Ingredients

  • 1 1/2 cups properly prepared nut flour from 2 1/2 cups properly prepared and fully dried nuts per 12-muffin batch
  • 1/2 cup properly prepared ground flax soaked, sprouted or fermented, fully dried and ground
  • 2 tablespoons homemade coconut flour
  • 1/2 teaspoon natural mineral salt
  • 1/2 teaspoon ground cinnamon
  • 1/3 cup additive-free dates packed and pitted
  • 1/2 cup natural non-hydrogenated coconut oil
  • 1/2 cup properly prepared nut or seed butter
  • 1/2 cup fresh apple finely chopped
  • 3 eggs
  • 1 cup fresh blueberries rinsed and completely dried
  • 1/2 cup properly prepared walnuts optional

Equipment

  • 1 standard stainless 12-cup muffin pan
  • 12 unbleached parchment muffin liners
  • 1 Medium mixing bowl
  • 1 Food processor
  • 1 Flexible spatula
  • 1 Cooling rack

Method

  1. Preheat the oven to 325°F. Line all 12 cups of a standard muffin pan with unbleached parchment liners.
  2. Whisk the prepared nut flour, prepared ground flax, homemade coconut flour, mineral salt, and cinnamon in a medium bowl. Break up every coconut-flour lump; the mixture should look loose and evenly speckled.
  3. Blend the dates, coconut oil, prepared nut or seed butter, finely chopped apple, and eggs in a food processor. Stop and scrape the sides once, then blend until the mixture is thick, glossy, and tan with no separate egg or oil streaks.

  4. Add the dry mixture to the wet mixture. Mix thoroughly until no dry flour remains. The batter should mound on a spoon and settle slowly rather than pour.
  5. Fold in the fresh blueberries gently. Fold in the optional prepared walnuts at the same time if using.
  6. Divide the thick batter evenly among the 12 lined cups. Smooth any sharp peaks with the back of a spoon.

  7. Bake for 20 to 25 minutes, until the tops are modestly puffed, browned, and dry rather than shiny. A toothpick inserted through the crumb instead of a blueberry should come out clean.
  8. Rest the muffins in the pan for 10 minutes, then move them to a cooling rack so the moist crumb can finish setting.

Notes

This no-leavener formula intentionally omits the source baking soda and stevia. Measure the nut flour after grinding the properly prepared and fully dried nuts. The muffins are compact and moist rather than tall and airy. Use fresh blueberries; frozen berries are not substituted in this locked formula. The optional prepared walnuts may be omitted without changing the other quantities.
