Ingredients

Equipment

  • Fine-mesh stainless-steel strainer
  • Clean tightly woven cheesecloth
  • Deep glass or ceramic bowl Holds the strainer above collected liquid.
  • Mixing bowl and whisk
  • Ice cream maker Primary churning method; follow capacity and preparation directions.
  • Ninja Swirl CREAMi, optional alternative Matching Swirl pints; extra freeze and processing directions are in the notes.

Method

  1. Set a fine-mesh stainless-steel strainer above a glass or ceramic bowl and line it with clean, tightly woven cheesecloth.
  2. Pour in the four measured cups of completed, chilled coconut-milk yogurt and fold the cloth over the top.
  3. Refrigerate overnight with the yogurt held above any liquid that collects.
  4. Move all the yogurt remaining in the cloth to a mixing bowl. Keep any drained coconut liquid separate.
  5. Whisk in the one-third cup honey, juice of half a lemon, and tablespoon of homemade vanilla until evenly mixed.
  6. Churn the cold base according to the ice cream maker's directions, respecting its capacity. Divide the finished dessert into four servings.

Notes

Begin with 4 cups of completed, chilled homemade coconut-milk yogurt, measured before straining. The linked component uses gelatin, honey culture feed, and a live dairy-free cashew starter. Keep its preparation intact. This version contains cashews and gelatin.
The component can retain much of its liquid because it is gelatin-set. Refrigerate in the cloth overnight, then use all yogurt remaining without adding more to reach four cups. Keep any coconut drainage separate; it is not dairy whey.
The standard card estimate allows 24 hours preparation/straining and about 15 minutes machine churning. Component culturing/chilling, freezer-bowl preparation, final firming, and extra machine batches take additional time. Four servings, with variable finished volume.
Optional Ninja Swirl CREAMi alternative: put the same cold base in matching 16-ounce Swirl pints below MAX FILL, cover and freeze level at least 24 hours after straining. Assemble as directed and select SCOOP, then ICE CREAM, the manufacturer program for rich dairy-alternative bases. RE-SPIN if crumbly. Additional freeze is outside the main card timing; no dispensing instruction is given.
Serve freshly churned for a soft texture. Cover leftovers in a freezer-safe container; they become firmer and may need softening before scooping. Double all four dessert ingredients for eight servings, and keep waiting base cold when churning in batches.
Full GAPS after the component ingredients and sweet foods are introduced. Dairy-free and egg-free; the linked component contains cashews and gelatin.
