Strawberry White Navy Bean Ice Cream for Full GAPS

Later Full GAPS strawberry-banana soft serve made with properly prepared white navy beans, raw honey, raw egg yolk, and homemade vanilla.
Prep Time 10 minutes
Total Time 10 minutes
Servings: 1 batch
Course: Dessert

Ingredients

  • 2 cups properly prepared cooked white navy beans well drained and cooled
  • 2 ripe bananas frozen, then partially thawed
  • 1/4 cup raw honey
  • 1 raw egg yolk
  • 1 teaspoon homemade vanilla extract without added sugar
  • 1 cup fresh whole strawberries hulled

Equipment

  • 1 Ninja BN801 full-size processor bowl and chopping blade
  • 1 Flexible spatula
  • 1 Measuring cups and spoons
  • 1 Cutting board and knife
  • 1 Ice cream maker
  • 1 Covered freezer container

Method

  1. Put the cooked, drained, cooled white navy beans in the full-size processor bowl. Process until completely smooth, stopping to scrape the sides and beneath the rim. The paste should look pale and creamy with no bean skins or sandy flecks.

  2. Cut the partially thawed bananas into chunks. Add them with the raw honey, raw egg yolk, and homemade vanilla. Process until glossy and uniform, with no frozen banana pieces.
  3. Add the strawberries and pulse until the base is pale pink. Continue until the red flecks are tiny, or stop while a few very small soft strawberry pieces remain.

  4. Transfer the slow-pouring pink base to an ice cream maker. Churn until the dasher leaves defined tracks, the mixture mounds instead of leveling immediately, and a spoonful holds a soft peak.
  5. Serve immediately as soft serve. For a firmer result, transfer to a covered freezer container. Let fully frozen ice cream stand about 15 minutes before scooping.

Notes

Later Full GAPS only, after digestive symptoms have completely cleared and properly prepared white navy beans have been introduced and tolerated.
Prep and total time record the source-listed 10 minutes of active mixing. They exclude advance bean preparation, freezing the bananas, and the machine-dependent churn.
The complete bean-preparation route uses cultured whey or kefir, so this post does not label the complete process dairy-free.
