Smooth red-orange stovetop nomato sauce in a ceramic bowl

Stovetop Nomato Sauce for Full GAPS

A thick tomato-free sauce made from very tender carrots, beet and turnip, blended with homemade meat stock, fresh lime, ginger and oregano. Full GAPS; one smaller stovetop batch.
Servings: 1 batch
Course: Condiment
Cuisine: American, GAPS

Ingredients

  • 4 medium carrots cut in half
  • 1 small beet washed and peeled as needed
  • 1 small to medium turnip washed and peeled as needed
  • 2/3 cup homemade GAPS chicken meat stock or homemade beef meat stock; measured separately for blending
  • 3 tablespoons fresh lime juice
  • 1 inch fresh ginger root roughly chopped
  • 2 cloves fresh garlic roughly chopped; optional
  • 2 teaspoons fresh oregano or use half as much dried oregano
  • 1/4 teaspoon sea salt

Equipment

  • Saucepan with lid or pot with fitted steamer
  • Fork
  • Blender suitable for warm ingredients
  • Measuring cup and spoons

Method

  1. Steam or boil the carrots, beet, and turnip until very tender. A fork should enter their centers easily. Drain if boiled and let cool slightly before blending.

  2. Pour the measured homemade meat stock into the blender first. Add the cooked vegetables, lime juice, roughly chopped ginger, optional garlic, oregano, and sea salt. Break larger cooked pieces as needed to fit. Follow your blender instructions for warm ingredients.

  3. Blend until smooth, about 30 to 50 seconds. Look for an even red-orange puree with fine herb flecks and no distinct vegetable pieces. Stop the machine before scraping down the sides if needed.

Notes

Timing: Steam or boil until the vegetables are very fork-tender. Cooking time varies with root size and cooking method. Use the tenderness test rather than a fixed timer.
Yield: One smaller batch. The amount varies with vegetable size, so no fixed cup yield is promised. Use the 2× control to double the measured ingredients and blend in portions if needed.
Full GAPS: Use homemade meat stock, not long-cooked bone broth. Garlic is optional. Use half as much dried oregano as fresh oregano. This recipe is not an early Intro or No-Plant recipe.
Storage: Cool and cover leftovers for refrigeration, or freeze in portions. Thaw in the refrigerator, stir and warm gently.
