Ingredients

  • 2 cups freshly pressed white-grape juice
  • 1/2 cup freshly squeezed lemon juice
  • 1 cup filtered water
  • 1/8 teaspoon natural mineral salt

Equipment

  • 1 Juicer or fresh-pressing setup
  • 1 Fine-mesh stainless-steel strainer
  • 1 Set of clear glass measuring vessels
  • 1 Glass pitcher or large jar
  • 1 Long wooden or stainless-steel spoon
  • 8 Stainless-steel popsicle molds in one supported steel rack
  • 8 Plain natural wood sticks

Method

  1. Measure the ingredients. Measure 2 cups freshly pressed white-grape juice, 1/2 cup freshly squeezed lemon juice, 1 cup filtered water, and 1/8 teaspoon natural mineral salt.

  2. Mix until the salt dissolves. Pour the grape juice, lemon juice, and water into a glass pitcher or large jar. Add the mineral salt. Stir until no grains remain on the bottom.
  3. Fill eight molds. Divide the mixture evenly among eight stainless-steel popsicle molds. Leave a little space at the top, insert one plain wood stick into each mold, and place all eight molds upright in their supported rack.

  4. Freeze until firm. Put the supported rack on a level freezer shelf. Freeze for at least 3 hours, or overnight, until every pop is solid through the center.
  5. Unmold and serve. Remove only the number of pops you plan to serve. If a pop does not release immediately, let the outside of its metal mold warm briefly, then pull the stick straight rather than twisting it.

Notes

Use freshly pressed white-grape juice and freshly squeezed lemon juice. Natural mineral salt is a measured flavor ingredient; the pops are not presented as an electrolyte drink. Divide the batch evenly among eight molds. Freeze for at least 3 hours or overnight until solid.
