No-Steam Cauliflower Pizza Crust skips the two steps that make many cauliflower crusts feel like a project: cooking the cauliflower first and wringing out hot moisture. This version begins with five packed cups of raw shredded cauliflower, adds four eggs, presses firmly, and bakes on both sides until the crust lifts as one piece.

Optional Swiss chard and asparagus add green color and vegetable flavor without changing the binding method. You can include both measured additions or keep the crust to cauliflower, eggs, and seasoning. Cheese, sauce, and pizza toppings remain separate from the crust formula.

In a busy family kitchen, removing the steam-and-squeeze step matters. The work shifts to three cues that are easier to repeat: pack the cauliflower into the measuring cup, coat every shred with egg, and press each round firmly enough that no thin gaps or loose edges remain.

Where This Pizza Crust Fits On GAPS

This crust fits Full GAPS. It is not an Introduction Diet recipe. The measured formula uses raw cauliflower, eggs, optional chard, optional asparagus, black pepper, pure granulated garlic, mineral salt, and a qualifying fat for the parchment.

No cheese is mixed into this crust. That makes it different from the existing cauliflower-and-cheddar crust. It is also different from the Dairy-Free Cauliflower Pizza Crust, which uses a separate formula and method.

Choose homemade ghee, qualifying butter, or fat from properly prepared additive-free uncured bacon for greasing. Homemade Stovetop Ghee is the linked option when ghee fits your routine.

Measure Five Packed Cups Of Raw Cauliflower

Remove the outer leaves from one cauliflower head and wash it. The source head weighed two pounds three ounces with the leaves and one pound two ounces after the leaves were removed. The usable cauliflower produced five shredded and firmly packed cups.

Shred the cauliflower raw with a manual box grater. Aim for short, fine shreds rather than large florets or a wet puree. Pack the shreds firmly into the measuring cup so the five-cup amount is repeatable.

Do not steam the cauliflower. Do not microwave it. Do not put it into a towel and squeeze it. The four eggs and long two-sided bake are designed around raw cauliflower moisture.

Prepare The Optional Chard And Asparagus

For the full measured vegetable version, remove the stems from four ounces Swiss chard or a similar leafy green and cut the leaves into small pieces. Large stem pieces stay firm and interrupt the crust.

Cut two ounces asparagus tips into one-half-inch pieces. Keep the pieces small enough to press into the cauliflower round without creating raised spots.

Both vegetables are optional. Omitting them leaves the same four-egg cauliflower binding method. Do not replace their measured weight with an unmeasured pile of another moist vegetable.

Whisk The Eggs And Seasoning Separately

Crack four large eggs into a small glass or stainless-steel bowl. Whisk until the whites and yolks are completely combined and no clear strands remain.

Whisk in one-quarter teaspoon black pepper, one-quarter teaspoon pure granulated garlic, and one-half teaspoon mineral salt. Use granulated garlic without starch, sugar, anticaking agents, or flavoring.

Seasoning the eggs first spreads the small measurements through the full batch. Pouring each seasoning directly over five cups of cauliflower can leave one salty or garlicky patch.

Mix Until Every Shred Is Moistened

Put the raw shredded cauliflower and optional vegetables into a large mixing bowl. Pour the seasoned eggs over them.

Fold and turn the mixture until every shred looks damp and lightly glossy. Scrape the bottom of the bowl as you work. There should be no puddle of loose egg hiding underneath and no dry white cauliflower at the top.

The mixture will remain loose before pressing. It does not become dough, and it should not form a ball in the bowl. The structure develops only after firm pressing and baking.

Use Fresh Parchment For Every Crust

Line two uncoated stainless-steel pizza pans with separate fresh sheets of unbleached parchment. Lightly grease each sheet with the chosen fat.

Do not reuse parchment from the first crust or first side. Cauliflower moisture softens the paper, and a second use makes sticking more likely.

If you have one pizza pan, work with one half of the mixture at a time and prepare another fresh sheet before the second crust. Keep the waiting half covered in the mixing bowl.

Press Two Firm Even Rounds

Divide the mixture into two equal portions. Place one portion in the center of each prepared pan.

Press from the center toward the edge until each portion becomes a flat round. Compress the shreds firmly so they touch throughout. Close every thin gap and tuck loose edge pieces back into the circle.

Keep the thickness even from center to edge. A thick center stays damp after the rim is done; a thin rim darkens and cracks before the center can set.

Bake The First Side For Thirty Minutes

Bake at 350°F for thirty minutes. The top should lose its wet shine, the edge should begin turning golden, and the round should feel set when the pan moves.

Do not add sauce or toppings yet. The crust needs a dry, firm second side before it carries additional moisture.

Flip And Bake The Second Side

Place a second parchment-lined pizza pan over the crust and invert the two pans together. Lift away the first pan and peel off the damp used parchment.

Return the crust to the oven on fresh parchment and bake for twenty-five to thirty minutes more. The second side should become dry and lightly golden.

The crust is ready when it lifts as one piece without cracking and the center no longer feels wet or fragile. Repeat the same two-sided bake with the second half if the pans do not fit in the oven together.

Cool Before Adding Toppings

Let the baked crust rest briefly so steam can escape and the eggs can finish setting the cauliflower shreds. Move it only when the round feels firm from edge to center.

Add separately prepared Full GAPS toppings after the plain crust passes the lift test. Topping amounts, sauce, and cheese are not part of this measured crust formula.

Cool leftover plain crust completely and refrigerate it in a covered glass container with parchment between layers. Reheat on fresh parchment until the surface is dry again.

Frequently Asked Questions

Do I Need To Steam Or Squeeze The Cauliflower?

No. Measure the cauliflower raw, shredded, and packed. The four eggs and two-sided bake are the defining no-steam route.

Can I Omit The Chard And Asparagus?

Yes. Both are measured optional ingredients. The crust works with the five cups cauliflower, four eggs, and seasoning.

Can I Reuse The Parchment?

Use fresh parchment. The first sheet absorbs moisture and becomes more likely to stick during another bake.

Why Did My Crust Break?

The round may not have been pressed firmly, the thickness may have been uneven, or the second side may need more oven time. Use the one-piece lift cue rather than the clock alone.

Can I Mix Cheese Into The Crust?

Not in this formula. The existing cheese-based cauliflower crust is a separate recipe. This card preserves the raw cauliflower and four-egg version without cheese.

Can I Double The Recipe?

Use the WPRM 2× control for doubled amounts. Prepare four fresh parchment-lined pans or bake in rounds. Do not pile a doubled batch into two extra-thick crusts.
