Method
- Lightly butter a stainless-steel baking sheet, or line it with buttered unbleached parchment.
- Add the coconut cream and raw honey to a shallow stainless-steel saucepan. Warm over medium heat, whisking until melted and uniform.

- Lower the heat slightly if needed. Pour in the beaten egg yolks in a thin stream while whisking constantly, then whisk in the homemade vanilla.
- Bring to a boil, then lower the heat just enough to maintain an active, non-rolling boil. Whisk constantly for 10 minutes, until slightly darker, caramel-scented, and thick enough to leave a brief whisk path.
- Remove from the heat. Fold in the chopped prepared almonds and flaked coconut until every piece is coated.

- Cool only until safe to portion and thick enough to hold a mound. Divide into 13 tablespoon-size clusters on the prepared tray.
- Refrigerate or freeze until each cluster lifts in one piece. The source gives no fixed setting time, so use the physical cue.
- Bring the portion you plan to serve toward room temperature; keep the remaining clusters chilled in a covered glass container.
Notes
GAPS placement: Full GAPS only because this formula contains chopped whole almonds; not for the Introduction Diet.
Almonds: Use properly prepared, fully dried almonds.
Coconut cream: Use a product whose complete label contains no gums, starch, sugar, or other non-GAPS additive; do not harvest cream from canned coconut milk.
Vanilla: Use the linked homemade vanilla extract.
Timing: The source gives a 10-minute cook time and 13-cluster yield but no tested prep, total, setting, or storage time.
Scaling: Use the 2× control for doubled measured amounts and prepare a second tray before cooking.
