Method
- Split the vanilla beans lengthwise with a small knife or kitchen scissors to expose the soft interior. Work through the quantity selected in the ingredient list.

- Scrape the fine, sticky seeds into clean glass containers with a spoon and add the split pods too. For the base batch shown, divide evenly between two 1.5 L glass jars; each receives thirty-two beans.
- Add the spirit amount selected in the ingredient list, dividing it evenly among the jars. The base two-jar batch uses four US cups per jar. Wet and immerse the pods, close tightly, and shake gently. Use sufficient glass capacity and headroom for the selected batch size.

- Keep the closed jars in a dark cupboard. Shake every few days so settled vanilla seeds move through the liquid again.
- Steep for eight weeks, or fifty-six days. The extract should be good and dark with a distinct vanilla aroma alongside the alcohol. Keep the beans immersed, close tightly after use, and measure the amount specified in the recipe you are making.
Notes
Strength: Eight beans per US cup. One batch uses 64 beans and eight cups of spirit. 2× uses 128 beans and one US gallon (sixteen cups); use four 1.5 L jars as needed. The eight-week steep stays the same.
Timing: Give the prepared jars eight weeks, or 56 days, to steep. The card lists that steeping period; hands-on cutting and scraping time depends on the beans and how you work.
GAPS: Homemade vanilla without added sugar or non-GAPS additives is a Full GAPS flavoring ingredient, measured into other recipes.
Storage: Keep tightly closed in a dark cupboard with pods immersed. Shake gently to redistribute seeds.
Classic Strength: The classic homemade vanilla uses four beans per US cup; this recipe has twice the beans in the same spirit volume.
