Skillet Cauliflower Rice for Full GAPS

An uncovered Full GAPS skillet side with one pound of riced cauliflower and one tablespoon of coconut oil. Stir every five minutes and finish when tender. Makes four side portions.
Servings: 4 side portions
Course: Full GAPS, Side Dish
Cuisine: GAPS

Ingredients

  • 1 pound riced cauliflower prepared, rice-size pieces; weigh after trimming and grating
  • 1 tablespoon coconut oil or the same amount of homemade ghee or unsalted butter after introduction

Equipment

  • Kitchen scale
  • Ninja BN801 food-processor bowl and chopping blade, or box grater
  • Medium enameled cast-iron skillet
  • Tablespoon measure
  • Wooden or suitable heat-safe spatula
  • Wide bowl

Method

  1. Prepare the cauliflower if needed using brief pulses in the Ninja BN801 food-processor bowl with its chopping blade, or the larger holes of a box grater. Weigh the prepared rice-size pieces.
  2. Set a medium skillet over medium-low heat. Add the measured fat and let it melt until fluid.
  3. Add the cauliflower and stir through the whole skillet so the fat coats the pieces evenly. Keep the skillet uncovered; do not add water.
  4. Continue cooking uncovered, stirring every five minutes. Turn pieces from the bottom and edges into the middle so they cook evenly. Reduce the heat if small pieces stick or darken quickly.
  5. After stirring, taste a few pieces from different parts of the pan. Finish when they are tender and easy to chew while still looking like small separate pieces. The five-minute check is a repeating interval, not the total cooking time.
  6. Take the skillet off the heat and serve. Divide leftovers into shallow containers and refrigerate promptly.

Notes

Timing: Cook uncovered over medium-low heat, stirring every five minutes until tender. The five-minute check is a repeating interval. There is no fixed standalone finish time for this preparation.
Amount: Weigh the prepared rice-size cauliflower. Head sizes vary. The one-pound batch makes four side portions, without a fixed cooked cup or gram yield.
Fat choices: Coconut oil is the dairy-free branch. The same measured amount of homemade ghee or homemade unsalted butter is another option after the chosen dairy food is introduced.
Texture: Finish when the pieces are tender and separate. Keep the pan uncovered so vegetable moisture can escape. There is no added water or covered steaming step in this method.
Scaling: The 2× setting gives two pounds of cauliflower and two tablespoons of fat for eight side portions. Use sufficient skillet space or separate batches, continuing to the tenderness cue.
GAPS: Full GAPS after cauliflower and the chosen fat are introduced. This is a vegetable side; it is not an early Intro soup preparation or a No-Plant food. The coconut-oil branch contains no dairy.
Storage: Refrigerate cooked leftovers promptly in shallow containers and use within three to four days, or freeze portions. Thaw in the refrigerator. Reheat only the serving portion until hot throughout, reaching 165°F. The cauliflower softens further with reheating.
