Method
- If the ice cream maker uses a removable freezer bowl, freeze it level overnight at the coldest setting according to the maker instructions. Put a covered freezer-safe glass or ceramic container in the freezer to prechill.
- Combine the scaled filtered water, raw honey, fresh lemon juice, sea salt, and either the scaled homemade vanilla or plain vodka if using. Blend briefly in the Ninja BN801 or whisk in a glass bowl until no honey pools on the bottom and no salt crystals remain.

- Start the ice cream maker. Pour in the lemon mixture, then add the scaled cold cultured sour cream while the paddle is moving.
- Churn until the ice cream is creamy, frozen, and beginning to expand against the paddle, about 20 minutes as an estimate. Stop when soft folds hold and no watery ring remains.

- Serve immediately for soft serve. For firm scoops, transfer to the prechilled covered container and freeze 1 to 3 hours.
Notes
Full GAPS: Use after homemade sour cream cultured at least 24 hours has been introduced and tolerated. This is not an Introduction Diet starting recipe.
Later commercial dairy: An additive-free live natural commercial sour cream is a later same-measure option only after the 2020 GAPS dairy progression permits it.
Optional flavor: Use 2 teaspoons homemade vanilla, 2 teaspoons plain vodka, or neither. Never use both together.
2x: Use 4 cups filtered water, 2 cups cultured sour cream, 1 cup raw honey, 2/3 cup fresh lemon juice, 1/4 teaspoon sea salt, and 4 teaspoons of one optional ingredient. Confirm maker capacity and churn in batches if needed.
Storage: Keep covered in freezer-safe glass or ceramic. Soften on the counter up to 20 minutes or in the refrigerator up to 30 minutes, checking the center as it softens.
