Ingredients

  • 2 tablespoons coconut oil, ghee or rendered animal fat for cooking
  • 1 cup fresh vegetables thinly sliced; choose green onions, bell pepper or zucchini
  • 1 teaspoon mineral salt divided
  • 1/4 cup fresh ginger grated or minced
  • 5 cloves garlic crushed or minced
  • 1/2 jalapeño or serrano pepper optional hot pepper seeds and membranes removed; minced
  • 1 cup properly prepared homemade peanut butter smooth; made from soaked or sprouted peanuts
  • 4 cups homemade meat stock or fish stock use meat or fish stock, not bone broth
  • 2 cups cooked spaghetti squash, kabocha squash or butternut squash the photographed branch uses kabocha
  • 3 cups cabbage thinly sliced into long strips; about 1 small to medium cabbage
  • 1 pound raw prawns, cubed fresh fish, thinly sliced raw chicken or beef, cooked shredded chicken, or cooked whole prawns choose one protein option
  • 1 tablespoon coconut aminos qualifying ingredient list
  • 1 tablespoon fresh lime juice
  • 2 teaspoons traditionally fermented fish sauce made from fish, salt and water
  • 1/2 bunch fresh cilantro chopped
  • 1/4 cup green onion thinly sliced, for garnish

Equipment

  • Le Creuset Classic stainless-steel stockpot, 10 quart
  • Fitted lid
  • Stainless whisk
  • Measuring cups and spoons
  • Cutting board and knife
  • Ladle

Method

  1. Heat the coconut oil, ghee or rendered animal fat in a large stainless-steel stockpot over medium heat. Add the sliced fresh vegetables, but not the cabbage, and 1/2 teaspoon of the mineral salt. Cook for 5 minutes, stirring occasionally, until the vegetables soften and look glossy.
  2. Add the ginger, garlic and optional hot pepper. Lower the heat and cook for 5 minutes. The garlic should soften and smell mellow without browning.
  3. Add the properly prepared homemade peanut butter. Stir until it loosens and is mostly mixed through the vegetables.
  4. Pour in 2 cups of the stock and whisk until the sauce is smooth with no peanut-butter streaks. Add the remaining 2 cups stock and the cooked squash. Bring the sauce to a gentle simmer.

  5. Pile the cabbage strips on top, sprinkle with the remaining 1/2 teaspoon mineral salt and cover. Cook for 10 minutes, until the cabbage has begun to collapse.
  6. Uncover and fold the cabbage into the sauce. Cover again and cook for 5 minutes, until the cabbage ribbons are soft and pliable rather than crisp.
  7. For raw prawns, cubed fish, thinly sliced chicken or thinly sliced beef, fold the selected 1-pound protein into the simmering stew. Cover and poach for about 5 minutes, continuing only as needed until cooked through: prawns turn pink and opaque, fish flakes when pressed, and chicken reaches 165°F in the center. If using cooked shredded chicken or cooked whole prawns, fold them in only long enough to heat through.

  8. Turn off the heat. Stir in the coconut aminos, fresh lime juice and fermented fish sauce.
  9. Ladle into bowls and finish with chopped cilantro and sliced green onion. For a gentler family bowl, omit the hot pepper and reduce the ginger before cooking rather than trying to remove heat at the table.

Notes

Full GAPS: Use after properly prepared peanuts have been introduced and tolerated. This is not an Introduction Diet recipe.
Protein choice: Use one pound of one listed protein option and follow its own doneness cue. Already cooked chicken or prawns need only heat through.
Advance preparation: The 50-minute recipe time begins after the peanut butter and squash are ready.
Scaling: The 2x control makes 10 servings and doubles every measured ingredient. Divide between two stockpots if one pot would be crowded.
Storage: Cool leftovers promptly, refrigerate covered and reheat gently with a splash of the same stock if needed.
