Pork tenderloin with honey blueberry sauce is the kind of dinner that looks dressed up without keeping you at the stove all afternoon. The pork roasts under a savory rosemary, ginger, and garlic crust while the warm berry sauce comes together on the stovetop. Each slice stays juicy, and the sauce brings a tart-sweet finish without balsamic vinegar or maple syrup.

For our family of eight, I like meals with a clear stopping point before dinner. The sauce can be made a day ahead, and the pork needs only a short rub, roast, and rest. That makes it practical for a busy evening while still feeling more special than an ordinary weeknight roast.

Where This Pork Tenderloin Fits on GAPS

This is a Full GAPS dinner after cooked fruit and every included ingredient are introduced and tolerated. Use fresh or frozen pork, ripe fresh or frozen blueberries, raw honey, pure single-ingredient spices, and a stable cooking fat such as homemade ghee, coconut oil, or rendered animal fat.

The blueberry sauce deliberately leaves out balsamic vinegar and replaces maple syrup with raw honey. Tenderloin is lean, so spoon the citrus pan juices over the sliced meat and serve it with vegetables cooked in a generous amount of fat.

Season the Pork on Every Side

Heat the oven to 400°F and lightly grease a large glass, ceramic, or enameled cast-iron baking dish. Pierce the tenderloins all over with a sharp knife or fork, then rub one tablespoon softened ghee, coconut oil, or rendered animal fat across every surface.

Grind the dried rosemary to a powder when possible so it clings instead of falling into the pan. Mix it with sea salt, Italian herbs, ginger, and optional garlic powder. Pat the mixture over the top, sides, and underside of the pork. The coating should look even and slightly damp where it meets the fat, with no large bare patches.

Roast to 145°F, Then Rest

Set the pork in the dish, drizzle two to three tablespoons fresh lemon, lime, or orange juice over the top, and pour one-quarter cup filtered water around it. Roast for 25 to 30 minutes, checking the thickest part with an instant-read thermometer. Larger tenderloins may take longer.

Remove the pork only after the center reaches at least 145°F. The outside should be browned and crisp in spots, while the liquid in the dish looks clear and golden. Spoon those juices over the meat and rest it in the dish for 5 to 10 minutes. Resting keeps the juices in the tenderloin when you slice it.

Make the Honey Blueberry Sauce

While the pork roasts, melt one tablespoon coconut oil with two tablespoons ghee or rendered animal fat in a large stainless-steel sauté pan. Cook the shallots or fresh ginger with optional garlic and minced rosemary for about two minutes, just until fragrant and softened.

Add the blueberries, raw honey, ground ginger, and sea salt. Simmer about five minutes. The berries should soften and begin to burst, and a spoon drawn through the pan should leave a path that closes slowly. Honey reduces faster than maple syrup, so keep the heat moderate and stop before the sauce turns sticky. Stir in the remaining tablespoon coconut oil and cook two to three minutes more. The sauce thickens as it cools.

Slice and Serve

Cut the rested tenderloin into three-quarter-inch slices. Spoon warm blueberry sauce onto the platter first and fan the pork over it, or spoon the sauce over the slices at the table. Herb-Roasted Crispy Cauliflower makes a practical Full GAPS side because its savory herbs echo the pork without competing with the berries.

Storage and Make-Ahead Notes

  • Refrigerator: Store the pork and sauce separately in covered glass containers for up to three days.
  • Reheat the pork: Warm gently at 300°F for about 10 minutes with a spoonful of its pan juices.
  • Reheat the sauce: Warm over medium-low heat, stirring occasionally.
  • Make ahead: Prepare the blueberry sauce one day ahead, cool it promptly, and refrigerate. If you still have berries to use, Raw-Honey Blueberry Gelatin Jam turns them into a separate spoonable spread.

Use a large glass, ceramic, or enameled cast-iron baking dish, sharp stainless-steel knife or fork, spice grinder, small bowl, instant-read thermometer, large stainless-steel sauté pan, silicone or wood spoon, measuring cups and spoons, and covered glass storage containers. The photographs use the Le Creuset Heritage 4-quart Rectangular Dish in Artichaut for the roast.

Frequently Asked Questions

How Do I Know the Pork Is Done?

Insert an instant-read thermometer into the thickest part. Remove the pork only after it reaches at least 145°F, then rest it at least three minutes before slicing. A 5- to 10-minute rest works well for this recipe.

Can I Use Frozen Blueberries?

Yes. Slightly thaw two cups so they heat evenly and do not cool the pan too sharply.

Can I Use Ginger Instead of Shallots?

Yes. Replace the quarter-cup minced shallots with two tablespoons minced fresh ginger. You may also use both when each is tolerated.

Why Is There No Balsamic Vinegar?

Balsamic vinegar is not used on GAPS, so this sauce builds its balance from blueberries, raw honey, herbs, ginger, and sea salt.

Can I Double the Recipe?

Yes. Use the card’s 2× control, divide the pork between dishes if needed, and avoid crowding the sauté pan while the sauce reduces.
