Coconut lime ice cream is bright, creamy, and simple enough to make from four measured ingredients. Homemade coconut milk provides the rich base, fresh lime keeps it sharp, raw honey supplies the Full GAPS sweetness, and mineral salt brings the coconut and citrus together.

This six-serving batch takes about 10 minutes to prepare and about 25 minutes to churn. The useful endpoint is visible: the mixture expands, freezes into a thick ribbon, and holds soft ridges instead of leveling immediately behind the paddle.

Freeze The Bowl And Chill The Container

If your machine uses a removable freezer bowl, prepare it according to the manufacturer’s directions. A bowl that has not frozen completely may cool the base without turning it into ice cream.

When you plan to firm the ice cream after churning, put the empty storage container in the freezer before blending. Moving soft ice cream into a warm container makes the edges melt while the center is still being scraped from the machine.

I do most of our cooking in the morning before work, while homeschooling is also moving through that part of the day. Freezing the bowl and storage container ahead of time removes two small decisions when six people may be asking for something else at once.

Use Homemade Coconut Milk At Room Temperature

Measure 3½ cups of homemade full-fat coconut milk. Use the completed milk after straining. Packaged and canned coconut milk are not the ingredient in this Full GAPS version.

Bring the coconut milk to room temperature before blending. Cold coconut milk can divide into a firm cream layer and thinner liquid. At room temperature, the fat can blend evenly with the lime juice, honey, and salt before the freezer bowl begins setting it.

Stir or shake the homemade milk before measuring if it has separated in the refrigerator. The measured 3½ cups should be uniform rather than cream scooped from the top and thin liquid measured from the bottom.

Measure after the milk is uniform. This is a large part of the batch, so uneven coconut fat can change both the first churn and the texture after freezing. A smooth room-temperature measure also makes it easier to see whether the honey has dissolved completely in the next step.

Measure Raw Honey, Lime, And Salt

Use ⅔ cup raw honey at room temperature. The source gives honey as its measured GAPS branch. Agave, maple syrup, cane sugar, and allulose belong to other source branches and do not enter this Full GAPS card.

Squeeze ½ cup fresh lime juice. The source estimates about three medium limes or four small limes, but the finished measurement controls. Strain out seeds. Do not substitute bottled sweetened lime juice.

Use ¼ to ½ teaspoon natural mineral salt. Start with the lower end when your salt is fine or strongly flavored. The upper end is available within the source formula when a clearer salty finish is wanted.

The lime provides acid as well as flavor. Add the full measured ½ cup rather than pouring by fruit count alone. Small dry limes and large juicy limes can look equivalent on the counter while producing very different amounts of juice.

Bring The Ingredients To One Temperature

Room-temperature coconut milk and honey combine more evenly than one cold ingredient and one warm ingredient. Set them out only long enough to lose the refrigerator chill. The goal is a fluid, uniform base, not prolonged warm storage.

The lime juice can be squeezed while the other ingredients temper. Measure every ingredient before starting the blender so the base can move directly into the prepared ice cream maker.

If you will whisk instead of blending, use a large bowl with enough room to combine the full liquid volume without splashing. A blender is easier to inspect because settled honey is visible near the bottom.

Blend Until The Base Is Uniform

Add the room-temperature coconut milk, raw honey, fresh lime juice, and ¼ teaspoon mineral salt to the blender. Blend for about 25 seconds, until the base is completely smooth.

Stop the machine and look through the jar. The mixture should be evenly opaque and pour as one liquid. Honey stuck near the blade, a translucent lime layer, or white coconut-cream streaks mean it needs more blending.

Taste the smooth base. Add up to the measured ½ teaspoon total salt if needed, then blend only long enough to distribute it. Do not exceed the source range.

Churn Until Soft Ridges Hold

Start the prepared ice cream maker before adding the base. Pour it into the moving machine as the manufacturer’s directions specify. The source notes that the bowl will be very full, so do not add extra liquid.

Churn for about 25 minutes. At first, the mixture moves like milk. It gradually expands and becomes a thick frozen ribbon. The exact time may vary with the machine, the bowl temperature, and the room, so watch the texture as well as the clock.

Stop when the paddle leaves soft ridges that hold briefly and the ice cream mounds instead of leveling immediately. Do not force a machine that has slowed or stopped because the mixture is already too firm.

A full machine can climb around the paddle as the mixture expands. Stay within the appliance capacity and watch the upper edge during the final minutes. If the locked batch does not fit, churn two measured portions instead of reducing ingredients or overflowing the bowl.

Where This Fits On Full GAPS

This is a Full GAPS frozen dessert made with homemade coconut milk, raw honey, fresh lime juice, and natural mineral salt. It is dairy-free, egg-free, and nut-free, but those labels do not place it in the Introduction Diet.

The coconut milk must be homemade and additive-free. Raw honey is the sweetener used in the card. The commercial coconut-milk and alternative-sweetener branches from the source remain outside this formula.

For another melon-based Full GAPS option, the Cantaloupe Coconut Milk Ice Cream uses homemade coconut milk with cultured sour cream and has its own separate formula and card.

Serving The Ice Cream

Serve directly from the machine for soft serve. Divide the batch into six portions. The lime flavor is already measured into the base, so the bowl does not need zest, a lime wedge, or another garnish to be complete.

For firmer scoops, transfer the ice cream into the chilled freezer container and smooth the top. Cover it immediately. A shallow container helps the batch firm evenly and makes later portions easier to scoop.

Use a dry scoop when serving from the freezer. Water left on the scoop can freeze against the surface and create icy spots in an otherwise smooth batch. Warm the scoop briefly, dry it completely, and portion only what you need.

Storing And Softening

Cover the container with its lid or place parchment directly over the ice cream surface before closing it. The source recommends serving the batch within three days for the best texture.

A fully frozen batch needs about 20 minutes on the counter before scooping. Begin checking before the full time has passed in a warm kitchen. It is ready when the scoop can enter cleanly without the ice cream chipping.

Return the remaining ice cream to the freezer promptly. Repeated thawing and refreezing can make the texture coarser and blur the fresh lime flavor.

Keep the surface covered closely during the three-day window. The lid limits freezer air, while parchment touching the surface adds another barrier when the container leaves space above the ice cream. Remove the parchment cleanly before scooping and replace it before returning the container to the freezer.

A full-size blender gives the coconut base a uniform texture before churning. The Ninja BN801 Professional Plus Kitchen System is a current option. Use its blender pitcher and follow the manufacturer’s assembly and cleaning directions.

The Cuisinart two-quart automatic ice cream maker is a current machine option, but this source batch is very full. Follow the machine’s stated capacity and divide the base into two churns if required.

You also need measuring cups and spoons, a citrus juicer, a fine strainer for seeds, and a freezer-safe covered container.

Frequently Asked Questions

Can I Use Canned Or Tetra-Pack Coconut Milk?

No. Use 3½ cups of the linked homemade coconut milk, measured after it is prepared and brought to room temperature.

Can I Replace Raw Honey With Maple Syrup?

No for this Full GAPS formula. The source provides raw honey as its GAPS branch, measured at ⅔ cup.

Why Is The Coconut Milk At Room Temperature?

Room-temperature coconut milk blends evenly. A cold firm cream layer may stay separate from the lime juice and honey.

Can I Whisk The Base Instead?

Yes. The source allows a large bowl and whisk. Continue until no honey or coconut-cream streaks remain before churning.

What If My Ice Cream Maker Is Too Small?

Keep the formula unchanged and churn it in two portions. Hold the second covered portion cold while the first churns, then return the machine to its required starting condition before continuing.

How Do I Know Churning Is Finished?

The volume expands, the mixture becomes a thick frozen ribbon, and the paddle leaves soft ridges that hold briefly.

How Long Does It Keep?

Use the covered frozen batch within three days for the best texture, following the source recipe.
