Silky Chocolate Cashew Pie for Later Full GAPS

A chilled, sliceable cocoa-cashew pie filling made with homemade coconut milk, raw honey and homemade vanilla in a separate no-bake almond crust. Occasional later Full GAPS.
Servings: 16 slices
Course: Dessert, Pie
Cuisine: GAPS

Ingredients

  • 2 cups plain cashews soaked 1-3 hours, no longer than 6, then drained
  • 13 1/2 fluid ounces homemade coconut milk measured, not canned
  • 1/2 teaspoon mineral salt
  • 6 tablespoons pure cocoa powder for the cashew blend
  • 9 tablespoons pure cocoa powder for the oil mixture
  • 2 teaspoons homemade GAPS vanilla extract no added sugar or non-GAPS additives
  • 1/2 cup raw honey
  • 11 tablespoons coconut oil warmed just until liquid
  • 1 prepared no-bake chocolate almond pie crust 9 1/2-inch; linked separate recipe

Equipment

  • 1 Fine-mesh sieve and bowl for draining soaked cashews
  • 1 Heat-safe bowl over simmering water for gentle oil/cocoa mixing
  • 1 Ninja BN801 with 72-ounce pitcher owner-used full-size blender
  • 1 9 1/2-inch glass pie plate with prepared crust see separate crust recipe
  • 1 Flexible spatula for filling the crust

Method

  1. Cover 2 cups plain cashews with filtered water for 1-3 hours, never longer than 6. Drain in a fine-mesh sieve until excess water stops dripping. They should be plump and moist without soaking water pooled among them.

  2. Gently liquefy 11 tablespoons coconut oil in a heat-safe bowl over simmering water. Remove from heat and whisk in 9 tablespoons pure cocoa until no powder pocket remains. Cool toward room temperature while keeping it pourable.
  3. In the full-size Ninja BN801 pitcher, blend the drained cashews with 13 1/2 fluid ounces homemade coconut milk, 1/2 teaspoon mineral salt, 6 tablespoons pure cocoa, 2 teaspoons homemade GAPS vanilla, and 1/2 cup raw honey until no pale cashew pieces remain. Scrape the sides; use two or three batches if necessary.
  4. With the blender on low, pour in the cooled cocoa-oil mixture in a thin stream. Blend until the filling is uniform and thick, with no separate oily ring. It should coat the pitcher wall and stacked blade and leave a broad spatula trail while remaining slowly pourable.

  5. Pour the filling into one already prepared 9 1/2-inch no-bake chocolate almond pie crust. Smooth the top without disturbing the crumb wall. Cover and refrigerate several hours, preferably overnight, until the center holds a cut. Slice into 16 portions. The assembled pie may also be frozen.

Notes

Later Full GAPS: Cocoa is for an occasional later-program dessert after digestive symptoms have gone. Not Introduction Diet.
Component: Make the separately linked no-bake chocolate almond crust before pouring this filling.
Cold set: Chill several hours or overnight until a slice holds its shape. The assembled pie may be frozen.
