Honey Mustard Vinaigrette for Full GAPS

A tangy, lightly sweet Full GAPS vinaigrette made with raw apple cider vinegar, cold-pressed olive oil, pure Dijon mustard, raw honey, and sea salt.
Prep Time 5 minutes
Total Time 5 minutes
Servings: 1 batch
Course: Condiment, Salad Dressing
Cuisine: American, GAPS

Ingredients

  • 1/2 cup cold-pressed extra-virgin olive oil used raw
  • 2 tablespoons raw apple cider vinegar with no added sugar or non-GAPS additives
  • 1 tablespoon pure additive-free Dijon mustard made only with GAPS-allowed ingredients
  • 2 teaspoons raw honey do not substitute maple syrup for this Full GAPS version
  • 1 teaspoon sea salt

Equipment

  • Small clear glass mixing bowl or liquid measuring cup
  • Small stainless-steel whisk
  • Measuring cups and measuring spoons
  • Clean covered glass jar for storage

Method

  1. Place the olive oil, raw apple cider vinegar, pure Dijon mustard, raw honey, and sea salt in a small glass bowl or liquid measuring cup. Before whisking, the oil will sit above the vinegar while the mustard and honey rest in thicker ribbons near the bottom.

  2. Whisk steadily until the sharp line between oil and vinegar disappears and the dressing looks evenly golden. The finished vinaigrette should move as one pourable mixture with tiny mustard specks throughout and no sticky honey ribbon on the bottom. Whisk again before serving if it naturally separates.

Notes

Full GAPS: Use raw apple cider vinegar, cold-pressed extra-virgin olive oil kept raw, raw honey, sea salt, and pure Dijon mustard made only with GAPS-allowed ingredients. This is not an early Introduction Diet recipe or a No-Plant GAPS condiment.
Timing: The source describes this as a dressing that takes less than five minutes. The card rounds that to about 5 minutes for planning.
Scaling: The 1x/2x control doubles every measured ingredient. Use a bowl or jar with enough room to whisk the larger batch evenly.
Storage: Refrigerate in a clean covered glass jar. Natural separation and cloudy chilled olive oil are normal. Let the covered jar stand briefly at room temperature, then shake or whisk until evenly golden. This formula does not have a tested long-storage window, so make it close to the meals you plan to serve.
