Roasted Peach and Blackberry Smoothie for Full GAPS

A creamy dairy-free smoothie made with roasted peaches and blackberries, homemade coconut milk, homemade vanilla and ice. Roast the fruit for 30–40 minutes, then cool before blending. Makes two servings.
Cook Time 40 minutes
Servings: 2 servings
Course: Beverage

Ingredients

  • 2 large peaches ripe
  • 6 ounces blackberries ripe
  • 1 cup homemade coconut milk plain; stirred before measuring
  • 2 teaspoons homemade vanilla extract without added sugar or non-GAPS additives
  • 1 cup ice
  • raw honey optional, only if desired after tasting

Equipment

  • 1 Le Creuset Heritage rectangular dish Artichaut, lined with parchment
  • 1 Large plate for cooling fruit
  • 1 Ninja BN801 blender
  • 2 Serving glasses

Method

  1. Preheat the oven to 375°F. Halve the peaches, remove the pits, and cut into slices about 1 inch thick.
  2. Line the bottom of a casserole dish with parchment paper. Spread the peach slices and blackberries in a single layer.

  3. Roast for 30–40 minutes, until the peach flesh is tender when pierced with a fork. The blackberries will soften and release their dark juice.
  4. Transfer the roasted fruit to a large plate and let it cool. You can refrigerate it at this point or roast it the day before blending.

  5. Put the cooled fruit in the Ninja BN801. Add the homemade coconut milk, homemade vanilla and ice. Secure the lid and blend for 10–30 seconds, until evenly combined with no large fruit or ice pieces.
  6. Divide between two glasses and serve. Taste before adding any optional raw honey; ripe fruit may supply enough sweetness on its own.

Notes

Full GAPS after the ingredients, including peach skins and blackberry seeds, are introduced and tolerated. This is not an Introduction Diet smoothie.
Roasting takes 30–40 minutes. Allow additional time for preheating and cooling. Do not blend the fruit while warm, because it will melt the ice quickly.
Use homemade coconut milk and the measured two teaspoons of homemade vanilla. The main recipe has no added sweetener; raw honey is optional to taste.
For advance preparation, cool the roasted fruit, cover and refrigerate it for blending the following day. Blend close to serving for the freshest texture.
