Honey Vanilla Coconut Macaroons for Full GAPS

Crisp Full GAPS coconut cookies with honey, whipped egg whites and homemade vanilla. Choose the two-temperature oven method or the dehydrator alternative; cool a sample completely to check crispness. Timing for each stage is in the method and notes.
Servings: 30 cookies, approximately
Course: Dessert, Full GAPS
Cuisine: GAPS

Ingredients

  • 4 egg whites separated from yolks
  • 1 pinch natural sea salt
  • 1/3 cup honey first measure; use together with the additional honey below
  • 2 tablespoons honey additional measure; both honey amounts go into the same batch
  • 1 tablespoon homemade vanilla extract finished extract without added sugar or non-GAPS additives
  • 2 cups unsweetened shredded coconut small shreds, additive-free; not coconut flour or sweetened coconut

Equipment

  • Clean dry mixing bowl
  • Electric mixer
  • Measuring cups and spoons
  • Spatula
  • Two-tablespoon scoop or spoon
  • Parchment-lined baking sheets for oven method
  • Heat-safe supports
  • Suitable lined dehydrator trays, only for that alternative

Method

  1. Set out a clean, dry mixing bowl and mixer. Measure both honey amounts, the vanilla, and coconut. Line baking sheets for the oven method, or suitable dehydrator trays for that alternative. For the oven method, heat the oven to 300°F.
  2. Beat the egg whites and pinch of salt until stiff peaks form. Look for opaque foam, visible beater tracks, and a peak that stands upright. Stop before the whites become dry and clumpy.
  3. Mix in the homemade vanilla, then add all the honey in a slow drizzle while mixing. Use both the one-third-cup measure and the additional two tablespoons for a single batch. Mix until even, without amber honey streaks.
  4. Fold in the shredded coconut gently with a spatula, lifting from the bottom until the shreds are evenly coated and the mixture stays airy.
  5. Scoop mounds onto the lined trays. A two-tablespoon scoop is the portion guide, or use a spoon. Keep the portions similar and leave space between them. Expect about thirty cookies, depending on portion size and whipped volume.
  6. Oven method: Bake at 300°F for about thirty minutes, until lightly browned. Reduce the oven to 200°F and bake for about another hour, or until completely dry and crisp. Cool one cookie completely to test. If the cooled sample is still chewy, continue drying the remaining cookies and check again.
  7. Dehydrator alternative, instead of the oven step: Dry on suitable lined trays at 155°F for about twenty to twenty-four hours, until very crisp. Allow a cookie to cool completely before judging; a warm cookie can still be chewy.
  8. Cool the whole batch completely before closing it in a container. Refrigerate cooked leftovers and use within three to four days, or freeze portions separated by parchment. Chilling may soften the crisp surface.

Notes

Choose one finishing method: Use the oven step or the dehydrator alternative for the same mixture, rather than doing both.
Oven timing: About thirty minutes at 300°F until lightly browned, then about another hour at 200°F until completely dry and crisp. Mixing, oven heating, complete cooling, extra oven loads, and any additional drying are separate. Check a fully cooled sample before deciding to extend drying.
Dehydrator timing: About twenty to twenty-four hours at 155°F on suitable lined trays, until very crisp. Judge a completely cooled cookie. Follow the appliance and tray directions.
Honey: Use both measures: one-third cup plus two tablespoons per single batch. Gently warm crystallized honey in a warm-water bath only until pourable. Honey is drizzled into the whites rather than boiled first.
Vanilla: Use one tablespoon of finished homemade vanilla extract per single batch, without added sugar or non-GAPS additives.
Yield: About thirty cookies using a two-tablespoon scoop. Actual count varies with scoop size and whipped volume.
Scaling: At 2× use eight whites, two pinches salt, two-thirds cup honey plus four additional tablespoons honey, two tablespoons homemade vanilla, and four cups shredded coconut. Use sufficient bowl and tray capacity; extra loads extend the schedule.
GAPS: Full GAPS after ingredients are introduced. Dairy-free, but contains eggs. This is a sweet recipe rather than early Intro or No-Plant food.
Related method: The separate baked honey coconut macaroons use a hot-honey method and their own measured formula.
Storage: Cool completely before packing. Refrigerate cooked leftovers and use within three to four days, or freeze portions separated by parchment. The frozen cookies can be eaten cold if that texture suits you.
