Method
- Have the plain homemade almond milk ready and the listed amount of fully ripe banana sliced and frozen. Measure the pitted dates. If your blender requires softened dates, soak that measured portion until soft, drain and use all of it.
- Pour the listed almond milk and fresh coconut water into the pitcher. Add the measured dates, homemade vanilla, cinnamon, ginger, nutmeg, cardamom, cloves and sea salt.
- Add the frozen banana slices and the optional measured ice. Fit the pitcher and matching lid securely according to your blender instructions.
- Blend on high for thirty to sixty seconds, until evenly pale tan and creamy. The banana pieces and date fragments should disappear; fine spice flecks are expected.
- Stop the blender before opening it. If the contents are stuck above the blades, switch off and unplug the machine, wait until the blades stop, then loosen the contents with a spatula. Remove the spatula, refit the lid and finish blending. Leave out optional ice if the frozen load is too much; do not add unmeasured extra liquid.
- Divide evenly into the number of servings shown on the card and serve immediately.
Notes
Full GAPS after prepared almonds, raw ripe fruit and all other ingredients are introduced and tolerated; not an Introduction Diet recipe. Raw fruit follows tolerated cooked fruit and consistently normal stool; avoid fruit while diarrhea or abdominal pain is present. Serve this cold smoothie between meals.
Use plain unsweetened homemade almond milk from properly prepared almonds. The GAPS nut-milk method soaks almonds for 12–24 hours, drains, blends with fresh water and strains. Measure one cup of finished milk at 1×. This is advance component preparation, not part of the blend time.
Use coconut water drained from sound fresh coconuts, strained free of shell fragments. It should taste fresh and mildly sweet. Discard a coconut whose water tastes rancid. Coconut milk is a different ingredient.
Dates must have no syrup or other additives. Use bananas with brown-spotted peels before freezing. Keep the measured homemade vanilla; it is a flavoring and does not replace the fruit.
Blend on high for 30–60 seconds once the milk is made and the bananas are frozen. Allow additional time for preparing the ingredients before you start.
Ice is optional. Keep all other measurements unchanged. At 2× make four servings, using sufficient blender capacity or two original-size batches. Do not automatically double the blend time.
Serve immediately for the just-blended texture. Prepare milk and freeze banana slices ahead, then blend just before serving. Contains almonds; the plain almond-milk formula has no egg or dairy ingredients.
