This Ninja Foodi chicken zucchini bisque turns one pressure-cooker batch into a full Full GAPS meal. Bone-in, skin-on chicken thighs make the stock. Peeled zucchini cooks in that liquid, fresh ginger goes into the blender, and the tender chicken returns to the finished soup.

This is a separate recipe from the stovetop Zucchini Ginger Bisque. That recipe starts with already-made meat stock and ghee. This one makes fresh chicken stock inside the Ninja Foodi and uses the cooked chicken in the bowl, so the ingredients, equipment, timing, and finished texture are different.

The useful part is getting a real chicken-stock method instead of calling any short pressure-cooker liquid “meat stock.” Four raw, meaty thighs cook for the full poultry-stock pressure time. The zucchini becomes completely soft, which is exactly what you want before blending.

Why This Version Uses Bone-In Chicken Thighs

The source idea uses four boneless, skinless thighs. For a GAPS meat-stock base, use four bone-in, skin-on thighs instead. The bones, skin, joint tissue, and meat give the water more than plain chicken flavor. They also leave you with tender chicken to return to the soup.

Do not start with cooked chicken or a leftover bare carcass. This recipe begins with raw meaty pieces. Place the thighs in the stainless inner pot with three cups filtered water and the measured sea salt, then add the peeled zucchini.

Use thighs that fit in one layer without forcing them above the safe fill line. Four average bone-in thighs fit comfortably in the eight-quart FD401 insert with this amount of zucchini and water.

The Forty-Minute Poultry Stock Time Matters

Rachael Mamane’s Mastering Stocks and Broths controls the stock technique used here. Her pressure-cooker method gives poultry stock 40 minutes at full pressure, followed by complete depressurization before the lid opens.

That replaces the source recipe’s shorter 15-minute cycle. Fifteen minutes can cook boneless thighs, but this recipe is also making the liquid used as its meat-stock base. Use 40 minutes on High Pressure and let the Ninja Foodi release pressure naturally.

The GAPS rules still control what goes into the pot and how the stock is used. Start with raw meaty chicken that includes skin and bone. Keep this meat stock separate from long-cooked bone broth, which belongs later in the protocol.

Load The Ninja Foodi In The Right Order

Put four bone-in, skin-on chicken thighs into the stainless eight-quart inner pot. Add three cups filtered water and one tablespoon plus one teaspoon natural sea salt.

Peel two pounds of zucchini and cut it into large, even chunks. Lay the zucchini over and around the chicken. The pieces may float. They do not need to stay submerged because the sealed cooker will fill with steam and the zucchini will release more liquid as it softens.

The pot should remain comfortably below the maximum fill line. Check that the inner-pot rim is clean, lower the hinged crisping lid out of the way only as the model requires, install the separate pressure lid, and turn the pressure-release valve to Seal.

Before the lid goes on, you should see four distinct skin-on thighs and pale peeled zucchini in clear salted water. There should be no commercial broth, bouillon, oil, or seasoning packet in the insert.

Pressure Cook And Let The Cooker Depressurize

Select Pressure, choose High, and set the time to 40 minutes. The display begins counting only after the cooker reaches pressure.

When the cycle ends, leave the valve alone and allow the pressure to fall naturally. Wait until the float valve drops and the unit is fully depressurized. Then remove the pressure lid according to the FD401 instructions, opening it away from you.

The zucchini should collapse under very light spoon pressure. The chicken should pull away from the bone easily. The liquid will be cloudy-gold from chicken juices and zucchini, with rendered fat at the surface.

Measure The Stock And Keep The Extra

Lift the chicken thighs to a cutting board or shallow dish and let them cool enough to handle. Measure exactly two cups of the hot chicken stock for the bisque. Pour any extra stock into a heat-safe glass container for another meal.

Do not discard the extra liquid simply because the soup card needs only two cups. It can be refrigerated, frozen, warmed to drink, or used in another Full GAPS soup. Label it as the stock from this chicken-thigh batch so you know what it contains.

Keep the cooked zucchini in the insert while you measure. It will be very soft and may already look partly mashed. That is expected after the longer pressure cycle.

Blend The Peeled Zucchini And Ginger

Put all of the cooked zucchini into the 72-ounce pitcher of the Ninja BN801. Add three tablespoons freshly grated ginger and one cup of the measured chicken stock. Secure the lid, pulse briefly, and stop when the mixture becomes a thick coarse purée.

Pour about half of that purée back into the clean Ninja Foodi insert. Add the second cup of measured stock to the blender pitcher and blend the remaining purée until smooth.

The smooth half should be pale ivory-green because the zucchini was peeled. It should pour slowly and leave a coating on the pitcher wall. A few tiny ginger or zucchini flecks are normal, but there should not be large chunks or a separate watery layer.

Pour the smooth purée into the insert with the coarse half and stir. This gives the bisque body without making every spoonful perfectly uniform.

Return The Chicken And Reheat

Pull the cooked chicken meat and softened usable tissue from the bones. Discard the hard bones. Chop or tear the chicken into bite-size pieces and stir it into the bisque.

Use Keep Warm when you have time to let the soup heat gradually. For faster serving, use Sear/Sauté on Low and stir often for 5 to 10 minutes. Stop as soon as the soup is steaming. Do not leave the thick purée unattended against the hot bottom of the insert.

The finished bowl should be thick enough to support the chicken pieces without looking dry. It will have more texture and protein than the separate stovetop bisque.

Where This Fits On GAPS

This recipe belongs on Full GAPS. It uses raw-meaty chicken, fresh homemade meat stock, well-cooked zucchini, fresh ginger, and natural sea salt. It does not use grain, starch, cream, vegetable broth, bouillon, or commercial seasoning.

It is not an Introduction Diet card. Keep it with your Full GAPS soups after the ingredients and concentrated ginger amount fit your current menu.

The pressure-cooker technique does not change the meat-stock-versus-bone-broth rule. This is fresh chicken meat stock made from raw meaty pieces. It is not a long-cooked bare-bone broth.

Serving Ideas

Serve this as a complete lunch or a light dinner. Each bowl already contains chicken, vegetable, stock, and the natural fat released from the thighs.

If cultured dairy is in place for you, a small spoonful of homemade cultured sour cream may be added at the table. The recipe does not need it for thickness.

For a smaller first course, serve half portions and save the remaining chicken-rich soup for lunch the next day. The ginger stays clear after reheating, so no extra seasoning blend is needed.

Storage And Reheating

Cool the soup and refrigerate it in covered glass containers for up to five days. Keep any reserved stock in its own labeled container.

The bisque firms as it chills. Reheat it in a stainless saucepan or in the clean Foodi insert on Low Sear/Sauté, stirring across the bottom until steaming. Do not judge its final consistency while it is still cold.

Freeze individual portions for up to three months in freezer-suitable glass with room for expansion. Thaw overnight in the refrigerator before reheating.

The FD401 is the owner-used cooker for this recipe. Match the controls and lid setup to that model instead of assuming every pressure cooker uses the same sequence.

Frequently Asked Questions

Why Does The Recipe Pressure Cook For Forty Minutes?

The liquid is being made as poultry stock, not only used to cook boneless chicken. Mamane’s pressure-cooker poultry-stock method uses 40 minutes at pressure.

Can I Use Boneless Skinless Chicken Thighs?

Use bone-in, skin-on thighs for this GAPS stock-and-soup version. Their raw meaty bones, skin, and connective tissue belong in the stock step.

Why Is The Zucchini Peeled?

Peeled zucchini gives this pressure-cooker version a paler, smoother purée and keeps it visually distinct from the greener stovetop bisque.

Can I Leave The Chicken Out Of The Final Soup?

The primary recipe returns all cooked chicken to the bisque. If you serve the chicken separately, the blended base remains usable, but that is a serving choice rather than the card’s finished bowl.

Can I Quick Release The Pressure?

Use a complete natural release for the stock technique in this recipe. Open only after the FD401 is fully depressurized and the float valve has dropped.

Can I Use An Instant Pot?

This card is written and photographed for Ebonie’s Ninja Foodi FD401. Another cooker may have different controls, lid behavior, fill markings, and heating patterns.
