Ingredients

Salad
  • 3-4 large carrots trimmed and finely shredded
  • 1/2 cup additive-free raisins whole
  • 1-2 tablespoons raw honey to taste

Equipment

  • Food processor with fine shredding disk
  • Large glass or ceramic bowl
  • Silicone spatula or serving spoons
  • Measuring cup
  • Tablespoon

Method

  1. Finely shred the carrots in a food processor. Stop while the carrots remain dry, fluffy, and visibly separate, with no large pieces or orange liquid pooled in the bowl.

  2. Transfer the shredded carrots to a large glass or ceramic bowl. Add the raisins and toss once to distribute them.
  3. Add 1 tablespoon raw honey and toss from the bottom until the carrots are lightly glazed and no honey ribbon or puddle remains. Taste and add the second tablespoon only if needed.
