Total Time 20 minutes
Servings: 4 servings
Course: Full GAPS, Side Dish

Ingredients

  • 4-6 portobello mushrooms stems and gills removed; caps stay unheated
  • 1/2 head cauliflower coarsely chopped before pulsing
  • 3/4 cup French artichoke hearts plain fresh or frozen; thaw and drain frozen hearts, then slice finely
  • 1 small zucchini finely chopped
  • 2 strips homemade salt-only bacon already cooked and chopped; curing and cooking are prior jobs
  • 2 small tomatoes finely chopped
  • 4 green onions green parts only, finely sliced
  • 1/4 cup Parmesan cheese optional; pure cheese, freshly grated, without starch coating
  • 1 lemon fresh juice divided between brushing caps and finishing drizzle
  • 1/2 tablespoon coconut oil for the filling
  • 1 garlic clove minced
  • 2 tablespoons fresh basil or dried basil at one-third the fresh-herb volume; dried goes in with vegetables, fresh off the heat
  • natural salt to taste
  • ground pepper to taste

Equipment

  • Ninja BN801 with 64-ounce/8-cup processor bowl and chopping blade
  • Large stainless-steel or enameled cast-iron frying pan
  • Knife and cutting board
  • Measuring cups and spoons
  • Stirring spoon
  • Spoon for removing mushroom gills
  • Serving plate

Method

  1. Have the homemade salt-only bacon already cooked and chopped. Remove stems and gills from 4–6 portobellos, keeping caps intact. Brush inside and outside with some juice from 1 lemon, sprinkle with salt and pepper, and set aside. These caps remain unheated.
  2. Pulse the coarsely chopped 1/2 head cauliflower in the Ninja BN801 food-processor configuration with chopping blade, about 10–15 pulses of one second each, until the pieces look rice-size. Stop before a wet paste forms. Follow the appliance assembly/fill limits and work in batches if needed.
  3. Melt 1/2 tablespoon coconut oil in a large frying pan over medium-high heat. Add the cauliflower, 3/4 cup finely sliced French artichoke hearts, finely chopped small zucchini, 2 cooked chopped bacon strips, 2 chopped small tomatoes, green parts of 4 green onions and minced garlic clove. If using dried basil instead of fresh, add 2 teaspoons now.
  4. Stir frequently for about 3–5 minutes, until the vegetables are tender. Move the mixture from the edges and center. Keep the cauliflower grain-like; lower the heat if browning or catching happens before the vegetables soften, and use actual tenderness as the endpoint.
  5. Take off the heat. Stir in optional 1/4 cup freshly grated pure Parmesan and 2 tablespoons fresh basil if using. Add a drizzle of the remaining lemon juice and salt and pepper to taste, accounting for the seasoning already in the cooked bacon.
  6. Arrange the prepared caps hollow-side up on a plate and spoon the warm filling across them. Serve four portions, with firm unheated caps and tender filling. The 15-minute preparation and 5-minute cook estimate assumes bacon ready; curing/cooking bacon are separate. No oven or cap-roasting step.

Notes

Makes four servings with 4–6 portobello caps. The caps stay unheated; only the filling cooks. Prepare and cook the homemade salt-only bacon before starting. The 15-minute prep and 5-minute cooking total of about 20 minutes is a planning estimate with that bacon ready.
Use plain French artichoke hearts, not Jerusalem artichokes. Thaw and drain plain frozen hearts before measuring and slicing. Pulse the cauliflower in the Ninja BN801 processor configuration, about 10–15 one-second pulses, until rice-size rather than a paste.
Fresh basil: 2 tablespoons added off the heat. Dried alternative: 2 teaspoons for the base batch, added with the vegetables; use dried basil at one-third the fresh-herb volume when scaling. Parmesan is optional. Omit it for dairy-free and keep coconut oil as the cooking fat.
Full GAPS after raw vegetables and the other foods are introduced; not early Intro or No-Plant. No ketogenic meal ratio is provided. Listed ingredients have no egg or nuts; optional Parmesan adds dairy.
Assemble near serving. Refrigerate cooked filling in shallow containers within 2 hours, at 40°F or below, for 3–4 days, retaining any earlier cooked-bacon storage date. Keep caps separate for advance preparation. Reheat portions of filling on the stove to 165°F before assembling.
