Servings: 12 bars

Cuisine: American, GAPS

Ingredients

  • 3 cups properly prepared nuts of choice soaked, sprouted, or fermented and fully dried; chop large nuts
  • 1 cup properly prepared seeds of choice pumpkin, sunflower, hemp, or a combination; fully dry
  • 1/2 cup additive-free dried fruit, freeze-dried fruit, or finished homemade cocoa-butter chocolate chunks use one choice or a combination totaling this measure; cocoa variation is occasional later Full GAPS
  • 1/3 cup raw honey
  • 1/4 cup pure cocoa butter melted before measuring
  • 2 tablespoons plain unflavored beef gelatin
  • 1 teaspoon homemade vanilla extract optional
  • 1/8 teaspoon mineral-rich sea salt optional

Equipment

  • Le Creuset Signature stainless-steel saucepan
  • Stainless whisk
  • Heat-safe silicone spatula or wooden spoon
  • Large glass or stainless mixing bowl optional if the saucepan is not roomy enough
  • Two standard glass loaf pans per 1x batch or one 9-inch square glass or ceramic dish
  • Measuring cups and spoons
  • Sharp stainless knife and wooden cutting board
  • Covered glass storage container

Method

  1. Grease the scaled pan count: use two standard glass loaf pans at 1x or four at 2x; one 9-inch square glass or ceramic dish may replace each pair. Set out the measured prepared nuts, prepared seeds, mix-ins, homemade vanilla, and salt before heating the binder.
  2. Chop any large prepared nuts into rough pieces. Keep sturdy raisins or chewy dried fruit with the nut mixture, and reserve fragile freeze-dried fruit or homemade chocolate chunks for layering.
  3. Put the scaled raw honey and scaled melted-to-measure cocoa butter in the Le Creuset stainless saucepan. Whisk over medium heat until the cocoa butter is fully liquid and the mixture is uniform.
  4. Turn the heat to very low. While whisking constantly, sprinkle in the scaled beef gelatin a little at a time. Continue until no pale gelatin pockets remain and the amber binder looks smooth and slightly thickened.

  5. Add the scaled prepared nuts, prepared seeds, optional homemade vanilla, optional salt, and any sturdy dried-fruit mix-ins. Stir quickly until every piece is lightly coated and the mixture is thick and sticky.
  6. Spread roughly one-third of the sticky mixture into the prepared pans. Sprinkle about two-thirds of any fragile freeze-dried fruit or homemade chocolate pieces over this layer.
  7. Add the remaining nut mixture and scatter the remaining fragile mix-ins over the top.
  8. Press firmly and evenly into the corners with the back of a sturdy spoon, a small offset spatula, or a greased flat-bottom measuring cup. The surface should be compact with no loose mound.

  9. Refrigerate for at least 1 hour, until each slab is firm enough to lift as one piece.
  10. Turn out the slabs. At 1x, cut each of the two loaf-pan slabs across its width into 6 long bars for 12 total. At 2x, use four loaf pans and cut each slab into 6 bars for 24 total. Use a clean firm downward cut rather than sawing.

Notes

Full GAPS: The dried-fruit version fits Full GAPS after whole prepared nuts and seeds and the other ingredients are tolerated. A homemade cocoa-chocolate variation is occasional later Full GAPS after digestive symptoms resolve.
Prepare first: Measure nuts and seeds only after they have been soaked, sprouted, or fermented and then dried completely. Cashews must not soak longer than 6 hours.
Mix-in total: Use the displayed scaled total even when combining several dried fruits or homemade chocolate chunks.
Pan count: Use two loaf pans at 1x, four at 2x, and six at 3x.
Vanilla: The measured teaspoon is optional. Use homemade vanilla extract.
Storage: Keep sealed in the refrigerator or freezer. Freeze in one layer before stacking if the surfaces are sticky.
