These fresh pork roast scrambled eggs turn six ounces of leftover homemade pork-leg roast into a one-serving Full GAPS breakfast. Red bell pepper, green onion, and white onion cook first, the pork warms for three minutes, and three eggs finish the skillet without browning.

Leftover roast makes a substantial breakfast much faster than cooking meat from raw in the morning. In our family, planned leftovers are especially useful when six children are moving through breakfast at different times.

Why This Uses Fresh Pork Roast

The captured source names ham, but ordinary cured, smoked, deli, and commercial ham does not fit this adaptation. Use six ounces diced leftover homemade fresh pork-leg roast with no curing ingredients or commercial processing.

The fresh pork should look like cooked roast meat: pale tan inside with browned roasted edges, not uniformly pink cured ham. Dice it into small cubes so it warms through during the measured three-minute skillet step.

Where It Fits On GAPS

This is a Full GAPS formula. It uses eggs, fresh vegetables, leftover homemade unprocessed pork roast, and butter or another source-appropriate GAPS cooking fat.

Sauté The Vegetables For Ten Minutes

Heat one to two tablespoons cooking fat over medium until bubbling. Add two tablespoons diced red bell pepper, one thin-sliced green onion, and one tablespoon diced white onion.

Stir frequently for about ten minutes. The onions should soften and turn translucent without burning, and the red pepper should become tender while keeping its color.

Warm The Pork For Three Minutes

Add all six ounces diced fresh pork roast. Stir it through the vegetables and cook for about three minutes. The pieces should be hot at the center but not dry or crisp.

Give The Eggs A Thirty-Second Start

Whisk three eggs until the whites and yolks are combined. Pour them over the pork and vegetables, then leave them undisturbed for about 30 seconds so the first thin layer begins setting.

Scrape and stir frequently after that pause. Fold the cooked egg through the loose portion until the curds are set but still moist. Transfer immediately so the hot skillet does not brown them.

Storage

This scramble is best served immediately. Refrigerate leftovers covered and reheat briefly over low heat. Store the fresh pork roast separately until you are ready to dice and warm it.

Frequently Asked Questions

Can I Use Store-Bought Ham?

No. Use leftover homemade unprocessed fresh pork-leg roast.

Should I Use One Or Two Tablespoons Fat?

The source gives a one-to-two-tablespoon range. Start with enough to coat the skillet and keep that measured range.

Why Wait Thirty Seconds?

The short pause lets the first egg layer begin setting before the scrape-and-stir finish.

Why Are My Eggs Brown?

The heat was too high or the finished scramble remained in the skillet. Stir frequently and transfer while moist.
