This creamy cauliflower potato salad uses small cauliflower florets in place of potatoes, with chopped eggs, dill pickles, brown mustard, and mayonnaise. It is a cold, tangy side with bits of egg and pickle in the dressing, not a bowl of mashed cauliflower.

The cauliflower is cooked first, then drained and cooled before you fold it into the dressing. That cooling step matters. Warm, wet florets make a different salad from cooled pieces with the surface water removed.

I prepare lunch and dinner before leaving for second-shift work, unless a meal is already made. Homeschooling happens before work too. With six children, a cold side still needs a place in the meal plan, especially when it has a cooling step and an hour in the fridge.

You can prepare this salad before the main dish and leave it to chill while you finish the rest of the meal. Have the cooked eggs and Homemade Avocado-Oil Mayonnaise ready before starting the cauliflower.

Jump To The Recipe

Allow about ten minutes preparation, fifteen minutes cooking, and one hour chilling, plus time for the cauliflower to cool. The listed hour and twenty-five minutes does not include making the mayonnaise or cooking the eggs separately.

Ingredients

  • 2 heads cauliflower, cut into small florets
  • 1 teaspoon sea salt for the dressing, plus a generous pinch for the boiling water
  • 1 teaspoon ground black pepper
  • 1 teaspoon paprika
  • 8 plain dill pickle spears, drained and diced
  • 2 tablespoons prepared spicy brown mustard
  • 4 hard-boiled eggs, peeled and chopped
  • ½ cup Homemade Avocado-Oil Mayonnaise
  • 1 handful fresh parsley, chopped

Choose florets that are small enough to eat comfortably from a spoon. Keep the thicker stem pieces similar in size so they finish cooking with the smaller florets. Two heads can vary in size, which also affects how much salad fills the serving bowl.

Measure eight pickle spears before dicing. Eight whole pickles or eight thin rounds are different quantities. Drain the spears before chopping so you do not add a pool of pickle brine to the dressing.

Grillo’s Classic Dill Spears are one example with a disclosed ingredient list of cucumbers, water, distilled white vinegar, salt, garlic, dill, and grape leaves. These refrigerator pickles bring dill-and-vinegar flavor to the dressing.

Use a prepared spicy brown mustard, not two tablespoons of dry mustard powder. Eden Brown Mustard lists whole mustard seed, apple cider vinegar, water, and sea salt. Check the label when choosing another product rather than assuming every mustard has the same ingredients.

For the mayonnaise, use the avocado-oil version of the linked homemade recipe. Its cold-pressed oil stays unheated. You need half a cup of the completed mayonnaise, not half a cup of plain oil poured into this salad.

How To Make Cauliflower Potato Salad

1. Prepare The Cauliflower

Cut away the leaves and dense central core, then divide the cauliflower into small florets. Split larger pieces so the bowl does not end up with a few very large florets surrounded by tiny crumbs.

Have the cooked eggs peeled and chopped, the pickles drained and diced, and the parsley chopped before you mix the dressing. The cooked cauliflower needs time to cool, so use that pause for the remaining preparation if needed.

2. Boil Until Tender But Holding Shape

Bring a large pot of water to a boil with a generous pinch of salt. Add the florets and cook until the thicker stems are tender when tested with a fork, while the pieces still hold their outline.

Allow about fifteen minutes cooking, checking the florets rather than relying only on the clock. You do not want a hard raw center, but you also do not need to cook them until they fall apart when lifted.

3. Drain And Cool

Drain the cauliflower in a colander, then spread it over a platter lined with paper towels to cool and release surface water. Avoid leaving the whole hot batch in a deep pile where the bottom stays wet.

Wait until the florets are cool before adding them to the mayonnaise mixture. The visible cue is no lingering steam, with the pieces cool throughout rather than just at the edges. Wet, warm cauliflower can loosen the dressing and leave liquid at the bottom of the finished bowl.

4. Mix The Dressing

In a large bowl, combine the dressing salt, pepper, paprika, diced pickles, brown mustard, chopped eggs, mayonnaise, and parsley. Fold until the seasonings are distributed and the egg and pickle pieces are mixed through.

The mustard and paprika color the mayonnaise, while the parsley leaves small green pieces. Keep all the measured paprika and parsley in the mixture. There is no extra garnish to add on top after serving.

5. Fold In The Cooled Florets

Add the cooled cauliflower and turn it gently through the dressing. Work from the bottom so the last florets receive some of the same coating as the first.

Use a spoon or spatula rather than beating the mixture. The goal is coated florets with chopped egg and pickle pieces throughout, not a smooth puree. Some small cauliflower crumbs are normal when you fold a cooked vegetable.

6. Chill For An Hour

Cover the bowl and refrigerate for one hour before serving. This is chilling time after the cauliflower has cooled and the salad has been mixed.

Serve cold and return the remaining salad to the refrigerator. Keep the dressing lightly distributed through the florets rather than stirring in another large spoonful of mayonnaise because the chilled coating feels firmer.

Where This Fits On GAPS

This dressed salad is for Full GAPS after its ingredients have been introduced and tolerated. Cauliflower takes the place of potatoes, and the mayonnaise is made with cold-pressed avocado oil rather than a seed-oil dressing.

Dr. Natasha’s 2020 book includes plain pickles and gourmet mustard on its recommended food list. Choose pickles without added sugar and mustard without sugar, starch, or other additives. The examples above give you specific ingredient lists to compare when shopping.

The mayonnaise link leads to the homemade avocado-oil recipe. Use that completed mayonnaise in the measured half-cup amount. The eggs, raw yolks in the mayonnaise, mustard, and parsley belong to this Full GAPS combination; this is not a plain early Intro cauliflower dish.

If you are preparing an earlier-stage meal, Cauliflower Egg Yolk Soup for Intro Stage 2 is a separate recipe for that purpose. It has its own ingredients and cooking method rather than a stripped-down version of this salad.

The avocado-oil mayonnaise keeps this version dairy-free. It does contain eggs and mustard, and the paprika is a pepper ingredient, so it is not egg-free or nightshade-free. The cauliflower and other plant ingredients mean it is not No-Plant.

Storage And Serving

The batch makes eight side servings. Serve it alongside Harissa Chicken Wings for a hot main dish with a cold side, or portion it with the rest of a chilled lunch.

Keep the salad covered in the refrigerator and use within three to four days when made with fresh ingredients. Account for the age of your cooked eggs and mayonnaise; mixing them into a new bowl does not give older ingredients a new storage period.

If taking a portion for lunch, keep it cold in an insulated bag with a cold pack until you eat it. This is a chilled mayonnaise-and-egg salad, so it does not belong warm on the counter through the day.

For another way to use the homemade mayonnaise, try Classic Full GAPS Egg Salad. Chopped eggs make that a different cold lunch option when you want egg salad rather than a cauliflower side.

Frequently Asked Questions

Why Is My Salad Watery?

Drain the cauliflower thoroughly and let it cool before mixing. Drain the pickle spears too. Hot, wet florets or extra pickle brine can leave liquid underneath the dressing.

Can I Make It Ahead?

Yes. Allow time for the cauliflower to cool, then give the mixed salad its hour in the refrigerator. Keep it covered and cold until serving, using freshly prepared ingredients when planning ahead.

Can I Use Mustard Powder Instead?

This recipe uses two tablespoons of prepared spicy brown mustard. Dry powder is concentrated and does not replace the prepared condiment spoon for spoon.

How Do I Double The Recipe?

Use the card’s 2× ingredient amounts for sixteen side servings. Cook the cauliflower in batches if needed and use enough bowl space to fold it gently. Give every batch the same draining, cooling, and chilling steps.

Use a large stainless-steel pot, such as the 10-quart Le Creuset stockpot, a colander, a platter and paper towels for draining, a mixing bowl, a knife and cutting board, measuring spoons and a cup, and a spoon or spatula. Keep the hot pot on a heat-safe support after draining.

Notes

Timing: Allow about ten minutes preparation, fifteen minutes cooking, and one hour chilling, for an hour and twenty-five minutes plus cauliflower cooling time. Begin with cooked eggs and completed mayonnaise; their separate preparation is not included.
Cauliflower: Cook until the thicker stems are tender but the florets hold their shape. Drain thoroughly and cool throughout before folding into the dressing. The size of your cauliflower heads affects the amount of salad in the bowl.
Pickles: Count the displayed number of spears before dicing, not whole pickles or thin rounds. Drain first; no extra brine goes into the dressing. Choose plain dill pickles without added sugar.
Mustard and mayonnaise: Use prepared spicy brown mustard rather than dry powder and the completed avocado-oil mayonnaise. Keep the florets cool so the cold mayonnaise stays unheated.
Seasoning: The displayed salt amount is for the dressing, with an additional pinch for the boiling water. All measured paprika and parsley go into the mixture; no extra garnish is needed.
GAPS: Full GAPS after the ingredients are introduced. Dairy-free with the linked avocado-oil mayonnaise. Contains eggs, mustard, and paprika; not an early Intro or No-Plant preparation.
Storage: Keep covered and refrigerated. Use within 3–4 days when made with fresh ingredients, and account for the age of cooked eggs and mayonnaise already prepared. Keep packed portions cold with a cold pack.
Scaling: 2× doubles all nine measured amounts for sixteen side servings. Cook in batches if needed and use enough bowl space for gentle folding. Every batch needs draining, cooling, and the hour of chilling.
