This strawberry lemon smoothie is thick, cold, and sharply lemony, with enough raw honey to keep the fresh citrus from overwhelming the strawberries. Frozen berries give it a spoonable slushie texture, while homemade milk keeps it creamy without hiding the bright strawberry flavor.

The ingredient list is short, but the ratio matters. Twelve ounces of frozen strawberries need the full 1 1/4 cups homemade milk so the Ninja blades can catch and circulate the fruit. The fresh juice from one large lemon brings the tartness, and five tablespoons of raw honey balance that measured amount of citrus.

With six children, work, homeschool, and the second shift of dinner still ahead, I need a blender recipe to tell me what the finished texture looks like, not simply say to blend until done. Here, the smoothie is ready when the pitcher turns one even shade of pink, the top folds back into itself, and no strawberry pieces or air pocket remain near the blade.

Where This Smoothie Fits On GAPS

This is a Full GAPS smoothie for the point when ripe berries, fresh lemon, raw honey, and your chosen homemade milk have already been introduced and tolerated. It is not an Introduction Diet drink. The frozen raw strawberries and full fruit portion belong after the earlier food-introduction work is complete.

Use ripe organic strawberries frozen without sugar, syrup, starch, citric acid, flavoring, or any other additive. Frozen fruit is allowed when nothing has been added to it. Strawberries should already fit comfortably before you use a full 12-ounce batch.

The recipe remains dairy-free when you choose homemade coconut milk or homemade nut milk. Commercial oat milk and rice milk do not fit this route. Canned coconut milk and boxed milks with gums, oils, vitamins, flavors, or preservatives are also excluded.

Choose One Homemade Milk

Hot-Water Homemade Coconut Milk gives the smoothie a rounded, mild coconut finish and keeps the recipe nut-free. Measure 1 1/4 cups after the milk is made and chilled.

For a nut-milk version, use milk made from properly prepared nuts. Standard Fermented Nut or Seed Milk works when that prepared ingredient already fits your Full GAPS routine. Almond or macadamia milk gives a quieter background flavor than coconut.

If you use the Almond Cow, keep the recipe’s accepted milk formula and measure the finished milk after the machine has completed its integrated filtering cycle. The appliance changes the workflow, not the required preparation of the nuts or the 1 1/4-cup amount in this smoothie.

Freeze And Measure The Strawberries

Weigh 12 ounces of hulled strawberries before freezing, or weigh frozen additive-free strawberries directly. Freezing whole berries in one solid pile makes them harder for the blades to pull down, so arrange fresh berries in a single layer until firm before transferring them to a covered freezer container.

The frozen berries should smell clean and distinctly strawberry-like. Frost on the outside is normal, but a heavy block of freezer ice adds unmeasured water and thins the finished drink.

Do not thaw the berries before blending. Frozen fruit supplies the cold, thick body in this formula. Fresh berries would produce a thinner drink and would no longer match the source texture.

Measure The Lemon, Honey, And Salt

Juice one large fresh lemon and measure the result. A typical large lemon gives about three tablespoons to 1/4 cup. Use the actual juice from the fruit rather than bottled lemon juice or lemon flavoring.

Measure five level tablespoons of raw honey. That amount is part of the strawberry-to-lemon balance. The source offered maple syrup or agave, but this Full GAPS version uses raw honey only.

Add one pinch of natural sea salt. The salt should make the strawberry and lemon taste clearer without making the smoothie taste salty. Do not replace it with potassium salt or a flavored electrolyte powder.

Load The Exact Ninja BN801

Put the 12 ounces frozen strawberries into the 72-ounce pitcher of the Ninja Professional Plus Kitchen System BN801. Pour in the homemade milk, fresh lemon juice, raw honey, and sea salt.

Keep every measured ingredient in the pitcher before blending. Adding extra milk early may make the blades move faster, but it also turns the thick smoothie into a thin drink. The accepted formula already provides enough liquid for the fruit to circulate.

Lock the pitcher and lid into place. The strawberries sit above and partly within the pale milk before the motor starts. There should be no banana, greens, ice, packaged juice, or whole lemon pieces in the pitcher.

Start Low And Finish High

Begin on low speed so the liquid can move underneath the frozen fruit. Once the lower berries begin breaking down, increase to high. The sound changes from hard, irregular knocks to a steady blended hum as the fruit becomes smooth.

Watch the movement through the pitcher. At first the upper berries may sit above the liquid. The mixture is progressing when the center pulls downward and the pink smoothie rises along the sides in one continuous circulation.

Stop when the color is uniform from the base to the surface and no strawberry pieces strike the pitcher wall. The smoothie should look thick and finely speckled, not watery, foamy, or separated.

Release An Air Pocket Without Adding Liquid

If the blades spin while the upper mixture stops moving, an air pocket has formed near the blade. Stop the motor completely, remove the lid, and use a flexible silicone spatula to release the pocket and move the thick mixture downward.

Remove the spatula, relock the lid, and blend again only until the smoothie circulates evenly. Do not push a tool into the pitcher while the motor is running, and do not solve the air pocket by pouring in unmeasured milk.

The finished surface briefly holds a low mound when the motor stops. A spoon drawn through the pitcher should leave a track that slowly closes. Small strawberry seed flecks remain visible, but there should be no hard fruit pieces.

Serve The Smoothie Right Away

Divide the smoothie between two glasses as soon as blending is complete. It should pour in a thick ribbon and settle slowly rather than splash like juice. The aroma is fresh strawberry first, followed by a clean lemon note.

The first sip is deliberately tart. Raw honey rounds the lemon without removing it, and the pinch of sea salt makes both fruit flavors taste more complete. Coconut milk produces a slightly rounder finish; homemade nut milk keeps the finish more neutral.

If you want another berry drink with a different formula, try the Tropical Berry Smoothie With Pineapple And Ginger. For a banana-based lemon drink, use the separate Salted Lemonade Smoothie rather than adding banana to this card.

Turn Any Remainder Into Popsicles

If a small amount remains in the pitcher, pour it directly into a clean popsicle mold and freeze. This preserves the measured smoothie instead of diluting it or leaving it to separate in the refrigerator.

Fill the mold only to its normal line so the smoothie has room to expand. Freeze until the center is completely firm. The frozen pop will taste tart and strawberry-forward, with a denser bite than the freshly blended drink.

Label the mold Strawberry Lemon Smoothie so it stays distinct from yogurt pops, coconut creamsicles, and other frozen recipes that may share the freezer.

Storage And Make-Ahead Timing

This smoothie is best immediately after blending. The frozen-fruit texture softens as it stands, and the liquid begins to separate from the berry pulp. Reblending later adds air but does not restore the original frozen texture.

For advance preparation, measure and freeze the strawberries, make and chill the homemade milk, and keep the lemon whole until you are ready to blend. Measure the honey and salt while the berries are still in the freezer.

Freeze any finished remainder as popsicles rather than refrigerating it as a drink. Keep the pops covered so they do not collect freezer odors.

Frequently Asked Questions

Can I Use Fresh Strawberries?

Use frozen strawberries for this formula. Fresh berries remove the slushie structure and make a thinner smoothie.

Can I Use Store-Bought Almond Or Coconut Milk?

No. Use homemade coconut milk or properly prepared homemade nut milk. Boxed and canned products can contain gums, oils, vitamins, sweeteners, flavors, or other additives that do not belong in this card.

Can I Use The Almond Cow?

Yes, when the nuts or coconut and the milk formula already meet the GAPS preparation rules. Measure 1 1/4 cups of finished milk after the Almond Cow completes its filtering cycle.

Can I Replace The Raw Honey With Maple Syrup?

No. The Full GAPS version uses five tablespoons raw honey. Maple syrup and agave are source options that were removed from this adaptation.

Why Is The Lemon Amount A Range?

One large lemon naturally varies in juice yield. Measure the juice from one large fruit; it will usually be about three tablespoons to 1/4 cup.

Why Is My Smoothie Too Thin?

Check that the strawberries went into the pitcher frozen and that no extra milk was added. Use exactly 1 1/4 cups homemade milk.

Why Are Strawberry Pieces Still In The Glass?

Begin on low, increase to high after the lower fruit starts moving, and wait for one continuous circulation. If an air pocket stops that movement, release it with the motor off and blend again.

Can I Double The Recipe?

Use the WPRM 2× control for exact doubled amounts, then confirm the total volume stays below the fill limit of the 72-ounce Ninja BN801 pitcher. Never overfill the pitcher.
