These blueberry coconut gummies turn fresh blueberries, homemade coconut milk and a little honey into firm, bite-size fruit snacks. They have a creamy purple color, a gentle coconut flavor and tiny flecks from the blended berries. You warm the gelatin mixture on the stove, pour it into trays and let the refrigerator do the setting.

This is a Full GAPS recipe for when berries and homemade coconut milk are already part of your meals. The coconut milk gives the bites their creamy look without adding yogurt or cream. They stay refrigerated between servings, so plan the chilling time before you decide when to make them.

Our whole family started the GAPS Introduction Diet in July 2024. We spent about three months moving through the stages, usually one to three weeks at each stage. That experience is why I want the stage to be clear beside the recipe. A homemade fruit snack can belong on Full GAPS without being an Intro snack.

I work second shift and homeschool before work, with six children in our household. A short stretch at the stove is useful, but I still have to account for what happens afterward. Here, that means finding a level spot in the refrigerator and giving the bites their full two hours to set. That little bit of planning makes the recipe easier to fit around the rest of the day.

Blueberry coconut gummies for Full GAPS with small berry skin flecks on a cream serving plate

Firm Blueberry Bites With Coconut Milk

The blueberries are blended into the coconut milk before they go into the saucepan. You keep the whole measured cup of fruit in the mixture rather than straining out the skins. Small dark berry flecks are expected. There are no whole berries tucked inside the finished gummies.

Gelatin gives the cooled bites enough structure to hold their shape after you remove them from the tray. While warm, the mixture is still a pourable liquid. After chilling, a bite should feel firm and springy, with a moist surface and a creamy center. It should come out as a little piece rather than run back into the empty compartment.

The two tablespoons of honey lightly sweeten the batch. The berries and coconut still supply much of its flavor. There is no extra sugar coating, vanilla or fruit garnish to add before serving.

What You Need

  • Filtered water: Measure one cup for dissolving the gelatin. This water belongs in the recipe along with the coconut milk.
  • Plain beef gelatin: Use four tablespoons of unflavored, additive-free grass-fed beef gelatin powder. Choose gelatin that sets, rather than collagen peptides.
  • Homemade coconut milk: Measure one cup of creamy homemade coconut milk. Stir its cream back into the milk before measuring. Use the whole milk, rather than pouring off only a thin watery layer.
  • Fresh blueberries: Rinse and measure one cup. Blend them with the coconut milk until there are no whole berries left.
  • Raw honey: Measure two tablespoons and stir it into the warm mixture.
  • Coconut oil for the trays: Use a thin coating of natural, nonhydrogenated coconut oil as needed to grease the compartments.

If you are making the coconut milk first, allow time for its own blending and straining. That is a separate preparation. The gummy recipe starts with a measured cup of finished milk. Stirring the milk before measuring helps distribute its coconut cream through the batch.

Where This Recipe Fits On GAPS

Use these gummies on Full GAPS after blueberries and homemade coconut milk have been introduced. Dr. Natasha’s 2020 food guidance includes edible berries and homemade coconut milk. Her berry introduction starts with cooked berries before moving to raw berries.

This recipe blends fresh berries and warms them briefly in the gelatin mixture. It is not a replacement for that earlier cooked-berry introduction. Make it as a Full GAPS fruit snack once berries are part of your meals.

There are no eggs or dairy ingredients in this formula. Coconut oil greases the tray, so you do not need butter or ghee for that job. For a More-Plant GAPS menu, these can be a small fruit snack alongside the meals you are already making. The gelatin is animal-derived.

The Full GAPS food and meal guide gives you more help putting individual recipes into the rest of the day. A few fruit bites are one small part of that menu.

The Blender And Trays

I use my Ninja BN801 when a recipe calls for a blender. Here it blends the coconut milk and blueberries. The saucepan handles the water and gelatin, so the blender mixture stays separate until the fruit is blended. There is no need to blend the hot saucepan contents.

My Almond Cow is useful for making nut milks, but its filtering method does a different job. This recipe keeps the blended blueberries in the milk. Use the Ninja for that step rather than running the fruit mixture through the Almond Cow filter.

Have uncoated stainless-steel ice-cube trays ready before heating the mixture. Grease the compartments lightly with coconut oil. Use enough trays to hold the batch without filling each cavity over its rim. The cavity size determines the size and number of finished bites.

A small saucepan, measuring cup and spoons, a sturdy stirring spoon and a heat-safe trivet complete the setup. The Le Creuset Signature Round Saucepan in Artichaut shown here has a 1¾-quart capacity. When it comes off the stove, put it on the trivet before portioning.

How To Make Blueberry Coconut Gummies

Warm The Water And Gelatin

Mix the measured water with the gelatin and put it into the saucepan. Warm over medium heat for five minutes, stirring so the gelatin dissolves through the water. Scrape the sides and bottom as you stir. Dry pockets or grains that stay separate need more stirring before you add the fruit mixture.

Blend The Coconut Milk And Blueberries

Blend the one cup of coconut milk with the one cup of blueberries. The white milk will turn purple as the berries break down. Keep blending until there are no whole berries left. Little skin flecks can remain; they are part of the fruit in this recipe.

Do not strain this mixture. Straining would remove part of the measured fruit and give you a different mixture to set.

Stir In The Blueberry Milk And Honey

Add the blended blueberry milk to the saucepan. Stir in the two tablespoons of honey for one minute, then remove the pan from the heat. Look for a uniform purple mixture without separate white coconut milk streaks or undissolved gelatin pockets. Small surface bubbles from blending are normal.

Fill The Trays

Set the greased trays flat on the counter. Portion the warm mixture into the cavities, leaving it below the rims so the compartments remain separate. A spouted glass measuring cup can help if pouring from the saucepan feels awkward. Work steadily while the mixture is still fluid.

Wipe a large spill off the outside of the tray before carrying it to the refrigerator. Keep the tray level so the liquid stays in its compartments.

Chill Until The Bites Hold Their Shape

Refrigerate for two hours, then check the set. The surface should hold still when you gently move the tray. Loosen one bite to see whether it comes out as a firm piece. If the mixture is still soft or slumping, leave it refrigerated longer.

Once set, loosen a removable tray grid gently and ease the bites out. Serve a small portion cold and put the rest into a covered container in the refrigerator.

Make Room For The Chilling Time

Allow about five minutes for measuring and preparing the trays, six minutes at the stove and at least two hours in the refrigerator. The coconut milk’s own preparation is extra. Filling and releasing time also varies with the trays you use.

Clear the refrigerator space before you start. A flat tray is easy to fill on the counter, but it needs a flat shelf while the mixture sets. Have a covered glass container ready for the finished bites so the empty trays can go back to their usual job.

Our upcoming Snack Prep Planner includes a weekly snack plan and batch-day checklist. If keeping the preparation and storage jobs together would help, you can browse the WFLI kitchen planners and guides.

Serving And Storage

Keep the gummies refrigerated in a covered glass container between servings. Take out the amount you want to serve and return the rest to the refrigerator. These are homemade refrigerated fruit snacks, not shelf-stable sweets to keep in a jar on the counter.

The finished bites are firmer than a spooned fruit jelly. Serve them in small portions beside your other Full GAPS foods. Their rectangular shape comes from the tray, so a different cavity shape will give you a different-looking bite.

Questions About These Gummies

Can I Use Collagen Peptides?

Use setting gelatin for this recipe. Collagen peptides dissolve into liquids without giving you the same chilled gel. The ingredient’s job here is to turn the blueberry mixture into pieces you can take out of the tray.

Why Are There Little Dark Specks?

The blueberries are blended without straining, so tiny pieces of skin remain. They are expected in this recipe. There is no vanilla in the mixture.

How Many Bites Does One Batch Make?

The number depends on your trays. Small compartments give you more bites than large ones. The recipe card shows one batch so you can keep the full ingredient amounts together without promising a fixed piece count.

Can I Double It?

Yes. Double each measured ingredient and have enough greased trays and refrigerator space ready. Use a saucepan with room to stir the larger batch. The recipe card’s 2× control doubles the water, gelatin, coconut milk, blueberries and honey.

Notes

Full GAPS after blueberries and homemade coconut milk have been introduced.
Use homemade coconut milk with its cream stirred in and plain setting gelatin. The blueberries remain in the mixture after blending. Coconut oil greases the trays, so this recipe has no dairy or eggs.
Yield: one batch. The number of bites depends on tray cavity size. Allow about five minutes for preparation, five minutes to warm the water and gelatin, one minute to stir in the honey and two hours to chill. Homemade coconut-milk preparation is extra. Chill longer if needed until the bites hold their shape.
Use uncoated stainless-steel trays lightly greased with natural coconut oil. For doubling, use a suitably sized saucepan, enough trays and refrigerator space. Keep the finished gummies covered and refrigerated between servings.
