Prep Time 5 minutes
Total Time 5 minutes
Servings: 1 batch (about 2/3 cup)
Course: Condiment, Full GAPS, Seasoning
Cuisine: Middle Eastern

Ingredients

  • 3 tbsp dried marjoram
  • 3 tbsp dried thyme
  • 3 tbsp dried oregano
  • 1 tbsp dried ground ginger single-ingredient
  • 2 tsp sea salt
  • 2 tbsp ground cumin optional; omit for the seed-free base

Equipment

  • Stainless measuring spoons
  • Five small prep bowls
  • Small dry glass mixing bowl
  • Short stainless spoon
  • 1/4-cup measure
  • Airtight glass storage jar

Method

  1. Measure the marjoram, thyme, oregano, dried ginger, and sea salt into separate small bowls so each amount is visible before mixing.

  2. Tip the measured ingredients into a small, completely dry glass bowl. Stir from the bottom and around the sides until the pale ginger and salt are evenly distributed and the blend remains loose and dry.

  3. If using the optional cumin, add it only after the base is evenly mixed and stir again until no concentrated patches remain.
  4. Measure 1/4 cup for the seed-free Middle Eastern beef stew.
  5. Transfer the remaining blend to an airtight glass jar. Label it seed-free herb blend and store it in a cool, dark pantry with a clean, dry spoon.

Notes

  • Full GAPS: Use after each herb and spice in the batch has been introduced and tolerated.
  • Seed-free base: Omit cumin. The five base ingredients make about 2/3 cup.
  • Optional cumin: Add 2 tablespoons only after it has been introduced separately and tolerated; the yield becomes closer to 3/4 cup.
  • Stew portion: Measure 1/4 cup for the matching seed-free beef stew, which receives fresh lemon after cooking.
  • Scaling: At 2x, double every measured ingredient and prepare two batches.
