Ingredients

  • 1 pound full-fat ground beef or ground pork
  • 1 bunch green onions green tops chopped, with a little reserved for serving
  • 1/4 cup lard or coconut oil, homemade ghee, or rendered fat from salt-only additive-free uncured bacon; keep 1/4 cup when doubling
  • 1/4 cup fresh ginger minced or grated
  • 1/4 cup pure additive-free coconut aminos
  • 5 cloves garlic minced or crushed
  • 2 tablespoons natural raw honey
  • prepared steamed cauliflower rice hot, for serving
  • fresh cilantro or reserved green onion tops for serving
  • properly soaked and dehydrated or sprouted sesame seeds optional

Equipment

  • 1 Large enameled cast-iron or stainless-steel skillet Le Creuset Signature skillet in Artichaut works
  • 1 Wooden or stainless-steel spatula
  • 1 Microplane or fine grater for the ginger
  • 1 Measuring cups and spoons
  • 1 Instant-read thermometer

Method

  1. Prepare the serving base. Make the cauliflower rice first and keep it hot. Reserve a small handful of sliced green onion tops for the finished bowls.
  2. Soften the onions. Heat a large enameled cast-iron or stainless-steel skillet over medium-high heat. Add the measured fat and chopped green onion tops. Cook for 4 to 5 minutes, until they are wilted, glossy, and lightly browned at a few edges.

  3. Brown the meat. Add the ground beef or pork. Break it into small pieces with a wooden or stainless-steel spatula. Cook for about 8 minutes, continuing to break apart any large clumps. The outside should no longer be pink.
  4. Add the sauce ingredients. Stir in the coconut aminos, fresh ginger, garlic, and honey. Scrape across the bottom of the skillet so the browned bits join the sauce.
  5. Simmer to the right endpoint. Let the mixture simmer for 2 to 3 minutes, then continue as needed until the sauce coats the meat and the center of the ground beef or pork reaches 160°F (71°C). The meat should be fully cooked, juicy, and evenly glossy rather than sitting in a pool of thin liquid.

  6. Build the bowls. Divide the hot cauliflower rice among four bowls. Spoon the beef and its sauce over the rice. Finish with reserved green onion tops or cilantro. Add prepared sesame seeds only if using.

Notes

Choose one cooking fat. Use the full 1/4 cup for the four-serving formula. When doubling the recipe, keep the cooking fat at 1/4 cup and double the remaining measured ingredients. Use pure additive-free coconut aminos after checking the label. Soy sauce and tamari are not used. Serve over the linked Full GAPS steamed cauliflower rice. Optional sesame seeds must be properly prepared.
