Thick Pumpkin Coconut Eggnog for Full GAPS

A cold, thick and dairy-free Full GAPS pumpkin coconut eggnog with a whole egg, homemade milk and vanilla, raw honey to taste and fresh nutmeg.
Blend Time 2 minutes
Servings: 2 small glasses
Course: Beverage, Full GAPS, Holiday Drink
Cuisine: American

Ingredients

  • 3/4 cup homemade coconut milk additive-free
  • 1/2 cup homemade cooked pumpkin purée from fresh pumpkin; or the same amount cooked butternut/winter squash
  • 1 large fresh whole egg yolk and white
  • 1 teaspoon homemade GAPS vanilla extract no added sugar or non-GAPS additives
  • mineral salt one pinch
  • 2 tablespoons raw honey up to this amount; add to taste
  • freshly grated nutmeg small amount over the finished glass

Equipment

  • 1 Measuring cups and spoons for milk, cooked purée and vanilla
  • 1 Ninja BN801 72-ounce pitcher for blending the small batch
  • 1 Fine nutmeg grater for fresh garnish
  • 2 Small serving glasses or one larger ordinary glass

Method

  1. Measure 1/2 cup of fully cooked smooth pumpkin purée. The purée should hold a soft spoon track without a pool of cooking water. Cooked butternut or winter squash may be used at the same measured amount.

  2. Add 3/4 cup homemade coconut milk, the cooked squash, 1 large fresh whole egg, 1 teaspoon homemade GAPS vanilla and a pinch of mineral salt to the blender. Blend for 1-2 minutes until smooth, pumpkin-gold, thick and pourable, with no squash lumps, separate coconut milk or clear egg-white streaks.

  3. Taste the drink and add raw honey little by little only if needed, using no more than 2 tablespoons for the batch. Blend briefly, pour into two small glasses or one larger glass, and grate a little fresh nutmeg over the top. Serve cold.

Notes

Full GAPS: Use homemade additive-free coconut milk and homemade GAPS vanilla; no maple syrup.
Squash choice: The measured half cup may be cooked pumpkin, butternut or winter squash. Taste before adding up to two tablespoons honey.
Eggnog: The whole fresh egg, yolk and white, is part of this cold blender recipe.
Blend time: Blend for 1-2 minutes before sweetening. The card shows the two-minute end of that range.
