Cuisine: GAPS

Ingredients

Sausage and Yellow Squash Frittata
  • 1 1/2 cups yellow summer squash, shredded measure after shredding
  • 7 eggs whole eggs
  • 1 cup Four-Ingredient Breakfast Sausage, cooked and crumbled separate linked component recipe
  • sea salt to taste
  • black pepper to taste
  • butter or coconut oil for greasing the pie plate
  • fresh salsa optional garnish
  • green onion, chopped optional garnish
  • GAPS-appropriate natural cheese, shredded optional garnish
  • strained homemade yogurt optional garnish; use like sour cream

Equipment

  • Food processor with shredding disc or box grater
  • Large mixing bowl and whisk
  • Small skillet for browning sausage
  • Greased 9-inch oven-safe pie plate
  • Flexible spatula

Method

  1. Heat the oven to 400°F. Grease a 9-inch oven-safe pie plate with butter or coconut oil.
  2. Shred enough yellow summer squash to measure 1 1/2 cups. The shreds should be short and fine enough to mix through the eggs.
  3. Whisk the 7 eggs in a large bowl until the whites and yolks blend with no clear streaks. Season with sea salt and black pepper to taste.
  4. Fold the shredded squash and 1 cup of cooked, crumbled Four-Ingredient Breakfast Sausage into the eggs. Pour the mixture into the prepared pie plate and spread the filling evenly.
  5. Bake for 15–20 minutes. Begin checking at 15 minutes. The edges should be set and lightly golden; the center may jiggle slightly but should not look wet or runny.
  6. Let the frittata rest for about 5 minutes so the center can finish setting. Cut into 4 portions and serve with any optional garnish.

Notes

Use cooked, crumbled Four-Ingredient Breakfast Sausage from the separate linked recipe. Sausage preparation is a separate component and is not included in these frittata times. The 15–20 minute bake time varies with the dish and oven; check that the center is set.
