Chicken thighs bake under garlic mushrooms, salt-only bacon and Parmesan for a rich Full GAPS dinner with eight pieces of chicken. The sauce uses homemade 24-hour yogurt in place of heavy cream. Stir the yogurt in after the final oven bake so it warms into the sauce without bubbling.

I usually handle dinner before I leave for second shift, so I look for meals where the oven can finish the main work while I prepare the sides. This one takes a skillet and a baking dish, but the jobs are clear: sear the chicken, make the mushroom topping, and let the casserole finish in the oven. The eight-thigh count also makes it easy to plan portions before you start.

Full GAPS Ingredients

This is a Full GAPS chicken recipe with homemade yogurt and aged Parmesan. Use the 24-hour GAPS yogurt method for the one-cup sauce ingredient. The dairy ingredients belong after they have been introduced in your GAPS dairy sequence; the dairy introduction guide lays out the order.

For the cheese, use raw or properly cultured aged Parmesan with no non-GAPS additives, then grate it yourself. Use homemade unsalted butter to sear the chicken. Ordinary grocery bacon is not the form used here. The recipe uses homemade salt-only bacon, already prepared and ready to cook.

Baby portabello mushrooms bring a deeper savory flavor than white mushrooms. As they soften in the bacon fat, their edges darken and their moisture cooks away. Garlic should smell fragrant and look pale gold, not dark brown. Those two cues build the sauce’s flavor without letting the garlic turn bitter.

Use a wide skillet for browning the thighs in batches and a shallow oven-safe dish to hold all eight pieces. The Le Creuset Signature 10.25-inch Skillet in Artichaut is the larger skillet choice. The Le Creuset Heritage 4-quart Rectangular Dish in Artichaut has a 12.7 by 9.4-inch interior, close in area to a standard 9-by-13-inch baking dish.

Have a slotted spoon, chef’s knife, cutting board and instant-read thermometer ready. The thermometer checks chicken doneness; the color of the meat alone is not the final safety check. Avoid nonstick cookware in this GAPS kitchen.

How to Make Garlic Mushroom Chicken

  1. Heat the oven and skillet. Preheat the oven to 400°F. Pat the chicken thighs dry. Heat the homemade butter in the skillet over medium-high heat. When it is melted and foaming, add the thighs skin-side down. Work in batches so they sit in one layer.
  2. Sear the chicken. Cook each side for 3 to 4 minutes, until the skin turns pale gold and releases from the pan without tearing. Lower the heat if the butter or browned bits turn dark. The chicken does not need to cook through in the skillet.
  3. Bake until safely cooked. Arrange the thighs skin-side up in the rectangular baking dish. Bake boneless thighs for about 20 minutes or bone-in thighs for about 30 minutes. Check the thickest part with a food thermometer, avoiding the bone. Chicken is ready at 165°F. If it has not reached that temperature, return it to the oven and check again.
  4. Cook the garlic and bacon. While the chicken bakes, use the same skillet and its butter and chicken drippings. Add the crushed garlic and stir for 1 to 2 minutes, until fragrant and only beginning to color. Add the chopped salt-only bacon. Cook, stirring every minute or two, until the edges are crisp but the pieces still bend slightly. Lift the bacon out with a slotted spoon and set it aside.
  5. Soften the mushrooms. Add the sliced baby portabello mushrooms to the bacon fat. Cook until they soften, release their liquid, and the liquid mostly cooks away. They should look glossy and tender, not watery. If the chicken is not ready yet, take the skillet off the heat while you wait.
  6. Top and finish the chicken. Spoon the mushrooms over the chicken. Add the Parmesan, parsley and reserved bacon. Return the dish to the oven for 10 minutes, until the cheese melts and the topping is hot.
  7. Fold in the yogurt off heat. Remove the dish from the oven. Stir a spoonful of the warm mushroom mixture into the 24-hour yogurt, then fold that yogurt through the sauce around the chicken. Stir gently until creamy. Do not return the yogurt sauce to a boil.

The sauce should cling to the mushrooms and chicken. The yogurt adds a mild tang that cuts through the bacon and Parmesan. If it looks slightly separated, stir slowly off heat; do not try to fix it by boiling. The bacon pieces should still have a little bite after their final 10 minutes in the oven.

Serving and Storage

Serve one thigh with a spoonful of the mushroom, bacon and yogurt sauce. Garlic Grilled Green Beans for Full GAPS are a useful vegetable side for this rich main dish. Add the yogurt sauce after baking and serve while it is warm and creamy.

Refrigerate leftovers within two hours in a covered container. Use them within three to four days. Reheat the chicken and topping until hot, then add a spoonful of the reserved 24-hour yogurt if you want to refresh the sauce. USDA’s safe-temperature chart lists 165°F for all poultry and leftovers.

Frequently Asked Questions

Can I use bone-in thighs?

Yes. The recipe gives about 20 minutes for boneless thighs and 30 minutes for bone-in thighs before the final 10-minute sauce bake. Use the thermometer at the thickest part, away from bone, and continue baking until it reaches 165°F.

Why add the yogurt after baking?

The homemade yogurt replaces ordinary cream in this Full GAPS version. Stir it into the warm sauce off heat, after the Parmesan and bacon have baked with the chicken. The sauce stays creamy without boiling the cultured yogurt.

What kind of bacon and Parmesan fit this recipe?

Use the linked salt-only homemade bacon, not bacon with sugar, curing agents or other additives. For Parmesan, choose a raw or properly cultured aged cheese and grate it fresh. If you are still working through dairy introduction, follow the dairy sequence before using the yogurt or cheese.

Can I make the chicken ahead?

You can prepare the casserole before dinner and bake it when you are ready to serve. Keep the yogurt separate, then fold it into the hot mushroom sauce after the final oven step. If you prep the chicken, bacon and mushrooms ahead, cover and refrigerate them; use the storage timing above for any cooked leftovers.
