Method
- Chill the ice cream maker bowl according to the machine instructions. Cut the avocado, discard the pit and skin, and measure about 1 loosely packed cup of pale green flesh with no fibrous or heavily browned areas.
- Put the avocado, filtered water, raw honey, and homemade vanilla into the blender in that order. Blend for 30 to 50 seconds, until the mixture is completely smooth, pale green, and lightly bubbly, with no visible avocado pieces or honey graininess.

- Pour the base into the ice cream maker and churn according to the machine instructions, about 20 minutes as a guide. Stop when the mixture forms thick soft folds, the paddle leaves tracks that hold briefly, and the ice cream mounds instead of flowing like a drink.

- Serve immediately for soft-serve texture, or transfer to a covered freezer-safe glass container. For firmer ice cream, freeze until set; let it stand at room temperature for about 15 minutes before scooping.
Notes
Full GAPS only, as an occasional sweet treat between meals; not an Introduction Diet recipe.
This recipe makes six servings or up to ten smaller servings. A doubled batch makes twelve servings or up to twenty smaller servings. The 30-minute total assumes the machine bowl is already frozen and ready.
A 2x batch is 8 cups liquid before avocado and may exceed a home ice cream maker's fill line; churn it in two batches when needed, which increases the elapsed time.
Use the linked homemade vanilla extract with no added sugar and no commercial flavor blend.
Chocolate at 1x: heat 1 cup of the measured water and whisk in 1/2 cup pure organic cocoa plus a pinch of sea salt. At 2x: use 2 cups measured water, 1 cup cocoa, and 2 pinches salt. Use later on Full GAPS after digestive symptoms are gone.
Lime: replace 1/3 cup water at 1x or 2/3 cup at 2x with the same amount of fresh lime juice. Fresh herb: use that lime route and blend in fresh basil, mint, or tarragon.
Berry: replace 1 cup water with 1 cup berry puree or a heaping cup berries at 1x; replace 2 cups water with 2 cups puree or berries at 2x. Strain raspberry or blackberry seeds.
Creamy or frozen-yogurt style: replace 2 cups water at 1x or 4 cups at 2x with the same amount of homemade coconut milk, homemade milk from properly prepared nuts, or homemade 24-hour yogurt.
Extra fluffy: at 1x, sprinkle 1 teaspoon plain gelatin over 1 cup of the measured water and keep total water at 4 cups. At 2x, use 2 teaspoons gelatin over 2 cups measured water and keep total water at 8 cups. Heat gently until dissolved and cool enough to blend.
The source nutrition is for its low-carb sweetener route and is not used for this raw-honey Full GAPS formula.
Source-measured variations belong in the article and card notes; they do not create additional base cards.
Scaling equivalents: At 1x, use 1 very large or 2 small avocados (about 1 cup loosely packed chunks) and 4 teaspoons vanilla (1 tablespoon plus 1 teaspoon). At 2x, use 2 very large or 4 small avocados and 8 teaspoons vanilla (2 tablespoons plus 2 teaspoons).
