Strawberry Coconut Milk Shake for Full GAPS

A quick single-serving Full GAPS strawberry coconut milk shake with frozen berries, homemade milk, homemade vanilla and only optional raw honey.
Prep Time 5 minutes
Total Time 5 minutes
Servings: 1 glass
Course: Beverage, Shake
Cuisine: GAPS

Ingredients

  • 12 strawberries cored, sliced and frozen
  • 1 cup homemade coconut milk additive-free
  • 2 teaspoons homemade GAPS vanilla extract no added sugar or non-GAPS ingredients
  • raw honey optional, only to taste if berries are tart

Equipment

  • 1 Knife and board for coring/slicing strawberries
  • 1 Freezer-safe tray for freezing pieces separately
  • 1 Ninja BN801 72-ounce pitcher full-size owner-used blender; one serving sits low in pitcher
  • 1 12-to-16-ounce serving glass for the one finished shake

Method

  1. Core and slice 12 strawberries, then freeze the pieces until firm. They should be separate red pieces with a little frost, not a solid fruit block.
Cored and sliced frozen strawberries with fine frost in a ceramic bowl
  2. Pour 1 cup homemade coconut milk into the full-size Ninja BN801 pitcher. Add the frozen strawberries and 2 teaspoons homemade GAPS vanilla. Blend until the mixture is uniformly pale pink, smooth and thick but pourable, with only fine berry flecks and no large frozen pieces. Stop before scraping the pitcher; pink residue remains on the used blade.

  3. Taste the finished shake. If the berries are tart, add a little raw honey to taste and blend briefly; otherwise leave it unsweetened. Pour into one ordinary serving glass and serve cold.

Notes

Full GAPS: Serve after raw strawberries have been introduced and tolerated. This is not Introduction Diet or the egg-yolk therapeutic milkshake.
Milk and vanilla: Use qualifying homemade GAPS versions, not canned milk or sweetened flavoring.
Honey: Taste first; add only if the berries need it. Stevia is not used.
