Soft Cinnamon Almond Butter Cookies for Full GAPS

A small batch of eight soft cinnamon almond-butter cookies sweetened with raw honey and made without leavener.
Prep Time 15 minutes
Cook Time 7 minutes
Cooling Time 5 minutes
Total Time 27 minutes
Servings: 8 cookies
Course: Dessert, Snack
Cuisine: American, GAPS

Ingredients

  • 1 egg
  • 1 cup almond flour made from properly prepared and fully dried almonds; do not pack
  • 1 teaspoon homemade vanilla extract no added sugar or non-GAPS additives
  • 2 tablespoons homemade almond butter made from properly prepared and fully dried almonds
  • 2 tablespoons coconut oil softened, plus a little more for greasing
  • 1/8 teaspoon sea salt
  • 2 tablespoons raw honey
  • 1 teaspoon ground cinnamon

Equipment

  • 1 Medium mixing bowl
  • 1 Whisk
  • 1 Sturdy spoon
  • 1 Tablespoon measure for eight even portions
  • 1 Uncoated stainless-steel baking sheet lightly greased with coconut oil
  • 1 Fork lightly greased for flattening
  • 1 Thin spatula and cooling rack or plate

Method

  1. Heat the oven to 350°F. Lightly grease an uncoated stainless-steel baking sheet with a thin film of coconut oil.
  2. Whisk the egg until the white and yolk are completely combined. Add the almond flour, homemade vanilla, almond butter, coconut oil, sea salt, raw honey, and cinnamon. Stir until no dry flour or egg streaks remain and the tan, cinnamon-flecked dough is soft and sticky enough to cling to the spoon.

  3. Drop the dough onto the prepared sheet in 8 level tablespoon portions, leaving space between them.
  4. Lightly grease the back of a spoon or the tines of a fork with coconut oil. Flatten each portion into a small even round and add light fork marks. The dough will barely spread in the oven, so shape the cookies to their finished thickness now.

  5. Bake for 7 minutes. The lower edge should show a thin golden-brown line and the top should look set instead of wet, while the center remains soft.
  6. Leave the cookies on the baking sheet for 5 minutes to firm, then move them carefully to a cooling rack or plate. Cool until they hold together while remaining tender in the center.

Notes

Full GAPS: Use after eggs, properly prepared almonds, almond flour, almond butter, coconut oil, raw honey, cinnamon, and homemade vanilla are established. This is not an Introduction Diet recipe.
No leavener: The portions barely spread or rise. Flatten all eight cookies before baking.
Texture: These are soft cookies. Remove them when the bottom edge is lightly browned and let them firm on the sheet for 5 minutes.
Scaling: For 2×, use two baking sheets or bake in two batches so all portions remain evenly spaced.
