Hot Coconut Milk Eggnog With Vanilla for Full GAPS

A warm Full GAPS eggnog made with homemade coconut milk, whole eggs, honey, cinnamon and homemade vanilla. Optional gelatin, ghee and coconut oil give a richer finish.
Servings: 1 serving
Course: Breakfast, Drinks, Full GAPS
Cuisine: American

Ingredients

  • 2 whole eggs
  • 1 cup homemade coconut milk cooled and stirred
  • 1/4 teaspoon ground cinnamon plain, without additives
  • 1 teaspoon homemade vanilla extract
  • raw honey to taste
  • 1 tablespoon plain, unflavored bovine gelatin optional; not collagen peptides
  • 1 tablespoon homemade ghee optional; omit for a dairy-free drink
  • 1 tablespoon coconut oil optional
  • ground or freshly grated nutmeg to finish

Equipment

  • 1 Ninja BN801 blender for the cold mixture
  • 1 Small Le Creuset stainless saucepan
  • 1 Stainless whisk
  • 1 Food thermometer
  • 1 Measuring cup and spoons
  • 1 Heat-safe 16-ounce mug one per serving

Method

  1. Blend the cooled coconut milk and whole eggs in the Ninja BN801 just until smooth, with no separate yolk or egg-white streaks.
  2. Pour into a small stainless saucepan. Whisk in cinnamon, homemade vanilla, honey to taste and optional gelatin. Sprinkle gelatin over the cool liquid rather than leaving a dry mound; whisk until the granules are wet and distributed.

  3. Heat over medium heat while whisking frequently along the bottom and sides. Check the stirred liquid with a thermometer and remove the pan at 160°F. Do not boil; excessive heat can make the eggs curdle.
  4. Off the heat, add the optional ghee and coconut oil. Whisk vigorously as they melt until the mixture looks smooth and even, without a separate oily ring. Do not put the hot mixture into the Ninja.

  5. Pour into heat-safe mugs and sprinkle a little nutmeg on each. Serve warm while the drink flows easily.

Notes

Full GAPS: After whole eggs, homemade coconut milk, honey, spices and any optional additions are introduced and tolerated. Not an Introduction Diet recipe.
Honey: Two teaspoons is the suggested starting point for the one-serving base batch, then adjust to taste. The amount is not fixed in the formula.
Optional additions: Gelatin, ghee and coconut oil may each be omitted. Ghee replaces the original optional butter at the same tablespoon amount. Omit ghee for dairy-free. Gelatin thickens further when cold.
Temperature: Stop at 160°F before boiling. The heating time depends on the starting temperature, burner and saucepan. No fixed preparation or cooking time is specified.
Storage: Serve freshly made. Refrigerate leftovers promptly covered; gently rewarm while stirring until fluid, without boiling or microwaving. If eggs curdle, cool fully before blending them smooth in the Ninja, then rewarm gently.
