Method
- Preheat the oven to 350°F. Line two standard baking sheets with parchment paper.
- Grate the measured cheddar. Divide into six equal portions, three on each baking sheet. Shape each pile into a circle about 3 inches across, leaving generous space between piles for melting.
- Bake for 10-12 minutes, until the edges begin turning dark while the center is still very melted. In a standard non-convection oven, rotate the trays halfway through for even cooking. Do not bake the whole round dry and crisp.
- Leave the shells on the baking sheets for 5 minutes to set. Slide a thin spatula underneath to lift each round while keeping its soft center supported.
- Add a modest amount of your chosen filling and gently fold the soft shells. Fillings are prepared separately and are not included in the measured shell recipe.
Notes
Cheese: Six ounces of plain natural organic white cheddar, grated from a block, makes six small soft shells. Choose an ingredient list without added starch, sugar or seasoning blends.
Size: The three-inch measurement describes each starting pile. The cheese spreads as it melts; leave generous gaps and put only three rounds on each standard sheet.
Timing: About five minutes preparation, 10-12 minutes baking and five minutes cooling. The card plans 12 minutes baking for 22 minutes total once the oven is ready. Watch the cheese rather than the clock alone.
Texture: Darkening edges with a still-melty center, followed by five minutes setting on the tray. These are pliable shells, not hard cheese chips; no taco mold is needed.
Full GAPS: After natural cheese has been introduced and is well tolerated. Not an early Intro food. Made entirely from cheese; contains dairy.
Other Routes: For No-Plant GAPS, use a suitable introduced cheese and compatible animal-based fillings. For Ketogenic GAPS, fit portions and fillings to the plan.
Serving: Fill modestly after cooling. Fillings are separate and do not change the six-shell yield.
Storage: Cool unfilled shells and refrigerate covered, with parchment between layers as needed. Store fillings separately; warm shells gently if desired.
Doubling: Twelve ounces makes twelve small shells. Keep the same spacing, using more trays or batches; extra batches take additional elapsed time.
