Method
- Start with a fresh or fully thawed whole turkey. Remove packaging and any bag inside the cavity. Check the cavity and joints for remaining ice. Weigh the bird and choose an oven-safe roasting pan with enough room. Heat the oven to 400°F (205°C).
- Salt the turkey inside and out to taste. Tuck a few peeled garlic cloves between skin and meat. Put the celery stalks loosely in the cavity. Place the prepared turkey in the roasting pan without added glaze, bread stuffing or a nonstick rack.

- Roast at 400°F (205°C) for 30 minutes. Then lower the oven to 325°F (165°C). A little color may have begun developing on the skin, but it does not show that the thick meat is finished.

- Continue roasting at 325°F (165°C) until a meat thermometer inserted into thick meat away from a bone reads 180°F (82°C). Approximately 20 minutes per pound is a planning guide, not a fixed total for every bird. Use the thermometer endpoint.
- Remove the finished turkey from the oven. Serve and carve the meat. For GAPS Intro Stage 4, avoid burned or too-brown bits and serve with cooked vegetables, fermented vegetables and warm meat stock. For Full GAPS, choose compatible sides separately.

Notes
Timing: Begin with 30 minutes at 400°F. The 325°F roast continues until the thermometer reads 180°F. Allow approximately 20 minutes per pound as an oven-planning guide. Bird size varies, so keep checking the thermometer rather than relying on one fixed total. Preparation is additional.
Batch: This makes one whole turkey. Portion count depends on bird size. At 2x, roast two suitably accommodated birds; garlic and salt are applied to each, and the four celery stalks divide between them. Pan fit and temperature still determine the finish.
GAPS: Roasting is introduced in Intro Stage 4. Avoid burned or too-brown bits; eat with cooked vegetables, fermented vegetables and a warm cup of chicken meat stock. Add a little of your introduced probiotic food to the warm stock. This roast also fits Full GAPS, is naturally free of dairy/grain/nuts, and is not labeled No-Plant because garlic/celery are included.
Pan size: The photographs illustrate a smaller whole bird in a 5.25-quart Artichaut Signature roaster. Its manufacturer describes use with turkeys up to 12 lb; larger birds need a larger suitable pan. Choose the bird and pan together before cooking.
