Coconut Peanut Butter Balls for Full GAPS

Five no-bake coconut peanut butter balls made with homemade coconut butter, fermented peanut butter, shredded coconut, raw honey, and sea salt.
Prep Time 10 minutes
Total Time 10 minutes
Servings: 5 balls
Course: Dessert, Snack
Cuisine: American, GAPS

Ingredients

Equipment

  • 1 Medium ceramic or glass mixing bowl
  • 1 Sturdy spoon
  • 1 Tablespoon and teaspoon measures
  • 1 Shallow coating plate optional, for extra shredded coconut
  • 1 Serving plate or covered glass storage container

Method

  1. Measure the homemade coconut butter, fermented peanut butter, 4 tablespoons shredded coconut, raw honey, and finely ground sea salt into a mixing bowl.
  2. Stir and scrape the bowl until no separate coconut-butter or peanut-butter streaks remain. The tan paste should show white coconut shreds, mound on the spoon, and hold a groove instead of pouring.

  3. Divide the mixture with a tablespoon measure into exactly 5 portions. Compress each portion and roll into a slightly irregular ball.
  4. If desired, roll each ball lightly in additional shredded coconut and press the shreds where needed. Place all 5 on a serving plate.

  5. Serve immediately for a soft texture, or refrigerate until the coconut butter firms to your preferred texture.

Notes

Full GAPS: Use after properly prepared peanuts, fermented peanut butter, coconut, homemade coconut butter, raw honey, and sea salt are established. This is not an Introduction Diet recipe.
Coconut coating: The extra shredded coconut is optional. Keep the measured 4 tablespoons in the mixture.
Texture: Serve immediately for a softer center or refrigerate until firmer; there is no required chill time.
Scaling: The 2× control doubles every measured ingredient and yields 10 balls. Use the same tablespoon portion size.
