These Full GAPS beef kebab salads pair warmly spiced kefta with crisp romaine, cherry tomatoes, green olives, cucumber, and a separately measured lemon-garlic Tahini Sauce. The kebabs cook quickly in a hot skillet, then go straight onto four plates. Keep the sauce on the side so each person can add enough to coat the salad without turning the greens soggy.

With six kids and a busy weeknight schedule, I like meals that can be plated in individual portions without making several separate dinners. The kebabs can cook while the vegetables are arranged, and the sauce is already made from its own linked recipe. Each plate gets the same ingredients, but everyone can choose how much sauce and optional carrot to add.

The beef pieces are shaped into short kefta, about two ounces each, with cumin, cinnamon, paprika, garlic, salt, and pepper. The romaine and vegetables stay cool and crisp beneath the hot beef. This is a different salad from the chicken Cobb with eggs, bacon, avocado, and Green Goddess dressing; the ingredients and dressing make a different plate.

Full GAPS Ingredients For Kefta Salad

Use fresh ground beef and pure spices without sugar or non-GAPS additions. For the hot skillet, use two tablespoons of ghee, coconut oil, or rendered animal fat. Keep cold-pressed olive oil unheated for dressings and finishing.

The salad base is two romaine hearts, twenty cherry tomatoes, twenty green olives, and one diced cucumber. One shredded carrot is optional. The tahini sauce has its own complete post and card: Full GAPS Lemon Garlic Tahini Sauce. Its measured tahini comes from the linked Properly Prepared Sesame Tahini component recipe.

How To Make Beef Kebab Salad With Tahini Sauce

Season And Shape The Kefta

Place one pound of ground beef in a mixing bowl. In a second bowl, combine one tablespoon cumin, one teaspoon cinnamon, one tablespoon paprika, one tablespoon pure garlic powder, one teaspoon mineral salt, and one-half teaspoon black pepper. Add the spice mixture to the beef and mix until evenly distributed. Shape the meat into short pieces about three to four inches long and roughly two ounces each.

Sear The Kebabs

Heat a 10.25-inch skillet over medium-high heat and add two tablespoons of ghee, coconut oil, or rendered animal fat. When the fat shimmers without smoking, place the kefta in the pan with room between pieces. Cook for two to three minutes on the first side, then turn and cook for another two to three minutes. The surface should brown, and the pieces should release when they are ready to turn.

Because these are ground-beef kebabs, check the center of the largest piece with an instant-read thermometer; it should reach 160°F (71°C), the safe minimum in the USDA ground-beef guidance. If a piece needs more time, keep it in the skillet and recheck. Set the cooked kebabs on a plate while you prepare the salad.

Prepare The Salad Plates

Slice two romaine hearts and divide them among four plates. Add twenty cherry tomatoes, twenty green olives, and one diced cucumber across the plates. If using the optional carrot, shred it and add it now. Arrange the vegetables so each plate has a little of each ingredient.

Top And Serve

Place the warm kebabs over the romaine and vegetables. Serve with the linked Tahini Sauce and let each person add it to taste. The smooth lemon-garlic sauce should complement the warm spices without covering the fresh crunch of the salad.

Serving And Storing

This recipe makes four servings. Serve the kebabs warm over the cool salad, with sauce at the table. If you expect leftovers, store the cooked kefta, cut vegetables, and tahini sauce separately. Keep the romaine dry and add the sauce only to the portions you are serving.

Cover and refrigerate the cooked kebabs and prepared vegetables promptly. Reheat the kebabs until hot throughout; assemble the salad again with fresh romaine if the original greens have wilted.

Frequently Asked Questions

Is the tahini sauce part of this recipe?
The Tahini Sauce has its own linked recipe. This page gives you the salad directions and lets you add the sauce to taste.

Why use ghee or rendered animal fat in the skillet?
This version uses ghee, coconut oil, or rendered animal fat for the hot skillet. Keep cold-pressed olive oil unheated for dressings and finishing.

How do I keep the kefta from falling apart?
Mix the spices evenly into the beef, shape pieces to a similar thickness, and let the first side brown before turning. If one sticks, give it a little more time rather than scraping it loose.

Can I make the salad ahead?
Wash and dry the romaine, chop the vegetables, and prepare the sauce ahead. Cook the kebabs close to serving and keep the vegetables dry until you build the plates.

What should the kefta look like when done?
The outside should be browned, the pieces should hold their short shape, and the center of the largest kebab should reach 160°F. Cut the thickest piece if you need a visual check after using the thermometer.

Equipment For Kefta And Salad Assembly

A 10.25-inch Le Creuset skillet in Artichaut gives the kefta room to brown in a single layer. Use a mixing bowl for the beef, a small bowl for the spices, a platter or four plates for the salad, and an instant-read thermometer to check the largest kebab. The linked Tahini Sauce recipe uses its own bowl and whisk; it is not prepared inside this salad formula.
