A specialty blender or appliance is not needed.

More Full GAPS Dinners

The stovetop ghee is a useful component to prepare separately before cooking. For a different shrimp meal, try cilantro lime grilled shrimp, following its own measured marinade and finishing method.

Frequently Asked Questions

Can I use zucchini instead of yellow squash?

Yes. Use the same count of six, cut into noodles. Keep the brief final toss so the strands stay distinct.

Do I use both butter and ghee?

No. The base recipe uses either four tablespoons of butter or three tablespoons of ghee. At 2×, those choices become eight tablespoons of butter or six tablespoons of ghee. The separate olive oil doubles too.

Can I use cooked shrimp?

This method is written for raw shrimp. Precooked shrimp would not follow the same three-to-four-minute cooking step and can turn tough with further cooking. Start with raw shrimp for this recipe.

Why is the olive oil added after plating?

The measured oil dresses the finished food. Butter or ghee supplies the cooking fat, so the cold-pressed oil stays out of the hot skillet.

Can I prepare the vegetables ahead?

You can have the noodles cut before cooking, but wait to put them in the pan until the shrimp and aromatics are ready. Do the measuring and chopping first, then cook and serve without a long wait.

Notes

Cooking fat: Use four tablespoons butter OR three tablespoons homemade ghee at 1×, not both. At 2×, use eight tablespoons butter OR six tablespoons ghee. The separate olive oil becomes four tablespoons at 2×. Measure finished ghee from the strained jar.
Yield and timing: This recipe serves four. A doubled batch serves eight. Allow about twenty minutes cooking with the shrimp, noodles and seasonings already prepared. Allow additional time for peeling, deveining, cutting and measuring before you begin cooking. Use the food cues in the directions. A double batch needs appropriate additional pan space or separate batches; cooking time does not automatically double.
GAPS: Full GAPS after these foods and the chosen dairy fat are introduced and tolerated. Ghee remains dairy-derived; use the applicable dairy-introduction conditions. Keep the cold-pressed olive oil out of the cooking skillet and dress the ready plated servings.
Noodles: Use yellow summer squash or zucchini. There is no separate salting/draining step here. Add noodles only after the shrimp and aromatics are cooked, and toss just until hot. Serve promptly; the strands soften and release more moisture if left standing.
Leftovers: Refrigerate promptly in a covered container. Expect softer noodles and collected liquid. Warm gently only until the shrimp is hot through; cook the amount you plan to serve fresh for the best noodle texture.
